Satisfy nearly every flavor craving - sour, salty, savory, and sweet - with this Sauerkraut Salad recipe! It comes together in under ten minutes.

4 cups sauerkraut (480 g)
1 medium white onion (diced)
2 ribs celery (diced)
1 green bell pepper (diced)
1 carrot (diced)
1 4-oz jar pimento peppers (drained, 113 g)
¼ cup sugar (25 g)
2 Tbsp oil (30 mL)
2 Tbsp apple cider vinegar (30 mL)
1 tsp Dijon mustard (5 g)
½ tsp salt

Steps:

  • Prep: Chop all veggies that need chopping.
  • Salad: In a large bowl, toss together all of the Salad ingredients.
  • Dressing: In a small bowl, whisk together all of the Dressing ingredients.
  • Mix: Drizzle dressing over salad and toss to combine.
  • Refrigerate: Best if refrigerated at least 30 minutes before serving, though it gets better with time!

Cool, crisp, tangy and sweet, this quick and easy German Sauerkraut Salad is not only wonderfully healthy, it's superbly delicious!

18 ounces (approx. 3 cups) raw sauerkraut
How to Make Sauerkraut ((it's easy! Click link for recipe tutorial))
2 medium sweet apples (, diced)
1/2 cup finely chopped yellow onion
1 1/2 tablespoons chopped chives
2 tablespoon sunflower oil ((the sunflower oil flavor is an important element, do not substitute with another oil))
1-2 teaspoons honey or cane sugar
salt to taste

Steps:

  • Combine the sauerkraut, apples, onion and chives in a large bowl. Whisk together the oil, honey and salt. Pour over the salad and stir to combine. Add more salt as needed. Cover and refrigerate for at least one hour before serving. Can be served cold or at room temperature.

Easy Crunchy Yummy Sauerkraut image

I sent one of my pork-o-phile Zaar buddies a picture of my kraut and am posting the recipe at her request. Yes, you can make one head of cabbage at a time but I would go for about 50 pounds! It is that good. Cooking time is fermenting time. Use lint free cloths. Have fun! UPDATE: Well, this has turned out to be my most requested home-canned treat from my BFF's! I have one friend making 50 pounds of cabbage to share with another. I hope you give it a try - it really is easy to do! 2010 Update - Well, I am doing almost 80 pounds of kraut this year! We found some huge cabbages at the farmers market and the pre-trim weight was about 80 pounds and it took me 9 hours to prep, shred and salt the cabbage. Check out the picture of the cabbage and the almost 17 pounds of watermelon! Please try this recipe if you love sauerkraut!

5 lbs cabbage, cored and outer leaves discarded
3 1/2 tablespoons pickling salt

Steps:

  • For each gallon of your pickle crock you need 5 pounds of cabbage and 3 1/2 tablespoons of pickle salt. (I use a 22 quart dough bucket available in a restaurant supply store and about 40 to 50 pounds of cabbage and get about 30 pints.).
  • In your scrupulously clean crock layer 5 pounds of finely shredded cabbage (use your food processor) and 3 1/2 tablespoons of canning and pickling salt. Keep layering cabbage and salt until the kraut reaches within 5 inches of the top of the crock, pressing down firmly with your hands after each layer. The kraut will start to make it's own juice.
  • Scald a clean tea towel or some cheesecloth and tuck it in all around your cabbage. Put a plate on top of the cloth, and weigh it down with a jar of water. Put the cover on loosely or cover with a clean tea towel.
  • Every day remove the jar, plate and cloth and wash. Scald the cloth (30 seconds in the microwave) and skim any scum that comes off the top of the kraut. DON'T worry if no scum forms for a while. Sometimes it takes two or three weeks other times it takes a couple of days. Kraut is funny that way.
  • Repeat this until no more bubbles rise to the top when you whack the side of your bucket. When the bubbles stop - the fermentation is completed. It is easy to see the bubbles rising when you use a plastic dough bucket.
  • Refrigerate the kraut (who has room in their fridge for all that?) or process quarts and pints for 20 minutes starting the time from when boiling commences. After 20 minutes turn off the heat and remove the canner lid and let settle for 5 minutes. Remove jars carefully to a tray lined with an old bath towel. Check for seals after 24 hours.
  • Raw kraut is awesome! I taste the kraut every day and just love it raw!

Encourage kids to learn essential kitchen skills with this crunchy salad made with pomegranate seeds. The recipe is easy for children aged seven to 11 to follow

1 lemon
4 tbsp extra virgin olive oil
1 tsp Dijon mustard
1 tsp honey
10 cherry tomatoes (use a mixture of different colours, if you like)
1⁄2 cucumber
2 Little Gem lettuces
1 punnet of cress
100g pomegranate seeds
25g mixed seeds (we used sunflower and pumpkin seeds; see tip below)

tea towel or kitchen paper (optional)
sharp knife
citrus juicer
tablespoon
teaspoon
jam jar or small bowl
large salad bowl
kitchen scissors
measuring scales

Steps:

  • Before you get started take a look at our chopping and knife skills guide. If your chopping board doesn't have anti-slip grips, lay a dampened tea towel or sheet of kitchen paper on the work surface, then place the board on top to stop it from slipping.
  • Holding the lemon with your hand in the bridge position, cut the lemon in half. Push one half onto a citrus juicer, twist and squeeze to release the juice. Repeat with the second lemon half. Pour the juice into a jam jar or small bowl along with the oil.
  • Add the mustard, honey and a good pinch each of salt and black pepper. Seal the jar and shake to combine, or whisk the ingredients together. Will keep covered in the fridge for up to a week.
  • Cut the tomatoes in half by pinching each one between your thumb and a finger and carefully slicing through the middle with a small serrated knife. Cut each piece in half again to make quarters, then tip the tomatoes into a large bowl.
  • Wipe down the chopping board, then cut the cucumber in half lengthways. Put the two halves cut-side down on the board so they don't roll around, then cut in half again along the length, so you have four chunky sticks of cucumber. Cut across the cucumber now to make little triangles, keeping your free hand in the claw position with your fingers tucked away from the blade of the knife. Tip the cucumber into the bowl with the tomatoes.
  • Cut the hard stalk off the lettuces, then cut each lettuce in half and in half again to get four wedges. Working with one lettuce wedge at a time, hold the wedge with your hand in the claw position and chop it into small ribbons - the smaller, the better for this salad. Repeat with the remaining wedges and tip the lettuce into the bowl.
  • Snip the cress straight into the bowl using kitchen scissors. Weigh out the pomegranate seeds using the scales and add these to the bowl. Repeat with the mixed seeds. Drizzle over roughly half of the dressing over the salad (you will have some leftover) and toss everything together to coat.
