ITALIAN HERB BREAD I

This aromatic bread can be served with dinner, or the dough can be used for pizza.

2 (.25 ounce) packages active dry yeast
2 cups warm water (110 degrees F/45 degrees C)
2 tablespoons white sugar
¼ cup olive oil
1 tablespoon salt
1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
½ cup grated Romano cheese
6 cups bread flour

Steps:

  • Mix yeast, warm water, and white sugar together in a large bowl. Set aside for five minutes, or until mixture becomes foamy.
  • Stir olive oil, salt, herbs, garlic powder, onion powder, cheese, and 3 cups flour into the yeast mixture. Gradually mix in the next three cups of flour. Dough will be stiff.
  • Knead dough for 5 to 10 minutes, or until it is smooth and rubbery. Place in an oiled bowl, and turn to cover the surface of the dough with oil. Cover with a damp linen dish towel. Allow to rise for one hour, or until the dough has doubled in size.
  • Punch dough down to release all the air. Shape into two loaves. Place loaves on a greased cookie sheet, or into two greased 9 x 5 inch loaf pans. Allow to rise until doubled in size, about a 30 minutes.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Remove loaves from pan(s), and let cool on wire racks for at least 15 minutes before slicing.

CRUSTY GARLIC AND HERB BREAD

1/2 cup softened unsalted butter
6 garlic cloves, peeled and minced
1 tablespoon freshly grated Parmesan
1 teaspoon fresh rosemary leaves
1 teaspoon fresh thyme leaves
1 teaspoon fresh oregano leaves
1 loaf sourdough country white bread

Steps:

  • Preheat oven to 450 degrees F.
  • Oil the inside of the bowl of a mini food processor. Add the softened butter, garlic, cheese and herbs. Pulse until well combined.
  • Slice the bread into 1-inch thick slices. You will need 12 to 16 slices.
  • Spread the butter mixture onto 1 side of each bread slice. Arrange slices, butter side up and bake in the oven until lightly toasted, about 5 to 8 minutes.

I simply cannot keep up with the demand for this bread at home! The children want to set up a soup and bread stand just like the old lemonade stands. This dough is mixed in a bread machine but is baked in the oven.

1 ¼ cups warm water (110 degrees F/45 degrees C)
1 tablespoon white sugar
1 teaspoon salt
3 ½ cups high-gluten bread flour
1 tablespoon active dry yeast
1 teaspoon dried oregano
½ teaspoon dried basil
2 tablespoons water
¼ teaspoon salt
1 tablespoon sesame seeds, toasted

Steps:

  • Place warm water, sugar, 1 teaspoon salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  • Most machines have a 'beep' toward the end of their cycle that allows you to add additional ingredients. Sprinkle in oregano and basil at this time.
  • When machine's Dough cycle has ended, turn the dough out onto a lightly floured surface and shape into an oval or round loaf. Place loaf on a baking sheet that has been well greased with olive oil. Cover with a damp towel and let rise in warm place until doubled, about 1 hour. Meanwhile, preheat oven to 400 degrees.
  • In a small bowl, mix 2 tablespoons water with 1/4 teaspoon salt. Cut three slits on top of bread. Brush entire loaf with salt water mixture and sprinkle with toasted sesame seeds.
  • Bake in preheated oven for 20 to 25 minutes, until golden and bottom of loaf sounds hollow when tapped. This bread will be hard when it comes out of the oven. Let sit 10 minutes to soften before cutting.

5 tablespoons old-fashioned oats
1 cup water (70° to 80°)
4-1/2 teaspoons sugar
4-1/2 teaspoons olive oil
1 teaspoon salt
2 cups bread flour
1/4 cup rye flour
1/4 cup whole wheat flour
2-1/2 teaspoons active dry yeast
1/2 teaspoon each dried minced onion, dried minced garlic, dill weed and poppy seeds
TOPPING:
1 egg, lightly beaten
1/2 teaspoon each coarse salt, dried minced onion, dried minced garlic, dill weed and poppy seeds

Steps:

  • In a blender, process oats until finely ground. In bread machine pan, place the oats, water, sugar, oil, salt, flours, yeast and seasonings in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When the cycle is completed, turn dough onto a lightly floured surface. Shape into a loaf, about 15 in. long. Transfer to a baking sheet coated with cooking spray. Cover and let rise in a warm place until doubled, about 45 minutes., Carefully brush dough with egg, sprinkle with salt, onion, garlic, dill and poppy seeds. Bake at 350° for 25-30 minutes or until golden brown.
