BEEF WITH SNOW PEAS



Beef with Snow Peas image

Number Of Ingredients 12

1/2 cup low-sodium soy sauce
3 tablespoons sherry or cooking sherry
2 tablespoons cornstarch
2 tablespoons brown sugar
1 tablespoon peeled and minced fresh ginger
1 1/2 pounds flank steak, trimmed of fat and sliced very thin against the grain
3 tablespoons peanut or olive oil
8 ounces fresh snow peas, trimmed
5 whole scallions, cut into 1/2-inch pieces on the diagonal
Crushed red pepper
Salt, as needed (use sparingly!)
Jasmine or long-grain rice, cooked according to package directions

Steps:

  • In a bowl, mix together the soy sauce, sherry, cornstarch, brown sugar and ginger. Add the beef to a separate bowl and pour one-third of the liquid over the top. Save the rest of the liquid. Toss the beef and set aside.
  • Heat the oil in a heavy skillet (iron is best) over high heat. Add the snow peas and stir for 45 seconds, getting as much color on them as possible. Remove to a plate.
  • Allow the skillet to get very hot again. With tongs, add half the meat mixture, leaving most of the marinade still in the bowl. Spread out the meat as you add it to skillet, but do not stir for a good minute. (You want the meat to get as brown as possible as quickly as possible.) Sprinkle half the scallions over the meat. Flip the meat to the other side and cook for another 30 seconds. Remove to a clean plate.
  • Repeat with the other half of the meat, allowing the skillet to get very hot again first. After flipping, add the first plateful of meat, the reserved liquid, the crushed red pepper and snow peas. Stir over high heat for 30 seconds, and then turn off the heat. Check the seasonings and add salt only if it needs it. The mixture will thicken as it sits. Serve immediately over rice.

Crispy Beef with Carrots and Snow Peas image

This Chinese-inspired dish uses minimal ingredients with so much flavor. Tossing the beef in cornstarch before cooking makes it extra crispy and gives the stir-fry texture. Feel free to use any vegetable you like!

1 cup long-grain rice
12 ounces skirt steak, cut into 1/2-inch slices
1/4 cup soy sauce
1/2 cup plus 1 tablespoon cornstarch
Kosher salt and freshly ground black pepper
1 cup plus 1 tablespoon canola oil
2 tablespoons mirin
1 tablespoon red wine vinegar
1 tablespoon freshly grated ginger
1/2 teaspoon crushed red pepper
3 cloves garlic, grated
1 large carrot, peeled and sliced on a bias
3 ounces snow peas, strings removed, halved crosswise
1 scallion green, thinly sliced on a bias

Steps:

  • For the rice: To a small saucepan, add the rice and 2 cups of water. Place the pan over medium-high heat and bring to a boil. Cover the pan, reduce the heat to low and simmer until the rice is tender, about 10 minutes. Set aside.
  • Meanwhile, combine the skirt steak and 2 tablespoons soy sauce in a medium bowl and toss to combine. Chill for 10 minutes.
  • In a large bowl, mix 1/2 cup cornstarch with salt and pepper to taste. Toss the skirt steak in the cornstarch mixture and coat well. Transfer the coated meat to a fine sieve and knock off any excess cornstarch.
  • Heat 1 cup canola oil in a 12-inch nonstick skillet over medium-high heat until just smoking. Add half of the beef in a single layer and cook without stirring for 2 minutes. Continue to cook, stirring occasionally, until lightly brown on both sides, 2 to 3 minutes longer; transfer to a plate lined with paper towels. Repeat with remaining skirt steak. Carefully discard the hot oil and wipe the skillet clean.
  • To a small bowl, add the remaining 2 tablespoons soy sauce, mirin, red wine vinegar, ginger, crushed red pepper, garlic and remaining 1 tablespoon cornstarch. Mix to combine.
  • Heat the remaining 1 tablespoon oil in the nonstick skillet over medium-high heat. Add the carrots and a pinch of salt and cook, stirring occasionally, until starting to soften, about 2 minutes. Add the snow peas and cook for 2 minutes. Add the garlic-ginger sauce and stir to combine. Cook for 1 minute until the liquid starts to thicken. Add the crispy skirt steak and toss until fully coated. If the sauce looks too thick, you can add 1/4 cup water to thin it out. Serve over rice and garnish with scallion greens.

YANG-YANG CRISPY BEEF

Peanut oil, for frying
1 pound sirloin steak, pounded 1/4-inch thick and finely sliced into strips
3 tablespoons cornstarch
Sea salt
2 tablespoons light soy sauce
1/2 cup sweet chili sauce
1 large orange, zested and juiced
1 head romaine lettuce, shredded
1/2 cucumber, sliced in half, seeds scooped out and thinly sliced into half moons
1 large scallion, thinly sliced on the bias, for garnish
1 to 2 tablespoons rice wine vinegar

Steps:

  • For the beef: Heat a wok over high heat and fill halfway up with peanut oil. Heat the oil to 350 degrees F, or until a cube of bread turns golden brown in 15 seconds and floats to the surface.
  • Place the beef strips in a large bowl and add 2 tablespoons cornstarch. Toss until the beef has absorbed the cornstarch. Add the remaining 1 tablespoon cornstarch right before frying and toss to coat.
  • Fry the beef in 2 to 3 batches until golden, 4 to 5 minutes. Drain on paper towels and season with sea salt.
  • For the sauce: Set another wok or saute pan over high heat and add the soy sauce, chili sauce and orange juice. Bring to a simmer and cook until it becomes thickened and coats the back of a spoon, 1 to 2 minutes. Toss the beef in the sauce to coat thoroughly.
  • Serve over a bed of the shredded lettuce and sliced cucumber that has been sprinkled with rice vinegar. Then garnish with the scallions and orange zest.

1/4 cup soy sauce
2 -4 tablespoons vegetable oil
1 tablespoon cornstarch
1/4 lb snow peas, strings removed (cut into halves or thirds, if desired)
1 tablespoon dry sherry
1 teaspoon sugar
2 carrots, scraped and cut into 2 ",lengths and 1/4 ",julienne strips
1 lb boneless beef sirloin

Steps:

  • Combine soy sauce, cornstarch, sherry, and sugar in a large bowl; add beef and stir to coat.
  • Let stand at least 15 minutes.
  • Heat large skillet or wok over high heat; when hot, add vegetable oil.
  • Stir-fry beef 2 minutes.
  • Add vegetables and stir-fry an additional 1 to 2 minutes or until beef loses its red color.
  • Serve immediately.
