Fresh and crisp summer side dish or condiment for the Asian Lime Ribs.

Yield 4 cups, approximately

Number Of Ingredients 6

1 English cucumber (sliced thinly *)
10-15 fresh mint leaves
1/4 cup sugar
1/4 cup rice vinegar
2 tsp fresh ginger (minced)
1/2 tsp crushed red pepper flakes

Steps:

  • Slice cucumbers and set aside in a bowl
  • Combine remaining 5 ingredients in blender and puree
  • Toss puree with the sliced cucumbers
  • Refrigerate to allow flavors to meld until ready to serve
  • Serve chilled

1 English cucumber, thinly sliced, skins on (about 4 cups)
1/2 cup seasoned rice vinegar (do not substitute)
20 fresh mint leaves, coarsely chopped
4 tsps ginger paste
1/2 tsp red pepper flakes

Steps:

  • Thinly slice cucumber (leave the skin on) on a mandoline.
  • Puree in a blender the seasoned rice vinegar, mint leaves, ginger paste and red pepper flakes.
  • Toss mint puree with sliced cucumbers and chill for at least 30 minutes.
  • This dish holds up great for several days in the refrigerator.

2 -3 cucumbers
1 tablespoon olive oil
2 teaspoons champagne vinegar or 2 teaspoons white wine vinegar
salt & freshly ground black pepper
3 tablespoons finely shredded of fresh mint

Steps:

  • Peel the cucumbers and slice them in half lengthwise.
  • Scoop out the seeds with a spoon and discard.
  • Cut the cucumbers into thin slices and combine in a bowl with the oil, vinegar, salt, and pepper.
  • Marinate for at least 30 minutes in the refrigerator or at room temperature.
  • Add the mint immediately before serving.

Set the blade to the thinnest setting, and it will just take minutes to make uniform slices.In the procedure, salting the cucumbers draws out the water, making them limp. I like to let the cucumbers chill a bit before serving to develop plenty of flavor. Go ahead and help yourself to a generous serving; the calories are few and the fat almost nonexistent.

3 cucumbers
1 teaspoon salt
3/4 cup rice vinegar
1/4 cup water
3 tablespoons sugar
1 clove garlic, minced
1 shallot, minced
2 tablespoons chopped fresh mint
2 tablespoons minced fresh dill
Snipped chives

Steps:

  • Score the outside of each cucumber with the tines of a fork, then cut the cucumbers into thin slices. Place the slices in a bowl and sprinkle them with salt. Let them stand 1 hour. Drain the liquid from the cucumbers using a strainer, then place the cucumbers in a serving bowl.
  • Combine the vinegar, water, sugar, garlic, shallot, mint and dill and pour it over the cucumbers. Cover the bowl and chill the cucumbers several hours or overnight. Just before serving, sprinkle them with the chives.

  • Cut the cucumbers in half lengthwise. Use a teaspoon to scrape out the seeds, then cut into thin slices. Toss the cucumbers with the salt in a colander. Let drain in the sink for at least 30 minutes.
  • Meanwhile, soak the red onions in a small bowl of ice water for ten minutes, then drain in a fine mesh strainer. Blot dry with a paper towel.
