OLD FASHIONED CUCUMBERS AND ONIONS IN VINEGAR



Old Fashioned Cucumbers and Onions in Vinegar image

Sweet and tangy cucumbers and onions marinated in vinegar with dill

3 cucumbers (sliced thin)
1 sweet or red onion (sliced thin)
2 tablespoons sugar
3 tablespoons distilled vinegar
2 tablespoons canola or vegetable oil
1 teaspoon dill weed (dried)
1/4 teaspoon black pepper
1/4 teaspoon salt

Steps:

  • Combine cucumbers and onions in a large bowl.
  • In a small bowl, whisk together remaining ingredients. Pour over cucumbers and onions. Mix or toss to combine.
  • Let cucumbers and onions marinate in the refrigerator for at least 3 hours and up to overnight. The longer the better!

The other recipes I've seen have sugar and some have sour cream. This one is diabetic friendly and has neither. It's from Cottage Living Magazine, 8/2007. The magazine says "This is a simple and essential summer recipe, good with everything and a great addition to cold salad platters. Be sure to taste a slice of each cucumber-a bitter one can ruin the whole salad".

9 cucumbers, about 2 1/2 lbs., scored and cut into 1/4 inch rounds
1 red onion, halved and sliced
1 teaspoon salt, plus more to taste
1 teaspoon celery seed
1/3 cup cider vinegar
1/4 cup olive oil
fresh ground pepper, to taste

Steps:

  • One tip to score the cucumber's skin is to run the tines of a fork from end to the other, working your eay around the entire cucmber.
  • Put cucumber and onion in a large mixing bowl, and toss with 1 teaspoon salt and celery seeds.
  • Let stand 30 minutes.
  • Stir in vinegar and oil.
  • Season with additional salt and pepper.
  • Refrigerate until ready to serve, up to 3 days.

This is a very easy side salad for a picnic or covered dish event. My mom kept this going in our frig all summer. I think she got the cucumbers from an aunt and uncle that had a farm nearby.

Number Of Ingredients 7

2 -3 large cucumbers
1 medium white onion
1/2 cup sugar
1 cup white vinegar
2 cups water
1 tablespoon pepper
salt

Steps:

  • You will need a 2 quart jar with lid or other 2 quart container.
  • Cut the ends off the cucumbers and peel along the long edge in 3-4 strips to leave a sort of stripped cucumber.
  • Slice the cucumber in thin rounds.
  • Peel and slice the onion in thin slices and separate.
  • Put the cucumber and onion alternately in your jar/container.
  • Add the rest of the ingredients and cover your jar/container tightly and gently turn so the ingredients are mixed together.
  • Refrigerate overnight and serve cold.

2 cucumbers
1/2 cup thinly sliced onion
1 cup vinegar
1/2 cup Splenda sugar substitute
1 -2 teaspoon pepper

Steps:

  • Peel and slice cucumber and onion.
  • Set vegetables aside.
  • Mix Splenda, Vinegar and Pepper (taste to see what is the right amount of seasoning for you).
  • Add vegetables to sweet/sour dressing.
  • Cover and refridgerate for 1 hour to allows flavors to blend.

Simple Cucumbers and Onions image

My mom always had a bowl of this in the fridge during the summer, and now I do too! My mom sliced her cucumbers and onions in cold salt water for a few hours first, but I usually do not. I do not notice difference when they are not soaked. Instead of peeling the cucumbers completely, I leave a few stripes of green to add color to the salad. Note: Cooking time includes time to chill salad before serving.

2 -3 medium cucumbers, sliced very thin
1 medium onion, cut in half and thinly sliced
1/3 cup vegetable oil
1/3 cup vinegar
1/2 cup sugar

Steps:

  • Combine oil, vinegar, and sugar in a medium to large bowl (big enough to hold all completed salad). Stir until sugar is dissolved (Note: You can heat the dressing to help keep it from separating. It is not necessary, but I do if I have time. If you heat the dressing, be sure to cool it before adding to cucumbers).
  • Add cucumbers and onions to dressing. Toss to coat veggies.
  • Cover and chill at least 2 hours before serving. The longer it chills, the better it gets!
