CUCUMBER SALAD

- Place cucumbers in small glass or plastic bowl.
- In tightly covered container, shake remaining ingredients except dill weed. Pour over cucumbers. Cover and refrigerate at least 3 hours to blend flavors.

- Make lines or indentations lengthwise down cucumber at 1/4-inch intervals, using vegetable peeler or tines of fork. Cut cucumber into 32 slices, 1/2 inch each. Place on paper towels to drain.
- Spread each slice with about 1 teaspoon tomato spread. Sprinkle each with about 1/2 teaspoon cheese.
- Serve immediately, or refrigerate up to 1 hour. Top each slice with basil leaf just before serving.

- Partially peel cucumber horizontally (so that some dark green still shows), then slice into 20 @ 1/4-inch thick rounds. Lay on paper towels.
- Arrange slices of smoked salmon on top of the cucumber slices, cutting salmon to fit.
- Drizzle salmon with lemon juice and lightly sprinkle with pepper.
- In a small bowl whip together the cream cheese, fresh dill, fresh chives, pepper, and wasabi powder.
- Top salmon with wasabi cream, and garnish with fresh dill.

CUCUMBER APPETIZER
These are the best appetizers that I know of created by a friend of mine. They always are the first thing to go, and my kids love them! Try it, I know you won't be disappointed.

Steps:
- Mix cream cheese with Dill,Celery Salt, and Garlic powder to taste. You should be able to taste the spices but not be too overpowering. Spread a little bit of the mixture on each slice of bread. Put a couple of cilantro leaves on top of the spread on each slice. Then top with one slice of cucumber. You can make this without the bread and just top each cucumber slice with a dab of cheese and then the cilantro on top. I usually make both so people who don't eat bread can have this too.
- 50-60 servings (being one) Depends on how long your baguette is and how many slices you get from your cucumbers.
