A great cauliflower side dish that goes well with just about anything. An easy way to get kids to eat veggies.

3 slices bacon
nonstick cooking spray
1 medium head cauliflower, cut into florets
¼ cup chicken broth
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon ground turmeric
1 (10.75 ounce) can cream of chicken soup (such as Campbell's®)
½ cup shredded mozzarella cheese
½ cup shredded Cheddar cheese
1 scallion, green part only, thinly sliced

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Once cool enough to touch, crumble and divide into thirds.
  • Spray the inside of a slow cooker with cooking spray.
  • Place cauliflower into the slow cooker and pour chicken broth on top. Season with salt, pepper, and turmeric.
  • Combine cream of chicken soup, mozzarella cheese, and Cheddar cheese in a bowl. Pour over cauliflower mixture.
  • Cook on High until cauliflower is cooked to your liking, about 2 hours. Stir in 2/3 of the crumbled bacon just before serving.
  • Transfer to serving platter and top with green onion and remaining bacon.

This chili is delicious, easy to make, a great use for leftovers, and fits into the Weight Watchers Core plan. If you like, substitute chicken for the turkey, or add jalapeños. I use a quesadilla soy cheese, but you can use any flavor you prefer.

1 (15 ounce) can chicken broth
1 (15 ounce) can white hominy
1 (15 ounce) can great northern beans
1 (4 ounce) can diced green chilies
1 teaspoon cumin
1/8 teaspoon cayenne pepper
1 -2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
5 ounces soy cheese

Steps:

  • Combine all ingredients except cheese in slow cooker. Cook on high for 2-4 hours.
  • Turn slower cooker to low. Dice cheese and add to chili. Cook until melted, 30 minutes to 1 hour.

This pale vegetarian chili is both pretty to look at and delicious to eat. Add the cream cheese if you prefer a thicker, cheesier sauce, and the mild green chilies for a flavor boost. Serve with hot crusty bread and a salad of sliced tomatoes in vinaigrette for a great meal. TIP: If you prefer a thicker chili, mash some or all of the beans or puree in a food processor before adding to the recipe.

1 tablespoon vegetable oil
2 onions, finely chopped
2 garlic cloves, minced
1 -2 jalapeno pepper, minced
1 tablespoon cumin seed
1 tablespoon dried oregano leaves
1 tablespoon chili powder
1 teaspoon salt
1/2 teaspoon black peppercorns, cracked
1 (19 ounce) can white kidney beans, drained and rinsed or 1 cup dried white bean, soaked overnight, cooked and drained
3 cups vegetable stock
3 cups cauliflower florets, cooked for 4 minutes in salted boiling water and drained
1 green bell pepper, cut into thin strips
2 cups shredded monterey jack cheese
4 ounces cream cheese, cut into 1/2 inch cubes
1 (4 1/2 ounce) can chopped mild green chilies (optional)
finely chopped green onion, garnish (optional)
finely chopped fresh cilantro, garnish (optional)

Steps:

  • In a skillet, heat oil over medium heat. Add onions and cook until softened. Add garlic, jalapeno pepper, cumin seeds, oregano, chili powder, salt and peppercorns and cook, stirring, for 1 minute. Transfer mixture to slow cooker stoneware. Add beans and stock and stir to combine.
  • Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours, until hot and bubbling.
  • Stir in cauliflower, green pepper, Monterey Jack cheese, and cream cheese and chilies, if using. Cover and cook on HIGH for 25 to 30 minutes, until green peppers are softened and cauliflower is heated through. Ladle into bowls and garnish as desired. Serves 6 to 8.

2 (15 ounce) cans great northern beans, drained and rinsed

Steps:

  • Put all ingredients in the crock-pot, in the same order listed. (It is very important to put the chicken on bottom since it takes the longest to cook.).
  • Cook on low for 8-10 hours.
  • When ready to serve, slowly stir the chicken from the bottom.
  • It tastes fabulous plain or you can top with dollop of sour cream and crunched up tortilla chips. I also add cheese and fresh green onion.

2 medium heads cauliflower, cut into florets (about 18 cups)
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2 cups shredded cheddar cheese
1 cup sour cream
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup butter, cubed
1 cup dry bread crumbs

Steps:

  • In a 6-qt. slow cooker, combine cauliflower, soup and cheese. Cook, covered, on low for 5-6 hours or until cauliflower is tender. Stir in sour cream, salt and pepper., In a small skillet, melt butter over medium heat. Add bread crumbs; cook and stir until golden brown, 2-3 minutes. Sprinkle over cauliflower.

4 cups cooked cannellini beans (or 2 15-oz. cans, drained)
1 28-ounce can diced tomatoes with juice
1 4-ounce can fire-roasted diced green chilies
1/2 cup Frank's Red Hot original sauce
2 tablespoons brown sugar
1 tablespoon chili powder
2 teaspoons cumin
1/8 teaspoon cayenne pepper (plus more to taste if desired)
1/2 teaspoon kosher salt (plus more to taste if desired)
Assorted toppings such as blue cheese

Steps:

  • Add all ingredients to a 3-quart or larger slow cooker. Stir.

1 1/2 cups water
1 small head cauliflower, trimmed and cut into medium pieces
1 small head purple cauliflower, trimmed and cut into medium pieces
4 slices thick-cut pepper bacon, diced
1 cup heavy cream
3 ounces cream cheese, softened
1 tablespoon Dijon mustard
2 cups shredded colby-monterey jack cheese
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon granulated garlic
1 tablespoon chopped chives

Steps:

  • Insert a vegetable steamer into a 6-quart or larger Instant Pot. Pour in the water and then place the cauliflower on top of the steamer, evenly spread out. Lock on the lid, making sure the valve is set to seal. Pressure cook on high for 2 minutes and then do a quick release.
  • Carefully open the lid and transfer the steamer basket full of cauliflower to a plate and set aside. Discard the water from the inner pot and return to the Instant Pot. Set to sauté on high. Once hot, add the bacon and cook, stirring often, until golden brown and crispy, about 8 to 10 minutes. Using a slotted spoon, transfer bacon to a plate, lined with paper towels.
  • Drain off most of the bacon grease and then stir in the cream, cream cheese, and shredded cheese. Stir until the cheeses have melted through and the sauce is smooth and has thickened somewhat. Turn off the machine and season with salt, pepper and granulated garlic. Stir in the cauliflower and reserved bacon until evenly combined. Transfer to a serving bowl and garnish with chives before serving.
