- Stir water, almond milk, applesauce, steel-cut oats, dried cherries, brown sugar, vanilla, and cinnamon together in a slow cooker.
- Cook on Low for 8 hours to overnight.

CROCK POT OATMEAL WITH DRIED FRUIT
Steel cut oats and your favourite dried fruits make for a delicious breakfast that's ready and waiting for you when you roll into the kitchen for breakfast. There's absolutely no need to add any sugar to the oatmeal, as the sugars in the fruit take care of that for you. Use any combination of fruit you have on hand; I've used apples, prunes, dates, apricots, cranberries, raisins, cranberries, strawberries, and pineapple and all are great but my favourites are apple/raisin, and dates all by themselves. From the manual that came with a Cuisinart slow cooker.

- Spray slow cooker insert lightly with cooking spray.
- Measure oats, water, salt, and cinnamon into pot; stir to combine.
- Stir in dried fruit.
- Cover and cook on low for 3 hours (use the timer function; otherwise, you might have to get up early to turn the slow cooker on).
- Leftovers can be reheated in the microwave.

My husband loves this! I use ground nuts as he doesn't always like nuts in things and I can be sneaky that way. I think peaches would be wonderful substituted for the apples.

- Directions.
- Preheat oven to 350°F.
- In a small bowl mix the milk, agave syrup, egg substitute, coconut oil and cinnamon together.
- In a larger bowl combine the oats, (chopped)dried fruit, (chopped)walnuts and the baking powder.
- Pour the wet mixture into the bowl with the oats and mix well.
- Spoon the mixture into a 8 x 8 inch pan coated with cooking spray and bake for 30-40 minutes, until top is firm and a toothpick comes out clean in the center.

SLOW-COOKER OATMEAL

- In a 1-1/2-qt. slow cooker coated with cooking spray, combine all ingredients. Cover and cook on low for 3-4 hours or until liquid is absorbed and oatmeal is tender. If desired, serve with additional milk, walnuts and cinnamon.

YUMMY AND SUPER EASY CROCK POT OATMEAL
Tip for oatmeal: make it in the crock pot overnight! It comes out very creamy from the slow cooking, and I love being able to get up and have that hot steamy bowl right away without having to do anything at all. You do have to clean up the crock pot, but you can make a large quantity and refrigerate the leftovers to be heated in the microwave for the next several days. I use two cups of oatmeal at a time, which is enough for four breakfasts (for me, anyway; probably more for people who don't have huge bowls like I do).

- Put the oats and the water, along with anything else you want to add to the mix in the crock pot, turn on to low, and go to bed thinking about what a great breakfast you're going to have!
- I scoop it out of the crock pot and eat it with maple syrup, or blueberry syrup, or pourable fruit, and soy milk--yum!
- To reheat leftovers, I usually add a little water, and stir it a couple of times while microwaving until it's hot.
- You can add other flavorings as you like, such as dried fruits, other sweet spices, diced apples, etc.
- I usually put raisins on after it's cooked because I like them chewy.
- I've been meaning to try dried cranberries.
CROCK POT PORK CHOPS WITH DRIED FRUIT
The pork chops are stacked in the crock pot, so I think you could substitute a small pork roast and get pretty much the same results. Have not tried this but have tried the pork chops and they are great! If you use a roast, please let me know how it turns out.

- Place pork in 4-5 quart crock pot slow cooker.
- Layer dried fruit evenly over pork.
- Mix brown sugar, marmalade, vinegar, ginger and nectar,.
- Pour evenly over pork and fruit in crock pot.
- Cover and cook on low heat setting 6-7 hours or until pork is slightly pink when cut near bone.
- Remove pork and fruit from crock pot with slotted spoon, Cover and keep warm.
- Pour juices from slow cooker into 1 quart saucepan.
- Mix cornstarch and water.
- Stir into juices in saucepan.
- Cook over high heat 4-6 minutes , stirring constantly, until thickened and bubbly Serve with pork and fruit.
