3/4 cup butter, softened
1-1/4 cups sugar
3 large eggs
1 can (20 ounces) crushed pineapple, well drained
1-1/2 teaspoons lemon juice
4 cups firmly packed cubed white bread (crusts removed)

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in pineapple and lemon juice. Gently fold in bread cubes. , Spoon into a greased 2-qt. baking dish. Bake, uncovered, 40 to 45 minutes or until top is lightly golden. Serve warm.

2 cups sugar
1 can (8 ounces) crushed pineapple, undrained
1/2 cup butter, melted
1/4 cup whole milk
4 cups cubed bread

Steps:

  • Preheat oven to 350°. Combine eggs, sugar, pineapple, butter and milk; add bread cubes and toss to coat. Transfer to a greased 8-in. square baking dish. Bake, uncovered, until a thermometer reads 160°, 30-35 minutes. Let stand 10 minutes before serving. Refrigerate leftovers.

1 cup all-purpose flour
1 cup brown sugar
1 teaspoon baking powder
½ teaspoon salt
1 egg
½ cup butter, melted
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread well-drained pineapple into a 9x9 inch square baking pan.
  • In a medium bowl, mix together flour, sugar, baking powder, salt and egg until smooth. Spoon mixture evenly over pineapple. Pour melted butter over mixture and then sprinkle with cinnamon.

½ pound butter, melted
1 ⅔ cups white sugar
1 (20 ounce) can crushed pineapple with juice
salt and pepper to taste
1 pinch ground cinnamon, or to taste
1 pinch ground nutmeg
4 cups bread cubes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x10 inch casserole dish.
  • In a medium bowl combine butter, sugar, pineapple, salt, pepper, cinnamon and nutmeg; mix well. Place bread cubes in the bottom of the casserole dish and pour pineapple mixture on top.
  • Bake in preheated oven for 45 minutes or until golden brown and set throughout. If the top browns too fast, before the center is set, cover the dish with aluminum foil until it sets. Let stand 10 minutes before serving.

¾ cup low-fat milk
1 cup butter, melted
2 cups white sugar

1 can (14-1/2 ounces) vegetable broth
1 cup quinoa, rinsed
1/4 teaspoon salt
1/8 teaspoon plus 1/4 teaspoon pepper, divided
10 bacon strips
16 sea scallops (about 2 pounds), side muscles removed
1 cup drained canned pineapple tidbits

Steps:

  • In a small saucepan, bring broth to a boil. Add quinoa, salt and 1/8 teaspoon pepper. Reduce heat; simmer, covered, 12-15 minutes or until liquid is absorbed., Meanwhile, place bacon in a large nonstick skillet. Cook over medium heat, removing 8 of the strips when partially cooked but not crisp. Continue cooking remaining strips until crisp. Remove to paper towels to drain. Finely chop crisp bacon strips. Cut remaining bacon strips lengthwise in half., Wrap a halved bacon strip around each scallop; secure with a toothpick. Sprinkle with remaining pepper., Wipe the pan clean, if necessary; heat over medium-high heat.
