CROCK POT CHICKEN COBBLER

This is my basic filling for chicken pot pie, with a little twist. It's done in the crock pot and spooned over fresh hot biscuits. I use the canned variety on weeknights, but use your favorite recipe.

Ingredients

3 cups potatoes, cubed
2 cups carrots, cubed
1 cup onion, chopped
15 ounces canned green beans, drained
15 ounces canned corn, drained
10 ounces cream of chicken soup
1 lb boneless skinless chicken breast
1 -2 teaspoon garlic powder
1 teaspoon dried thyme
pepper, to taste
paprika, to taste
1/4 cup water
1 tablespoon cornstarch
rice or noodles, for serving

Steps:

Place carrots and potatoes in microwave safe dish with 1/4 cup water. Place in microwave for 3 minutes Drain.
Put potatoes, carrots, onion, green beans and corn in crock pot. Pour in 3/4 of can of cream of chicken, garlic powder and thyme. Stir.
Place chicken breasts on top of vegetables, spoon remaining soup over chicken breasts covering each. Season with paprika and pepper.
Turn crock pot to low and cook for 8 hours.
30 minutes before serving, break up chicken with a spoon. If sauce needs to thicken, dissolve cornstarch in water and add to crock pot. Turn on high for about 20 to 30 minutes or till thick as desired.
Spoon mixture over hot biscuits, rice or noodles. Enjoy.

42 oz peach pie filling, about 2 cans
1 box vanilla cake mix
8 oz unsalted butter, cut into small chunks
⅓ cup walnuts, optional
vanilla ice cream, optional, for serving

Steps:

Put peach pie filling in slow cooker. Then top with cake mix, butter, and walnuts.
Cook on high for 2-2.5 hours or until the cake part reaches desired consistency.
Server a la mode with vanilla ice cream or your favorite whipped cream.
Enjoy!

This easy dessert is always a hit in my house. It is especially good for entertaining; your guests think you slaved away baking when all you did was throw a few simple ingredients into the slow cooker! My favorite fruit mixture is peach/berry but any fruit your family loves will work. Serve hot with a scoop of vanilla ice cream.

cooking spray
2 cups frozen peach slices
2 cups mixed frozen berries
2 tablespoons cornstarch
1 teaspoon vanilla extract
½ cup brown sugar
½ teaspoon ground cinnamon
½ teaspoon nutmeg
1 (18.25 ounce) package white cake mix
½ cup melted butter

Steps:

Lightly spray the slow cooker with cooking spray. Mix peaches and berries together in the slow cooker; sprinkle with cornstarch and toss to coat.
Stir vanilla into berry mixture; add brown sugar, cinnamon, and nutmeg. Pour cake mix over berry mixture and drizzle with melted butter.
Cook in the slow cooker set to High until bubbling, 3 to 3 1/2 hours.
