2 (160 g) salmon fillets (skinless)
2 tablespoons rice flour
peanut oil (or bran oil to shallow fry)
20 basil leaves (Thai)
1/2 cup white vinegar (125ml)
1/2 cup caster sugar (110grams)
2 tablespoons ginger (finely grated)
4 chilies (birdseye seeded finely sliced)
2 teaspoons fish sauce

Steps:

  • To make chillie ginger glaze, place all ingredients in a small saucepan on high heat and heat until boiling and cook for 3 to 4 minutes until slightly thickened, set aside.
  • Cut salmon fillets into 2cm cubes and add to rice flour and toss to coat.
  • Heat oil in a frying pan on high and cook salmon cubes in batches for 1-2 minutes each side, until crisp and golde and drain on papere towel.
  • Place salmon cubes on 20 chinese soup spoons and add 1 Thai basil leaf and drizzle over glaze and serve with any remaining glaze alongside.
  • If you don't have any chinese spoons, you can use small shallow dishes with toothpicks for picking up the salmon.

This glaze is really wonderful on salmon, but equally delicious on swordfish, halibut, tuna, or any other firm, full-flavored fish.

4 (8 ounce) fresh salmon fillets
salt to taste
⅓ cup cold water
¼ cup seasoned rice vinegar
2 tablespoons brown sugar
1 tablespoon hot chile paste (such as sambal oelek)
1 tablespoon finely grated fresh ginger
4 cloves garlic, minced
1 teaspoon soy sauce
¼ cup chopped fresh basil

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Season salmon fillets with salt.
  • Place salmon on the preheated grill; cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.
  • Combine water, rice vinegar, brown sugar, chile paste, ginger, garlic, and soy sauce in a small saucepan over medium heat.
  • Bring mixture to a boil, reduce heat to medium and simmer until barely thickened, about 2 minutes.
  • Sprinkle basil on top of salmon; spoon glaze over basil.
