1 quart fresh strawberries with stems
1-2/3 cups vanilla or white chips
2 tablespoons shortening, divided
1 cup semisweet chocolate chips

Steps:

  • Wash strawberries and gently pat until completely dry. In a microwave, melt vanilla chips and 1 tablespoon shortening at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. , Dip each strawberry until two-thirds of the berry is coated, allowing the excess to drip off. Place on a waxed paper-lined baking sheet; refrigerate for 30 minutes or until set. , Melt chocolate chips and remaining shortening; stir until smooth. Dip each strawberry until one-third is coated, allowing the excess to drip off. Return to baking sheet; refrigerate for 30 minutes or until set.

Glazed strawberries are fresh berries coated with a shiny candy shell. They make a gorgeous addition to a fruit platter, fruit tart, or berry cake.

1 pound fresh strawberries (stems on)
2 cups granulated sugar
1 cup water
1/2 cup light corn syrup

Steps:

  • Gather the ingredients.
  • Prepare a baking sheet by lining it with aluminium foil and spraying the foil with nonstick cooking spray.
  • Wash the strawberries and dry them carefully.
  • Prepare an ice bath by placing ice and cold water in a bowl large enough to hold your intended saucepan.
  • Combine the sugar, water, and corn syrup in a medium saucepan over medium-high heat. Insert a candy thermometer.
  • Stir until the sugar is completely dissolved.
  • Continue to cook, without stirring, until the temperature reaches 300 F on the candy thermometer.
  • During this process, which can take from 10 to 20 minutes, wipe down the sides of the saucepan occasionally with a wet pastry brush to prevent crystallization.
  • Once the candy has reached 300 F, remove the pan from the heat immediately and immerse the bottom in the prepared ice bath to stop it from cooking any further. Do not let the ice water get into the pot.
  • Once the candy has stopped cooking (look for the bubbles to stop rising from the bottom of the pan), remove the pan from the ice water. Now you can begin to dip your berries. Holding a strawberry by the stem, dip it until it is almost submerged in the candy. Be careful not to touch the liquid candy, as it is very hot and can cause painful burns.
  • Remove the berry from the candy and allow the excess to drip off the end.
  • Turn it a few times to ensure excess candy has dripped off, then place it on the prepared, oiled baking sheet.
  • Quickly repeat with remaining berries until they are all coated in candy.
  • Allow the candy to set at room temperature.
  • Serve immediately and enjoy!

Give roses a rest: Sweet and glossy, these candy-dipped strawberries don't need water (but they won't last as long).

1 1/2 cups sugar
1/3 cup corn syrup
12 large ripe but firm long-stem strawberries

Steps:

  • Add the sugar, corn syrup and 1/4 cup water to a small heavy-bottom saucepan. Bring to a boil over high heat, stirring once to make sure the sugar dissolves. Attach a candy thermometer or use and instant read thermometer and bring to 300 to 310 degrees F. Remove the pot from the heat and let sit for 1 minute.
  • Stir the sugar mixture to even out the temperature from top to bottom. Dip the strawberries, using the stem as a handle and swirling to coat. Remove and allow excess syrup to drip off, shaking as needed. Place on a parchment-lined baking sheet and allow to cool and harden, about 10 minutes.
  • Trim the ends of 12 extra-long lollipop sticks to the desired length to fit your vase. Carefully skewer each strawberry through the stem end and arrange into a bouquet in the vase. Serve within 2 hours (see Cook's Note).

STRAWBERRIES AND CRUNCHY CREAM

1 1/2 cups whipping cream
1 teaspoon vanilla or almond extract
8 store-bought meringues, 2 to 3 inches in diameter

Steps:

  • Hull and quarter the berries and add them to a medium bowl. Sprinkle with 1 tablespoon of sugar and toss to combine.
  • Whisk the cream in a medium bowl until peaks form, about 4 to 5 minutes. Sprinkle in the remaining 1 tablespoon of sugar and the extract and combine.
  • Crumble the meringues and it fold into the cream with half the berries. Top bowlfuls of the cream with the remaining berries and serve.

1/2 cup semi-sweet chocolate chips
1/2 teaspoon shortening
1/2 cup white chocolate wafers
coconut or candy sprinkles, etc

Steps:

  • Wash strawberries and allow to dry completely.
  • Place the chocolate chips and shortening in a microwave safe container and heat on high for about 1 minute or until melted and smooth when stirred.
  • Place the white chocolate coating wafers in another microwave safe container and heat on high for about 1 minute or until melted and smooth when stirred.
  • Holding by the leaves, dip half the strawberries in the chocolate mixture and half in the white chocolate. Allow excess to drip off.
  • Place on wax paper and sprinkle with chopped nuts or coconut or sprinkles or drizzle with the opposite color or chocolate.
  • Allow to harden. (I place mine in the frig and they are ready in about 30 minutes).
  • Place in foil cups if desired.
  • Serve that day or place in the refrigerator for storage for a day or two.

24 -30 strawberries, green caps in tact
6 ounces chocolate, coarsely chopped (your favorite chocolate or what is on hand, can use sweet, semisweet, bittersweet or white)

Steps:

  • Rinse strawberries, drying them with paper towels.
  • Melt chocolate in top of double boiler or in microwave (full power in 30 second intervals, until chocolate is melted, stirring often).
  • Note 1: CHOCOLATE SHOULD NOT BE TOO HOT - IF IT GETS TOO HOT IT WILL DRIP ON THE BERRIES INSTEAD OF ADHERING TO THE BERRIES.
  • Note 2: BE CAREFUL--OVER HEATING CHOCOLATE MAY CAUSE SCORCHING AND KEEP IT FROM BLENDING PROPERLY.
  • Insert toothpick into stem end of strawberry and dip 3/4 of berry into chocolate, leaving green cap and some of the red berry showing.
  • Spear free end of toothpick into a piece of Styrofoam or grapefruit to allow strawberry to dry upside down (alternatively dry strawberries on waxed paper).
  • Note 3: If chocolate becomes too thick to work with reheat chocolate gently.
  • Note 4: After chocolate hardens dip tip of berry into contrasting melted chocolate.
  • After the chocolate hardens discard toothpicks.
  • These berries are best if eaten within 24 hours, for longer storage refrigerate but serve at room temperature.
