CROCK-POT MEATLOAF AND PACKET POTATOES

This is a nice, classic meatloaf cooked in the crockpot with a packet of golden potatoes cooked right on the top. Just add a veggie and you have a complete, easy meal. My measurements are approx. because I don't measure anything when I'm cooking.

Ingredients

2 lbs lean ground beef
1/4 cup green bell pepper, chopped
1 small onion, diced
1 egg
1/2 cup breadcrumbs
2 tablespoons steak sauce (like A-1)
1 tablespoon ketchup
1 teaspoon garlic powder
1 teaspoon season salt
fresh ground pepper
4 yukon gold potatoes, diced with skin on
1 teaspoon season salt
2 teaspoons olive oil

Steps:

In a large bowl combine all ingredients except potatoes, second amount of seasoned salt and olive oil. Mix thoroughly and pat into the bottom of your crock. I just level mine out, covering the entire bottom of the crock. Then, take a large piece of aluminum foil and place the diced potatoes, drizzle with olive oil and season with seasoned salt. Then, fold the aluminum foil into a nice packet and place on top of the meatloaf.
Cook on High for 3 to 4 hours until done.
I serve this as is with ketchup on the side because that is the way we like it. Feel free to top with tomato sauce or gravy.

This is a great dish that can cook just about as long as you need it to! Throw it in before you go out for the day and you will have an effortless dinner in the evening!

Ingredients

2 lbs ground beef
1 (2 ounce) package onion soup mix
3 cups prepared stuffing or 3 cups breadcrumbs
2 eggs
1/4 cup ketchup
1/3 cup mustard
3 large baking potatoes
ketchup

Steps:

Peel and cube potatoes.
Line the bottom of the crock pot with potatoes.
In a large mixing bowl, beat eggs, ketchup and mustard together.
Add ground beef, onion soup mix, and stuffing or bread crumbs to the egg mixture and mix all together well.
Shape meat mixture into two loaves and place in crock pot on top of potatoes.
Drizzle ketchup on the top of the loaves.
Set crock pot to high for an hour or until you leave, then set to low for 8-10 hours.
