"This is the crispiest, crunchiest, most delightful French toast known to mankind," says Ree.

Yield 36 French toast sticks

Number Of Ingredients 11

6 large eggs
1/2 cup half-and-half
1 tablespoon pure vanilla extract
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1 1/2 cups panko
1 1/2 cups sweetened corn and oat cereal (such as Cap'n Crunch), crushed into fine crumbs
2 tablespoons salted butter, melted
12 slices Texas toast or other thick bread slices, each cut into 3 strips
Confectioners' sugar, for serving
Warm maple syrup, for serving

Steps:

  • Preheat the oven to 425˚ F. Crack the eggs into a pie plate. Add the half-and-half, vanilla, 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Whisk lightly until combined; set aside.
  • In a separate pie plate, stir together the panko, crushed cereal and remaining 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Use a fork to stir in the melted butter so that the crumbs are slightly moist.
  • One by one, quickly dunk the bread strips in the egg mixture, turning to coat. Then lay them in the dish with the crumb mixture, turning to coat; sprinkle and press the crumbs so they totally cover the bread. Place the bread strips on a rack set on a baking sheet.
  • Bake the French toast sticks until golden around the edges and the crumbs are crisp, 15 to 20 minutes. Sprinkle with confectioners' sugar and serve with maple syrup.

1/4 cup whipped cream cheese
2 tablespoons orange marmalade
4 slices sandwich, French or challah bread, crusts removed if desired
2 large eggs
1/4 cup milk
1 cup cereal flakes, such as Heritage Flakes or Corn Flakes
1 tablespoon unsalted butter or vegetable oil
Honey or pure maple syrup, for serving (optional)

Steps:

  • Use a fork to whip the cream cheese and marmalade in a small bowl until thoroughly combined. Spread the mixture evenly on 2 slices of bread and top with the remaining bread, creating 2 sandwiches. Slice the sandwiches into 1-inch-wide sticks. Set aside.
  • Whisk the eggs in a medium bowl and stir in the milk. Set aside.
  • Place the cereal in a resealable plastic bag and crush into tiny pieces with a rolling pin or mallet. Transfer to a wide, shallow bowl.
  • Dip each sandwich stick in the beaten egg, coating each side, then into the crushed cereal, coating completely. Transfer to a plate.
  • Heat the butter or oil in a large skillet over medium heat and cook the sticks in a single layer until golden, 1 to 2 minutes per side.
  • Serve with honey, maple syrup or on their own.

1/8 teaspoon salt
1 cup frosted cornflakes, crushed
1/2 cup old-fashioned oats
1/4 cup sliced almonds
8 slices whole wheat bread
Maple syrup

Steps:

  • In a shallow bowl, whisk eggs, milk, vanilla and salt until blended. In another shallow bowl, toss cornflakes with oats and almonds., Heat a griddle coated with cooking spray over medium heat. Dip both sides of bread in egg mixture, then in cereal mixture, patting to help coating adhere. Place on griddle; toast 3-4 minutes on each side or until golden brown. Serve with syrup.

2 eggs or 1/2 cup fat-free egg product

10 slices (1 inch thick) whole-grain or regular French bread

Steps:

  • Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet. Place crushed cereal in shallow bowl; set aside. In medium bowl, beat eggs, orange juice and salt with wire whisk until well blended.
  • Spray griddle or 12-inch skillet with cooking spray; heat to 350°F or over medium heat. Dip each slice of bread into egg mixture, turning to coat both sides; coat with cereal. Place on griddle; cook 4 to 6 minutes, turning once, until golden brown on both sides.

1 loaf sourdough bread or 1 loaf baguette, sliced 1 inch thick (day old bread)
6 eggs
1 cup milk
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/2 teaspoon vanilla extract
1 teaspoon orange rind, fresh,grated
3/4 cup orange juice
1 tablespoon cornstarch
1/2 cup sugar
2 tablespoons unsalted butter
1 tablespoon lemon juice
2 tablespoons orange zest, freshly grated

Steps:

  • Mix all french toast ingredients together until smooth.
  • Pour over sliced bread.
  • Refrigerate until bread absorbs the egg mixture, turning once.
  • This may take up to an hour.
  • Preheat pan on medium heat.
  • Test the pan to see whether it is properly heated by sprinkling a bit of water on top.
  • When the water bubbles and dances on the surface, the pan is ready to cook.
  • Arrange bread slices on the surface of the pan.
  • Cook 2 to 4 minutes, until the center of each slice begins to set and slices begin to brown.
  • Flip and continue cooking an additional 2 to 4 minutes.
  • Serve French Toast with Orange Sauce.
  • Orange Sauce:.
  • In a medium sauce pan, whisk together the orange juice and corn starch until smooth.
  • Add the sugar and heat on medium, stirring occasionally until the sauce thickens.
  • Add the butter, lemon juice and orange zest.
  • Stir until butter is incorporated.
  • Serve over French Toast.

4 teaspoons low-sugar orange marmalade
2 large eggs plus 2 egg whites
Zest and juice of 1 orange
1 teaspoon vanilla extract
1 1/2 cups bran flakes cereal
1 to 2 tablespoons vegetable oil
1 to 2 tablespoons unsalted butter
2 tablespoons confectioners' sugar (optional)

Steps:

  • Spread 4 bread slices with 1 tablespoon cream cheese each; spread the other 4 slices with 1 teaspoon marmalade each. Combine to make 4 sandwiches.
  • Whisk the whole eggs, egg whites, orange zest and juice, and vanilla in a shallow bowl. Place the bran flakes in a resealable plastic bag and crush with a rolling pin or your hands. Pour the crumbs onto a plate. Dip both sides of each sandwich in the egg mixture, then in the crumbs, gently pressing the crumbs onto the bread.
  • Heat 1 tablespoon each oil and butter in a skillet or griddle over medium heat. Add the sandwiches in batches and cook until the outsides are golden and the insides are melted, 3 to 4 minutes per side. (Add more oil and butter, if needed.)
  • Slice the French toast sandwiches into triangles. Let cool before serving to little ones, as the cream cheese can get quite hot. Sprinkle with confectioners' sugar, if desired, and the kids won't even ask for syrup!

My husband and I were vacationing recently and had this lovely French toast at a bed and breakfast. When we came back home, I kept missing it so I called them up and requested it. They actually gave me the recipe over the phone! I generally halve the recipe for my husband and I, and bake it in an 8 inch square pan. Reheats well in the toaster oven. I served it to my in-laws recently and they loved it. Serve with a little sweetened whipped cream and berries!

⅓ cup butter, melted
2 tablespoons light corn syrup
⅓ cup chopped pecans
