CUBE STEAK RECIPE
This Tender Cube Steak is smothered in a delicious brown gravy with onions and pan fried on the stove top or in the Slow Cooker! Serve this over mashed potatoes, noodles, or rice, with roasted green beans or carrots!

- Seasoning Prep: Combine the meat seasoning mix and set aside.
- Gravy Prep: Combine the cornstarch and cold water in a medium bowl and whisk until incorporated and smooth. Add 1 cup chicken broth, 1 cup beef broth, 1 beef bouillon, 1 tsp onion powder, ½ tsp garlic powder and 1 ½ tsp Worcestershire sauce. Whisk to combine and set aside.
- Meat Prep: Place saran wrap over each cube steak and use the rough end of a meat tenderizer to pound it thin, about ½ inch thick or so. This really makes a nice difference in the consistency of the meat even though cube steak has already been tenderized.
- Rub seasoning mix on each side of the steak, then rub with flour.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear 2 steaks at a time for about 3 minutes per side. (Add a splash more olive oil if needed and adjust heat up or down slightly as needed as the steaks cook.) Set steaks on a plate to rest.
- Leave the meat flecks in the pan, this is called "fond" and it will add flavor to the gravy. If you have any black/burnt areas, use a damp paper towel to carefully clean that out.
- Melt 2 tablespoons butter over medium heat and use a silicone spatula to 'clean' the bottom of the pan. Add the onions and toss to coat. Cook the onions for 15-25 minutes, until desired consistency is obtained. I like mine very soft and reduced, almost caramelized. Be sure to stir them often as they cook.
- Add the liquid gravy mixture and use a silicone spatula to clean the bottom and sides of the pan once again. Bring to a boil, then reduce to a simmer.
- Add the steaks and any juices back to the pan and spoon some gravy on the top of each steak. Simmer with the lid partially covered for 5 minutes or so, until the gravy is thickened and the meat is cooked to your liking.
- Optional: Remove from heat and melt 2 Tablespoons cold butter at the end for a silky, velvety finish. This is a technique that chefs use called "monter au beurre".
- Serve with mashed potatoes, buttermilk biscuits, and roasted carrots or green beans.

This is really a easy dinner to put together. I usually make it when I have things I need to do around the house. I put it in the oven, do my laundry, vaccum the house and when I'm done dinner is ready!!!

BISON STEAKS WITH SMOKY WILD RICE
I seared a couple of boneless bison strip loin steaks in a cast-iron skillet, which gave me pan juices so I could produce a bit of intense sauce to drizzle on the meat. Because bison has a slightly sweeter finish than beef, I combined a tart pomegranate molasses with red wine for deglazing. A few dollops of good butter compensated for the leanness of the meat and turned the pan juices into a dark, syrupy finishing sauce. Bison is less marbled than beef cuts like rib roast, rib-eye or strip loin, so it should be cooked no more than medium-rare. Alongside the bison I served a wild rice pilaf infused with double-smoked bacon, rendered fragrant with ground cloves and steeped in beef stock that had been sharpened with a little of the pomegranate molasses.

- Heat 1/2 tablespoon oil in a 3-quart saucepan. Add bacon and sauté until lightly browned. Remove, leaving fat in pan. Add onion and sauté until beginning to brown. Stir in cloves. Add wild rice. Stir. Add 1 1/2 tablespoons molasses and the beef stock. Stir to blend. Season with salt and pepper.
- Cover and simmer about 45 minutes, until liquid has been absorbed. Set aside, covered.
- Slick remaining oil in a large, heavy skillet. Place over high heat. Season steaks with salt and pepper. Place in pan and sear to medium rare, about 3 minutes on each side. Remove steaks to a warm platter and tent with foil.
- Add wine to skillet and cook over medium heat, scraping pan, until reduced by half. Whisk in remaining pomegranate molasses, then, off heat, whisk in butter bit by bit, until pan sauce turns syrupy. Taste and season with salt and pepper.
- Mound rice on 4 plates. Slice steaks and arrange alongside rice. Spoon sauce on meat and serve.

Steps:
- Cut cube steaks into serving size portions.
- Season to taste with salt, pepper, and garlic powder.
- Lightly coat steaks with flour.
- Prepare brown gravy in small saucepan according to package directions.
- Reserve.
- Heat oil in large heavy skillet.
- Add onions and saute about 1 min.
- Add steak and brown on both sides.
- Add mushroom soup.
- Add water to soup can (about 1/2 can) and swish to remove soup.
- Add to skillet with meat mixture.
- Add brown gravy mixture and stir to blend.
- Bring to boil, cover, lower heat and simmer about 45 mins or until meat is tender and you can cut it with edge of fork.
- Add mushrooms, stir to heat and serve over rice.
- TO PREPARE RICE: Rinse rice in strainer.
- Place rice in saucepan, add broth.
- Liquid should reach first knuckle on your finger.
- Bring to boil, stir, cover, lower heat to simmer and cook about 15 mins.
- Fluff with fork.
