Fish fragrant sauce doesn't have any fish-the sweet, sour, & spicy elements in the sauce are used in Sichuan fish dishes, giving the eggplant recipe its name.

450 g (1 lb) caster (superfine) sugar
100 g (3½ oz) liquid glucose
100 ml (3½ fl oz) light soy sauce
100 ml (3½ fl oz) Chinese red vinegar
70 g (2½ oz) soy paste
2½ tablespoons Chinkiang black vinegar
2 tablespoons chile bean paste
2 tablespoons Lao Gan Ma Chili Oil (with peanuts)
1 tablespoon very finely chopped ginger
2 tablespoons finely chopped garlic
3 bird's eye chiles, very finely chopped
1 teaspoon salt
2 teaspoons ground Sichuan pepper
½ teaspoon chile flakes
50 g (1¾ oz or 1⁄3 cup) sesame seeds
15 g (½ oz) xanthan gum
60 g (2¼ oz) rice flour
60 g (2¼ oz) tapioca flour
1 teaspoon salt
Vegetable oil, for deep-frying
6 Japanese eggplants, peeled, cut into batons about 5 x 1.5 cm (2 x 5⁄8 inch)
Sprigs from ½ bunch cilantro, finely chopped
2 small long red chiles, thinly sliced into rounds
2 spring onions (scallions), finely chopped
3 tablespoons fried shallots
1 small handful of baby cilantro leaves and sesame seeds, to garnish

Steps:

  • Put the sugar and liquid glucose in a large saucepan and add 250 ml (9 fl oz/1 cup) water. Whisk over a medium heat to dissolve the sugar, then increase the heat to high, stirring until the mixture starts to boil. Keep boiling until the temperature reaches 120°C (235°F).
  • Add the remaining sauce ingredients, stir to combine, and leave it to simmer for 1 hour. At the end, you should have a glazy caramel-like consistency, which coats the back of a spoon. This sauce can be stored in a jar in the fridge for up to 2 months.
  • Put the xanthan gum and 550 ml (19 fl oz) water into a bowl. Whizz with a hand-held blender until it has a thick, viscous consistency. Blend in the rice and tapioca flours, followed by the salt. The result should be a fairly goopy, but smooth batter.
  • Fill a large wok or deep-fryer one-third full with oil and heat to 180°C (350°F) or until a cube of bread dropped into the oil turns golden in 15 seconds. Dip the pieces of eggplant into the batter then gently lower them into the oil one by one. Fry in batches for about 5 minutes per batch. Don't fiddle around with the eggplant too much in the first 2-3 minutes to allow the batter to firm properly. After about 3 minutes the exterior will harden and you can use a pair of tongs to separate any pieces that have stuck together in the oil. Continue cooking until the 5-minute mark. Drain on paper towels.
  • Put the eggplant in a bowl and pour about 100 ml (3½ fl oz) of the fish fragrant sauce on top. Using a large spoon, give everything a stir to make sure each piece of eggplant is evenly coated. Add the cilantro sprigs and chiles and mix through. Divide between four to six bowls and top with the spring onions and fried shallots. Sprinkle with baby cilantro leaves and sesame seeds.

2 (1 lbs / 450 g in total) eggplant (, cut to 8-cm (3-inch) sticks (*Footnote 1))
1 teaspoon salt
1/4 cup cornstarch (, to coat the eggplant)
3 tablespoons Chinkiang vinegar
1 tablespoon light soy sauce ((or soy sauce))
1 tablespoon dark soy sauce ((or soy sauce))
1 tablespoon Shaoxing wine ((or dry sherry))
1 tablespoon Doubanjiang ((fermented chili bean paste))
2 tablespoons sugar
1/2 cup chicken stock ((or vegetable stock))
1 tablespoon cornstarch
1/2 cup peanut oil ((or vegetable oil))
2 teaspoons Sichuan peppercorns
4 green onions (, chopped)
3 tablespoons minced garlic (about 8 cloves garlic)
1 tablespoon ginger (, minced)
1/2 lbs (230 g) ground pork ( (*Footnote 2) (Optional))
8 to 10 Chinese dried chili peppers ((or Korean dried chili peppers))

Steps:

  • Chop eggplant into long sticks of about 2-inch (5-cm) long and 1/4-inch (6-mm) thick.
  • Place eggplant in a large bowl and add water to cover. Add 1 teaspoon salt, mix well. Place a pot lid on top to keep the eggplant under water for 15 minutes. Drain and pat dry.
  • Add all the sauce ingredients into a bowl. Stir to mix well.
  • Sprinkle eggplant with cornstarch and mix by hand, until eggplant is evenly coated with with a thin layer of cornstarch.
  • Add oil to a large nonstick skillet and heat over medium high heat until hot. Spread eggplant across the bottom of the skillet without overlapping (you might need to cook in 2 or 3 batches). Fry the eggplant one side at a time until all the surfaces are charred and the eggplant turns soft, 5 to 7 minutes. Transfer to a plate. Cook the remaining batch(es) with the same method. If the skillet gets too hot and starts to smoke, turn to medium heat.
  • Once the eggplant is all cooked, remove the pan from the stove. Drain extra oil and only leave 1 tablespoon in the pan by pouring the oil into a heatproof bowl, or wipe the pan with a few layers of paper towels attached to the front end of a pair of tongs.
  • Add the Sichuan peppercorns into the pan. Cook over medium heat until the peppercorns turn dark brown. Remove them with a spatula and transfer to a small bowl (*Footnote 3). Add the pork. Cook and chop with your spatula, until separated into small bits and cooked through. Add green onion, garlic, ginger, and dried chili peppers. Stir a few times to release the fragrance.
  • Stir the sauce again to completely dissolve the cornstarch, then pour into the pan. Stir until the sauce thickens. Return the eggplant to the pan and quickly stir to mix everything well.
  • Turn to the lowest heat and taste the sauce (be careful, it will be very hot!) Adjust flavor by sprinkling a bit more salt or sugar, if needed. Turn to medium heat and mix well again. Transfer everything to a plate immediately.
  • Serve hot over steamed rice as a main.

Fish-Fragrant Eggplant With Minced Pork image

Give the humble eggplant the attention it deserves with a rich and spicy sauce.

Number Of Ingredients 17

2 Chinese eggplants
1 clove of garlic
1 large fresh red chile, deseeded (optional, depending on preferred spice level)
½ a thumb-size piece of ginger
A small handful of fresh cilantro
3½ oz. (100 g) minced pork (4 finely diced soaked shiitake mushrooms for vegetarians)
1¾ cups (14 oz.) vegetable oil (or less if pan-frying the eggplant)
½ Tbsp. oyster sauce
½ Tbsp. soy sauce
¼ tsp. sugar
1 tsp. pure sesame oil
1 Tbsp. chile bean paste
½ Tbsp. oyster sauce
¾ cup (7 oz.) chicken stock
1 tsp. sugar
1 tsp. Chinkiang black rice vinegar
½ Tbsp. Shaoxing rice wine

Steps:

  • Leaving the skin on, cut the eggplants in half lengthways. Then cut them into 3-4 cm (1¼-1½ inch) chunks, to end up with approx. 12-16 pieces (depending on the size of your eggplants).
  • Finely chop the garlic, chile, ginger, and cilantro, taking care to keep the chile and coriander separate. Mix all the sauce ingredients together in a bowl. Tip the minced pork into a separate bowl, then add the marinade ingredients and mix well.
  • Now build your wok clock: place your eggplant pieces at 12 o'clock, then arrange the garlic, ginger, marinated minced pork, chile, the sauce bowl and lastly the cilantro clockwise around the plate.
  • If deep-frying, put the vegetable oil into a wok and heat to 350°F, or use a wooden skewer or wooden chopstick to test by placing the tip in the oil: if the wood starts to fizz after a second or two, the oil is hot enough. Carefully add the eggplant pieces and fry for 3 minutes, to immediately seal in their moisture and flavor. Have a metal or ceramic bowl ready with a metal sieve placed on top. Pour the eggplant and oil into the sieve to drain the excess oil, setting the aubergine aside for later.
  • If you prefer to pan-fry rather than deep-fry, place the eggplant pieces in a mixing bowl and massage well with 1½ Tbsp. of oil. Heat a frying pan on a medium heat and cook the eggplant, flesh side down, for 3-4 minutes per side, until both sides are browned. Put into a bowl and set aside for later.
  • Return the wok to the hob on a medium-high heat. Add the ginger and garlic, immediately followed by the minced pork, and begin to stir-fry, breaking up the meat and browning it well. Bring the wok to a high heat and, once smoking hot, add the sauce and bring to a vigorous boil. Put the aubergine back into the wok and reduce the heat to medium-low, allowing the sauce to simmer and caramelize around the eggplant pieces. Cover with a lid and boil for 8-10 minutes, stirring occasionally.
  • Scatter over the chopped cilantro and serve.
