2 large eggs
1 tablespoon minced garlic
2 tablespoons fresh chopped parsley
Salt and pepper (to season)
3 large chicken breasts (halved horizontally to make 6 fillets)
1 cup Panko breadcrumbs
1/2 cup breadcrumbs ((Italian or golden))
1/2 cup fresh grated parmesan cheese
1 teaspoon garlic or onion powder
1/2 cup olive oil (for frying)
1 tablespoon olive oil
1 large onion (chopped)
2 teaspoons minced garlic
14 ounces (400 g) tomato puree ((Passata))
Salt and pepper (to taste)
1 teaspoon dried Italian herbs
1 teaspoon sugar ((optional))
8 ounces (250 g) mozzarella cheese (sliced or shredded)
1/3 cup fresh shredded parmesan cheese
2 tablespoons fresh chopped basil or parsley

Steps:

  • Preheat oven 430°F | 220°C. Lightly grease an oven tray (or baking dish) with non stick cooking oil spray; set aside.
  • Whisk together eggs, garlic, parsley, salt and pepper in a shallow dish. Add chicken into the egg, rotating to evenly coat each fillet in the mixture. Cover with plastic wrap and allow to marinate for at least 15 minutes (or overnight night if time allows for a deeper flavour).
  • When chicken is ready for cooking, mix bread crumbs, Parmesan cheese and garlic powder together in a separate shallow bowl. Dip chicken into the breadcrumb mixture to evenly coat.
  • Heat oil in a large skillet over medium-high heat until hot and shimmering. Fry chicken until golden and crispy, (about 4-5 minutes each side).
  • Place chicken on prepared baking tray / dish and top each breast with about 1/3 cup of sauce (sauce recipe below). Top each chicken breast with 2-3 slices of mozzarella cheese and about 2 tablespoons parmesan cheese. Sprinkle with basil or parsley.
  • Bake for 15-20 minutes, or until cheese is bubbling and melted, and the chicken is completely cooked through.
  • Heat oil in a medium-sized pot. Fry onion until transparent (about 3 minutes), then add the garlic until fragrant (about 30 seconds).
  • Add the tomato puree, salt and pepper to taste, Italian herbs and sugar (If using). Cover with lid to simmer for about 8 minutes, or until sauce has thickened slightly. Taste test and adjust salt and pepper, if needed.

This is slightly different than other chicken parmigiana recipes--the chicken is first ground up and the parmesan cheese is added directly into the chicken patty. An easy dish to make ahead; then later simply top with sauce/cheese and bake. Chopped onion can also be added to the patty.

2 cups chopped boneless chicken (breasts or strips)
2 -3 beaten eggs
1/2 cup parmesan cheese
1/4 cup Italian seasoned breadcrumbs
1 -2 tablespoon butter
spaghetti sauce, of choice
mozzarella cheese

Steps:

  • Grind up chicken in a food processor.
  • Combine beaten eggs, parmesan cheese, and bread crumbs with the chicken.
  • Mix well and form into patties.
  • Brown patties on both sides with butter.
  • Put patties into a baking dish.
  • Top each patty with a spoonful of spaghetti sauce; sprinkle mozzarella cheese over the sauce.
  • Bake at 350 degrees for 20-30 minutes, or until cheese is golden brown.

2 large eggs
1 teaspoon salt
1/8 teaspoon black pepper
6 boneless skinless chicken breast halves
1 cup crushed saltine crackers
1/2 cup vegetable oil
1 (15 ounce) can tomato sauce
1/4 teaspoon dried basil
1/8 teaspoon garlic powder
1 tablespoon butter
1/2 cup grated parmesan cheese
6 slices mozzarella cheese

Steps:

  • Spray a 13x9 inch baking dish with nonstick cooking spray.
  • Whisk eggs, salt and pepper until blended. Dip chicken in egg mixture and coat with cracker crumbs.
  • Heat oil in a large skillet over medium-high heat until hot. Add chicken. Cook chicken until browned on both sides, about 3 minutes per side; drain. Arrange in a single layer in prepared baking dish.
  • Preheat the oven to 350°F Wipe skillet with paper towels. Combine tomato sauce, basil and garlic powder in the skillet and mix well. Bring to a boil, stirring occasionally; reduce heat.
  • Simmer, stirring occasionally, until mixture is thickened, about 6 minutes. Stir in butter. Pour over the chicken. Sprinkle with the Parmesan.
  • Bake, covered, for 30 minutes; remove the cover. Top each chicken breast with mozzarella. Bake for 10 minutes longer.

I like to serve this when I have company. It is always a big hit. My family thinks this is better than any they get at the local Italian restaurants. Note: cooking time does not include the time it takes to cook the pasta.

5 garlic cloves, minced
1 bunch parsley, finely chopped
1/4 cup vegetable oil
2 (14 1/2 ounce) cans Italian-style stewed tomatoes, undrained
1 (15 ounce) can Italian-style tomato sauce
1 (6 ounce) can tomato paste
1/4 teaspoon dried oregano, heaping
1/2 teaspoon dried sweet basil leaves, heaping
1/8 teaspoon salt
1/8 teaspoon black pepper
2 teaspoons granulated sugar
1 egg
1/4 cup milk
1 dash salt
1 dash black pepper
1 cup Italian seasoned breadcrumbs
1 tablespoon fresh parmesan cheese, grated
1 dash salt
1 dash black pepper

12 ounces pasta, cooked al dente

Steps:

  • SAUCE:.
  • In a medium saucepan, cook the onion, garlic, and parsley in the oil for approximately 15 minutes. Add stewed tomatoes, tomato sauce, tomato paste, oregano, basil, salt, pepper, and sugar. Cover and simmer for 30 minutes, stirring occasionally. Taste for flavor and add more sugar if sauce is too tart.
  • In a shallow bowl or pie plate, stir together the egg, milk, and dash of salt and pepper; set aside. In another shallow bowl or pie plate, combine the bread crumbs, 1 Tablespoon Parmesan cheese, and dash of salt and pepper; set aside.
  • Preheat oven to 350 degrees. Lightly pound chicken breasts, between 2 sheets of plastic wrap, with a mallet. Heat the oil in a large frying pan. Dip each breast in the egg mixture and then the bread crumbs, coating well with crumbs. Cook the breasts in the hot oil until golden brown, about 3 minutes on each side.
  • Spread 1 cup of the sauce on the bottom of a 9"x13" baking dish. Place the breasts over the sauce. Spread 1-1/2 cups of sauce over the breasts, then sprinkle with 1/4 cup Parmesan cheese.
  • Cover with foil and bake in preheated oven for 25 minutes. Remove foil and sprinkle with mozzarella cheese. Bake until cheese melts.
  • Toss cooked pasta with remaining sauce. Serve pasta on the side.
