STANDARD CROATIAN MIXED SALAD



Standard Croatian Mixed Salad image

This is usual mixed summer salad you can get almost in every Croatian household or restaurant. The importance is in wine vinegar (not aceto balsamico), and it must be cooled. I do not know the reason, but vinegar does not make you thirsty during hot summer days, so it is very important ingredient.

200 g tomatoes
150 g green peppers (or red, as you like)
150 g cucumbers
100 g onions (optional)
2 tablespoons vinegar
1 tablespoon oil (olive or normal)
3 g pepper
4 g salt

Steps:

  • Cut tomato into 1/8 parts.
  • Cut green peppers into thin stripes.
  • Peal cucumber and cut across into thin parts.
  • Cut onion into thin rounds.
  • Season with salt and pepper, add vinegar and oil (you can dissolve vinegar with some water) and cool it for 30 minutes. Serve cold.

300 g tomatoes
50 g onions
1 tablespoon olive oil
1 tablespoon vinegar
1 tablespoon water
1/4 teaspoon marjoram (optional)
5 g salt
2 g pepper

Steps:

  • Cut onion into thin rounds. Cut tomato into thin pieces, or into 1/8 parts.
  • Put that into a salad bowl; add vinegar, olive oil, water, salt, pepper and marjoram. Mix, cool it for a while and serve.

This is really something simple, but very refreshing during hot summer days. This is the usual cucumber salad you will get in Croatia.

1 garlic clove
1 tablespoon vinegar (not aceto balsamico )
2 g salt
1 g pepper

  • Peal the cucumber and cut into thin slices.
  • Mince garlic well and add into sliced cucumber.
  • Add vinegar, oil and water and season as you like with salt and pepper.
  • Leave in refrigerator to cool a bit and serve.

8 large potatoes, medium
8 Tbsp olive oil
4 Tbsp vinegar
5 medium onions
3 tsp salt and pepper

Steps:

  • 1. Boil peeled potatoes
  • 2. Slice while still warm and soft ( not mushy, just soft and cooked)
  • 3. Sprinkle with Salt and Black pepper and work through the sliced potatoes
  • 4. Slice onion very fine and sprinkle over warm potatoes and work through
  • 5. Gradually pour over the vinegar and Olive Oil while potatoes are warm and work through ( be careful not to mush the potatoes) and optional sprinkle over very fine chopped fresh parsley.
  • 6. Optional is crispy Bacon as well as Green Spring Onions and fresh Garlic
  • 7. very GOOD TO serve with Chicken , and Meat

Croatian Dalmatian Potato Salad image

This is nice meal to eat with grilled or fried fish. It also goes well with any kind of meat, especially beef cutlets.

500 g potatoes
100 g onions
2 tablespoons olive oil
1 tablespoon red wine vinegar
5 g fresh basil leaves
2 teaspoons salt
1 teaspoon pepper

Steps:

  • Cook potato with skin and when cooked, peel it.
  • Cut peeled potato into slices (across). Put potato into a salad bowl, pour over olive oil and vinegar dissolved with half glass water (1 dcl). (It is much better if you season warm potato because it will soak oil, vinegar and seasoning much better.)
  • Cut onion into thin rounds and add to potato. Add salt and pepper. At the end add hand cut basil leaves. Do not put too much basil - it must be surprise for consumer.
  • Mix well. Wait until cools and serve.

NORTH CROATIAN SIMPLE BEANS SALAD



North Croatian Simple Beans Salad image

It is very simple recipe. You may keep the salad up to 3 days in hermetically closed pot in refrigerator (The second day is the best). You can use almost all kinds of beans, even Italian brown lentils. I did not include soaking time in this recipe. We use pumpkin oil for this recipe, but since it has strong and peculiar taste it may be strange for non-Croatians. You may use normal oil, but not olive oil.

150 g onions
2 tablespoons vinegar
2 tablespoons oil
1/2 cup water
2 teaspoons salt
2 teaspoons pepper (black, grounded)

Steps:

  • Cook beans until soft. Drain and put into salad bowl.
  • Slice onion into very thin rings and add into beans. Season with salt and pepper. Mix water and vinegar and add into salad. Pour oil over and stir.
  • Leave it in refrigerator at least one hour. You can keep surpluses in hermetically closed pot in refrigerator.

I suppose all nations have their way of making tomato soup. This one I've learned from my mother, although she doesn't use olive oil.

500 g tomatoes (strained sauce ,use package from store)
1/4 cup olive oil
10 g flour
10 g salt
15 g brown sugar
3 g black pepper
5 g dried basil (minced)
2 cups water
15 g rice

Steps:

  • Put olive oil in a pot, heat it and add flour. Fry it until brownish, add cold water and mix until become creamy.
  • Add tomato sauce, water, season it with sugar, salt and pepper and cook about 30 minutes. Add rice 15 minutes after soup boils.
  • When the rice is done, serve.

North Croatian Simple Tomato Sauce image

This is continental version of Dalmatian tomato salsa. It is very easy to make and goes excellent with cooked beef and mashed potato. Before Mediterranean food become popular this was my familys standard tomato sauce. If you make this recipe with fresh tomato, first you have to make strained juice; that means: soak tomato briefly in hot water, remove seeds, shave the inside part of tomato skin and blend it. On the other hand, it is easier to buy the can or package of pure tomato strained juice (whatever you have).

500 g tomatoes (strained juice or package 500 g)
1 tablespoon oil (or lard)
2 teaspoons flour
2 g celery leaves (or one sprig green celery)
2 tablespoons brown sugar
6 g salt
1/2 cup water

Steps:

  • Heat oil and add flour. Fry until slight brown (or 1-2 minutes). Add gently some water and make creamy liquid.
  • Add all tomato juice, salt, sugar and celery sprig. Add the rest of the water.
  • It is cooked after 20 minutes, but you can cook more if you want (do not burn it). Remove celery sprig before serving.
