Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
- Combine butter, brown sugar, and white sugar in a large bowl; beat with an electric mixer until creamy. Add eggs and vanilla extract. Beat until well incorporated. Stir in flour and baking soda until smoothly blended. Fold in chocolate chips.
- Drop teaspoonfuls of cookie dough onto the prepared baking sheets.
- Bake in the preheated oven until deeply browned and crisp, 12 to 15 minutes. Transfer to wire racks to cool. Repeat with remaining cookie dough.

THE BEST CRISPY CHOCOLATE CHIP COOKIES
These cookies are inspired by the thin and crispy style made popular by the Long Island bakery Tate's Bake Shop. In our version, we've upped the brown sugar, vanilla and chocolate chips for an even more flavorful and decadent treat.

- Arrange racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
- Whisk the flour, salt and baking soda in a medium bowl until completely combined. Beat the butter, oil, granulated sugar and brown sugar in the bowl of a stand mixer with the paddle attachment (or a large bowl if using a hand mixer) on medium-high speed until creamy, about 5 minutes. The mixture will look broken but that's ok. Beat in 1 teaspoon water and the vanilla until smooth. Reduce the speed to low and beat in the eggs one at a time until incorporated. Beat in the dry ingredients until just combined. Fold in 1 1/2 cups chocolate chips. Reserve the rest.
- Drop heaping tablespoons of the dough onto the prepared baking sheets about 2 inches apart. Lightly press about 3 of the remaining chocolate chips into each cookie.
- Bake the cookies until they are a deep golden brown, rotating the pans halfway through, 12 to 15 minutes. Let the cookies cool on the baking sheets for 10 minutes. Then transfer them to a wire rack to cool completely. Repeat with any remaining dough.
CHOCOLATE CHIP COOKIE CEREAL
Winning the breakfast cereal battle one cookie at a time! Healthy, whole grain, tastier than anything you'll get in a box, AND easy to make. The only problem is making it last until breakfast. This cereal is crisp, holds milk well, and unlike most store-bought cereal it is very filling. Feel free to play around with the the flours. I used soft white wheat flour, for a lighter product. If you use regular hard wheat you might want to decrease the wheat flour and increase the oat flour to make it less dense.

- Cream together better, sugars, and vanilla. Stir in applesauce.
- Combine flours, baking soda and salt. Add to butter mixture.
- Stir in chocolate chips.
- Roll small handfuls into half inch thick logs (like play dough snakes). To make the dough easier to handle I pat the sides of each handful with a little oat flour. Put the logs on a cookie sheet lined with wax paper and freeze for about 20 minutes (or longer).
- Cut the logs into quarter inch disks. If you've frozen the dough for a long time, let it soften a bit before cutting so it doesn't crumble. Place the little cookies on parchment lined cookie sheets. They can be close together but not touching. (This step can be time consuming if you are too particular. Just remember that people who get to eat cookies for breakfast probably won't care if each mini cookie is perfectly formed or if they are perfectly spaced on the cookie sheet. Dump them on the pan, take a few seconds to spread them out, and that's that. Better yet, arm your kids with butter knives and let them do the cutting.).
- Bake at 300 degrees for 17 minutes. If you bake on an (ungreased) cookie sheet without parchment paper, or if the cookies are spaced far apart, decrease baking time to 15 minutes.
- Cool cookies on baking sheet for five minutes before removing. Allow to cool completely before storing or eating. The cooled cookies should be cereal-crisp.
- Brag to your friends that you ate cookies for breakfast.

CRISPY CHOCOLATE CHIP CEREAL COOKIES

- In a large bowl cream together, the butter and both sugars, until light and fluffy.
- Add the eggs, one at a time; beating well after each.
- Add the vanilla extract, beat well.
- In another bowl combine together, the flour, baking powder, and baking soda.
- Gradually add flour mixture to the creamed mixture, and mix well.
- Stir in the quick-cooking oats, cornflakes, coconut, pecans, and both chocolate chips; stir until all ingredients are thoroughly combined together.
- Heat oven to 350 degrees.
- Using a Pampered Chef Medium Scoop, (a 2 tablespoon scoop per each cookie) drop cookie dough onto a Pampered Chef Baking Stones, 2-inches apart.
- I place 8 onto each baking stone, then I roll each into 8 balls, and flatten each into 2-inch cookies.
- Bake cookies in 350 degree oven for 15 minutes.
- After removing baking stones from the oven, do not remove cookies from the baking stones just yet.
- Let the cookies set on baking stones for 10 minutes, before removing them to a wire rack to cool completely.
- You should end up with 49 (3-inch) cookies.
- Note: I had baked these cookies on Pampered Chef Rectangular Stoneware, (15" x 12") but I'm sure you could bake these cookies on ungreased baking sheets. Baking time might only take 12-14 minutes, instead of 15 minutes.

- Position oven racks in the top and bottom thirds of the oven, and preheat to 300 degrees F. Line 2 baking sheets with parchment.
- Whisk together the flour, baking soda and salt in a large bowl. Beat the butter and both with an electric mixer sugars with an electric mixer on medium-high speed in a second large bowl until light and fluffy, about 4 minutes. Add the eggs to the butter mixture, one at time, beating after each addition to incorporate; beat in the vanilla. Reduce the speed to medium, add the flour mixture, and beat until just incorporated. - Scoop 12 heaping tablespoons of dough onto each prepared baking sheet about 2 inches apart. Roll each into a ball with slightly wet hands. Bake until the cookies are golden, flat and crunchy, 24 to 28 minutes, rotating the baking sheets halfway through. Let the cookies cool for a few minutes on the baking sheets, then transfer them to a rack to cool completely.
- When the baking sheets have cooled completely, scoop the remaining dough onto 1 sheet and bake. Store the cookies in a tightly sealed container at room temperature for up to 5 days.
CRISPY CEREAL COOKIES
not a very unique name..but I like this recipe..just messed around one day and decided to use up some small amounts of cereal left in boxes..Measure the cereal then crush it slightly..If you crush then measure..it will be too much cereal..I always "underbake" my cookies..the residual heat in cookies will finish the cookies Try using different flavor cake mixes sometimes I add dried cherries, cranberries or raisins..always like to do something different to change the recipe a little

- In large mixing bowl, combine cake mix, egg water and oil.
- Beat on low speed for 1 minute or until blended.
- Stir in cereals, coconut and nuts. Mix well.
- Drop dough by rounded tspful onto prepared cookie sheets.(greased, sprayed or lined with parchment paper about 2" apart.
- Bake one sheet at a time, for 9-11 minutes or until lightly browned.

- Preheat the oven to 375 degrees F. Line cookie sheets with parchment paper.
- In a stand mixer, cream the brown sugar, butter and granulated sugar until pale and fluffy, about 5 minutes. Add the eggs one at a time until well incorporated. Mix in 1/3 cup of water and the vanilla.
- In a separate bowl, whisk the flour, salt and baking soda and add to the butter mixture. Mix on low until the flour mixture is incorporated, and then mix in the chocolate pieces.
- Scoop out the dough onto the prepared cookie sheet and freeze for an hour. The cookies will spread, so limit 4 cookies for each cookie sheet to give ample room.
- Bake until golden brown, 15 to 20 minutes, rotating the trays halfway through. Remove from the oven and cool. Remove the cookies with a flat spatula to prevent breaking.
- Cook's Note.
- The recipe does yield a lot of dough, but it's a great freeze and bake cookie. Once you have scooped all the dough and placed them into the freezer, you can pop them into a zip top bag and just bake off as many as you want when you need to!
