CROCK POT CHICKEN AND RICE
Easy Cheesy Crock Pot Chicken and Rice Casserole with veggies. Simple and SO yummy! A family favorite healthy crockpot meal. This easy crock pot recipe is made with real ingredients, gluten free, and freezer friendly. Even kids love it!*Update 4/11/19: Updated the amount of chicken broth because a few people reported having issues with the rice coming out crunchy. I have never had this problem and have made it successfully several times with the original 2 1/2 cups chicken broth.*

Steps:
- Lightly coat a 5-quart or larger slow cooker with nonstick spray. Add the rice, carrots, shallot, and Dijon mustard, and stir to combine. Arrange the chicken breasts on top, then sprinkle with the garlic powder, thyme, salt, and pepper. Pour in the chicken broth. Cover and cook on HIGH for 1 1/2 to 2 1/2 hours, until the chicken is cooked through.
- Remove the chicken to a plate and cover to keep warm. Stir the rice, vegetables, and broth, then re-cover and continue cooking on high until the rice is tender, about 1 additional hour.**
- Uncover and stir in the peas and Greek yogurt. Dice the chicken and stir it in with 1/4 cup cheddar cheese. Sprinkle the remaining cheese over the top, then re-cover and cook for a few additional minutes on high until the cheese is melted. Serve warm, sprinkled with fresh parsley as desired.

Steps:
- Place the chicken, garlic, salt, pepper, onion, chicken broth, cream of chicken soup and brown rice in the crock pot. Stir to thoroughly combine all the ingredients.
- Cover and cook on high for 3.5-4 hours until the rice has absorbed all the chicken broth in the crock pot.
- Stir in the shredded cheese. Cover and allow the heat from the meal to melt the cheese (5-7 minutes).
- Serve warm and enjoy!

CROCKPOT SLOPPY CHICKEN AND RICE
I had everything ready and started to cook sloppy joes and I went to the refrigerator to get out what I thought was hamburg but it was chicken. The foil hid the contents and I did not realize that I had chicken in the freezer. So that is how this recipe came about. It actually turned out delicious. I hope you try it and enjoy it.

- Brown the onion and green pepper in a skillet.
- Over low heat stir in the Coca Cola, flour, and catsup combining well.
- Stir in the remaining ingredients in the order listed except for the chicken and rice, mix well.
- Cover and simmer for 10-15 minutes.
- Place the chicken and the sauce in the crockpot and cook for 4-5 hours till the chicken falls apart.
- When the chicken starts to fall apart shred it and add it back into the sauce.
- Add 1 cup of rice and cook for about 20 minutes more then turn the crock pot off and sprinkle mozzerella cheese over the top and put the lid back on and let it set for about 15 minutes...ENJOY this quick and easy meal.
- You can also bake this in oven and cook for 45 minutes covered and then throw in your rice for 15 minutes uncovered.

- Pat the chicken thighs dry with a paper towel and drizzle with 1 tablespoon of oil. Then, sprinkle with 1 1/2 teaspoon Kosher salt, 1 teaspoon pepper, garlic powder, onion powder, and rub all over to evenly adhere.
- Add the remaining 2 tablespoons of oil to a large sauté pan over medium-high heat. Once it has come to temperature, add the chicken thighs skin-side down and sear 3 minutes. Then, turn the chicken and sear 2 minutes. Take care not to overcrowd the pan.
- Add the chicken to the slow cooker and set aside. Reduce the heat to medium and the onion to the pan. Sauté until softened, about 3-4 minutes. Then, stir in the flour. Add the broth a splash at a time, whisking well after each addition. Once the mixture resembles pudding, you may add the broth and whisk to combine. Stir in remaining 1 teaspoon Kosher salt and 1/2 teaspoon pepper, and transfer the gravy to the slow cooker.
