3 chicken breasts
1 egg
1 teaspoon salt
1/4 teaspoon pepper
1 cup dry breadcrumbs
1 1/4 cups butter
1 (10 1/2 ounce) can pizza sauce
6 slices mozzarella cheese
parmesan cheese

Steps:

  • If using whole chicken breasts, cut in to halves.
  • In bowl beat egg salt and pepper dip chicken into egg.
  • Then coat with crumbs. In large skillet saute chicken in butter.
  • Arrange chicken in pot.
  • Pour pizza sauce over chicken.
  • Cover and cook on low 6 to 8 hours.
  • Add mozzarella cheese, sprinkle parmesan cheese on top.
  • Cover and cook 15 minutes.

8 chicken breast halves
salt and pepper
italian seasoning, to taste
1 (420 g) can tomato soup
1/2-1 cup water, I use 1/2c, add more later if necessary
1 bay leaf
1 garlic clove, crushed
1 cup mozzarella cheese, shredded
1/3 cup parmesan cheese, grated

Steps:

  • Brown chicken with garlic, salt, pepper and Italian seasoning in a little olive oil.
  • Mix tomato soup, water, and bay leaf in crock pot, add chicken and cook for 3 to 4 hours until tender - my crock pot seems to cook very quickly, much quicker than the old one I had years ago so cooking time is approximate.
  • Remove chicken and sauce to casserole dish, (remove bay leaf) sprinkle with mozzarella and Parmesan cheese.
  • Heat in 160 deg C - 180 deg C (324 deg F - 350 deg F) oven until cheese is melted.
  • Serve with rice or noodles.

1/2 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
1/2 teaspoon pepper
1/4 teaspoon salt
1 large egg, lightly beaten
1 tablespoon water
4 (6 ounces each ) boneless skinless chicken breast halves
1 jar (24 ounces) marinara sauce
4 slices part-skim mozzarella cheese
Hot cooked pasta, optional

Steps:

  • In a shallow bowl, combine bread crumbs, Parmesan cheese, Italian seasoning, pepper and salt. In another bowl, combine egg and water. Dip chicken in egg mixture, then in crumb mixture to coat both sides, patting to help coating adhere., Transfer chicken to a 4- or 5-qt. slow cooker. Pour sauce over chicken. Cook, covered, on low for 4-6 hours or until a thermometer inserted in chicken reads 165°. Top with cheese, recover, and cook for 10-15 minutes, until cheese is melted. If desired, serve with hot cooked pasta.

16 ounces boneless skinless chicken breasts
28 ounces crushed tomatoes
2 garlic cloves, minced
1 (4 ounce) can sliced black olives (optional)
4 ounces sliced mushrooms (optional)
2 teaspoons oregano
2 teaspoons basil
1 teaspoon thyme
6 ounces mozzarella cheese

Steps:

  • Cut chicken breasts into 4 oz serving size and place in crock pot.
  • In a bowl, mix the tomatoes, olives, mushrooms, garlic and spices. Pour over chicken and spread evenly. Push down while spreading to ensure the sauce flows around the chicken.
  • Set crock pot to low and cook 8 - 10 hours.
  • 5 minutes before serving, place 1 ounce of mozzarella on each piece of chicken and allow to melt.
  • Serve with whole wheat pasta, if desired (add about 200 calories for the pasta).

1 1/2 lbs boneless skinless chicken breasts (about 3 medium)
1 cup milk
6 tablespoons butter or 6 tablespoons margarine, melted
1/4 cup cornstarch (or more to thicken as needed)
1/4-1/2 cup parmesan cheese (or more to thicken as needed)
parsley

Steps:

  • Place chicken, milk, and butter in crock pot and cook on low 5-6 hours (until done).
  • When chicken in cooked through, remove from crock pot and add cornstarch and parmesan cheese to juices in crock pot and stir until thickened.
  • Spread cheese mixture on chicken, sprinkle with parsley, and serve.
