CUCUMBER SANDWICH RECIPE
The easiest and best tasting cucumber sandwich you can make!

Steps:
- Peel the cucumber, and slice it thinly. I used a simple OXO slicer for quick, even slices.
- Spread soft/room temperature cream cheese on two slices of bread.
- Arrange the cucumber slices, overlapping slightly, on one slice of bread and top with the other.
- Slice off the edges with a sharp serrated knife, wiping with a damp paper towel after each cut. Next, cut into fingers (or triangles). Whether you cut them into fingers or triangles, you'll end up with two finger sandwiches.
- If you need to make cucumber sandwiches ahead of time, keep them in a sealed container with a paper towel inside for a few hours, and refrigerate them.

CUCUMBER, TOMATO AND CHEDDAR SANDWICH
My hubby introduced me to this interesting sandwich. I thought it was strange until I tried it!!! I recommend using the butter, but if you prefer not to please don't use margarine; you can use mayonnaise instead. This also works great for finger sandwiches!

Steps:
- Lay out your two slices of bread.
- Spread a thin layer of butter on one side of both pieces of bread.
- Take your cucumber slices and put a single layer of them on one piece of bread.
- Top the cucumber with tomato slices.
- Sprinkle a pinch of salt over the veggies.
- Place a layer of cheese on top.
- Place other slice of bread on top to make a sandwich.
- Cut your sandwich in half, if desired, and serve!

- Peel cucumber skin and cut thin round slices.
- Spread butter or mayonnaise on two slices of baked bread.
- Cut Cheddar cheese into thin slices and place on of the slices until thoroughly covered.
- Then place the thin slices of cucumbers on top of the cheese and add salt and pepper on top of the cucumbers only.
- Place the second (buttered or mayonnaised) slice on top of the cucumbers and cut in half.

- Preheat a skillet over medium heat. Mix the butter, mayo and smoked paprika in a small bowl until well combined. Sprinkle with salt and pepper.
- Lightly butter one side of each of the bread slices with the mayo mixture. Add the cream cheese to the remaining mayo mixture and mix well to combine. Spread some of the cream cheese mixture on the other side of each of the bread slices.
- Distribute the Cheddar on the cream cheese-side of 4 of the bread slices. Place the remaining 4 bread slices on top. Place the sandwiches in the skillet and cook until golden on the bottom, about 3 minutes. Flip the sandwiches and place a heavy-bottomed skillet on top of the sandwiches and cook until golden brown and the cheese is melted, about 4 minutes.
CHEDDAR, CUCUMBER AND MARMALADE SANDWICHES
Melissa Clark came up with this recipe in 2011, a sandwich for her daughter, against the one she made for herself with Branston pickle in place of the marmalade. (Branston pickle is a British pickled chutney, made with vegetables, that dates back to the early 20th century.) You can certainly make the grown-up version. But this sweet, salty, cool variety is close to perfect for lunch or a light dinner.

- Place cucumber slices between 2 paper towels set in a colander. Allow liquid to drain, about 10 minutes.
- Mix cream cheese, mayonnaise, garlic powder, onion salt, and Worcestershire sauce in a bowl until smooth.
