CHICKEN AND SPINACH PUFFS



Chicken and Spinach Puffs image

These puffs are stuffed with a delicious creamy chicken mixture and baked.

2 skinless, boneless chicken breast halves, cubed
3 tablespoons chopped onion
3 cloves garlic, minced
3 cups fresh spinach
1 ½ cups ricotta cheese
½ cup grated Parmesan cheese
6 tablespoons butter, softened
3 (10 ounce) cans refrigerated crescent roll dough

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cook and stir chicken, onion, and garlic in a large skillet over medium-low heat until onion is tender, about 5 minutes. Mix in spinach. Cook, stirring often, until spinach is reduced and chicken is lightly browned, about 10 more minutes. Transfer mixture to a bowl and combine with ricotta cheese, Parmesan cheese, and butter; mix until filling is creamy.
  • Unroll crescent roll dough and pinch 2 triangles together to form a rectangle of dough; repeat with remaining dough to make 12 rectangles. Place about 1 tablespoon of chicken filling onto the center of each rectangle and fold the corners together to make balls. Arrange balls on a large baking sheet.
  • Bake in the preheated oven until filling is heated through and puffs are golden brown, about 12 minutes.

I bought a new jumbo muffin tin and wanted to use it. I love the flavors of chicken cordon bleu, but wanted a faster weeknight version, so I pulled this recipe togerther one evening. We loved it so much I had to make it again the next week! -Angela Keller, Newburgh, Indiana

2 tablespoons butter
2 tablespoons all-purpose flour
1 cup 2% milk
1 tablespoon grated Parmesan cheese
1 teaspoon lemon juice
3/4 teaspoon seasoned salt
1/2 teaspoon Dijon mustard
2 cups cubed rotisserie chicken
4 slices deli ham, chopped
1/2 cup shredded Swiss cheese
1 package (17.30 ounces) frozen puff pastry, thawed

Steps:

  • Preheat oven to 400°. In a small saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Stir in Parmesan cheese, lemon juice, seasoned salt and mustard; remove from heat. Stir in chicken, ham and Swiss cheese. , On a lightly floured surface, unfold puff pastry. Roll each pastry out into an 11-inch square. Cut each pastry into fourths. Place in 8 greased jumbo muffin cups, pressing gently onto bottoms and up sides, allowing corners to point up. Divide chicken mixture among cups. Bring pastry corners together and pinch to seal., Bake until golden brown, 20-25 minutes.

2 skinless, boneless chicken breast halves - cubed
3 tablespoons chopped onion
3 cloves garlic, peeled and minced
¾ (8 ounce) package cream cheese
6 tablespoons butter
3 (10 ounce) cans refrigerated crescent roll dough

Steps:

  • In a medium saucepan over medium heat, slowly cook and stir skinless, boneless chicken breast halves, onion and garlic. Cook until onions are tender and chicken is lightly browned.
  • In a medium bowl, blend chicken mixture, cream cheese and butter until creamy.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Unroll croissants and divide in half to create 12 rectangles. Place approximately one tablespoon of the chicken mixture on each rectangle. Fold into balls.
  • Arrange balls on a large baking sheet. Bake in the preheated oven 12 minutes, or until golden brown.

1/2 cup butter, cubed
1/2 teaspoon salt
1 cup all-purpose flour
4 large egg, room temperature
Filling:
2 cups finely chopped cooked chicken
1 can (8 ounces) crushed pineapple, drained
1/2 cup mayonnaise
1/4 cup chopped celery
1/4 cup thinly sliced green onions
1/4 cup chopped pecans
2 tablespoons sweet pickle relish
1/4 teaspoon onion salt
1/4 teaspoon garlic salt
1/4 teaspoon paprika
Salt and pepper to taste

Steps:

  • Preheat oven to 400°. In a large saucepan, bring water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until smooth and shiny. , Drop by rounded teaspoonfuls 2 in. apart onto a greased baking sheet. Bake until golden brown, 15-20 minutes. Remove to wire racks. Immediately cut a slit in each puff to allow steam to escape; cool. , Split puffs and set tops aside; remove soft dough form inside. 1/4 cup butter, cubed
1/2 teaspoon salt
1 cup all-purpose flour
4 large eggs, room temperature

FILLING:

1 cup shredded Swiss cheese
3/4 cup chopped celery
1/2 cup mayonnaise
1/2 teaspoon salt
1/2 teaspoon prepared yellow mustard
1/8 teaspoon pepper
Minced chives, optional

Steps:

  • In a large saucepan, bring the water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, 1 at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Stir in cheese., Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 400° until golden brown, 20-25 minutes. Remove to wire racks. Immediately split puffs open; remove tops and set aside. Discard the soft dough from inside the puffs. 1/4 cup butter or margarine
1/2 cup Gold Medal™ all-purpose flour
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried thyme leaves
2 eggs
1 1/2 cups deli chicken salad

Steps:

  • Heat oven to 400°F. In 2-quart saucepan, heat water and butter to rolling boil. Stir in flour and thyme; reduce heat to low. Stir vigorously about 1 minute or until mixture forms a ball; remove from heat. Beat in eggs, one at a time, beating until smooth after each addition.
  • On ungreased cookie sheet, drop dough by rounded measuring tablespoonfuls about 2 inches apart.
  • Bake 25 to 30 minutes or until puffed and golden brown. Cool on cookie sheet away from draft, about 30 minutes.
  • Cut off top one-third of each puff and pull out any filaments of soft dough. Fill each puff with 1 rounded tablespoon chicken salad.
