CHEDDAR-PECAN CRISPS



Cheddar-Pecan Crisps image

Lots of holiday treats are sweet. For a change of pace, I fill goodie bags with my cheese crackers. The recipe has a large yield, but you can freeze the dough logs to bake later. -Heather Necessary, Shamokin Dan, Pennsylvania

Number Of Ingredients 7

2 cups unsalted butter, softened
4 cups shredded sharp cheddar cheese
4-1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1 cup finely chopped pecans, toasted

Steps:

  • In a large bowl, cream butter and cheese until light and fluffy. In another bowl, whisk flour, salt, garlic powder and cayenne; gradually beat into creamed mixture. Stir in pecans., Shape into eight 10-in. long logs. Wrap in plastic. Refrigerate 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. Place 1 in. apart on ungreased baking sheets. Bake until edges are crisp and lightly browned, 12-14 minutes. Cool on pans 1 minute. Remove to wire racks to cool. Refrigerate in airtight containers. Freeze option: Place wrapped logs in resealable plastic freezer bags; place in freezer. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand 15 minutes at room temperature before cutting. Bake as directed, increasing time by 1-2 minutes.

This is another recipe I got our of "The Best of the Best from West Virgina" cookbook. It is quick and easy and very good.

1/2 cup butter, softened
6 tablespoons brown sugar
6 tablespoons sugar
1 egg
1/2 teaspoon vanilla
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped pecans

Steps:

  • Cream butter and sugars until light.
  • Beat in egg and vanilla.
  • Sift dry ingredients and stir into batter.
  • Blend until creamy.
  • Stir in pecans.
  • Drop by teaspoon onto ungreased cookie sheet.
  • Bake at 350 F for 10-12 minutes.

An easy drop cookie, and one of my husband's favorites. Use real butter in the recipe.

2 tablespoons butter
1 ½ cups chopped pecans
1 ½ tablespoons white sugar
½ cup unsalted butter
½ cup white sugar
½ cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
1 ⅔ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
  • In a skillet over medium heat toast the pecans with 2 tablespoons of the butter, cooking for about 5 minutes. Sprinkle 1 1/2 tablespoons of the white sugar over the top.
  • Cream 1/2 cup of the butter with the white and brown sugar. Beat in the egg and vanilla. Mix in the flour, baking soda and salt. Stir in the pecan mixture.
  • Drop tablespoonfuls of dough onto the prepared baking sheets. Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes until golden brown. Let cool and devour.

1/2 package (17.3 oz.) Pepperidge Farm® Puff Pastry Sheets (1 sheet)
1/2 cup packed brown sugar
2 tablespoons butter OR margarine, melted
1/3 cup chopped pecans
Confectioners' sugar

Steps:

  • THAW pastry sheet at room temperature 40 min. Preheat oven to 400 degrees F. Mix brown sugar, butter and pecans.
  • UNFOLD pastry on lightly floured surface. Roll into 15"x 12" rectangle. Cut into 20 (3") squares. Press squares into bottoms of 3" muffin-pan cups. Place 1 heaping tsp. pecan mixture in center of each.
  • BAKE 12 minutes or until golden. Remove from pans. Let cool. Sprinkle with confectioners' sugar. Makes 20 pastries.

Raspberries add a dash of color and tartness to the deliciously simple apple crisp, while pecans deliver crunch to the fragrant topping. Although the addition of applejack to the filling is outside the diner world, it punches up the apple flavor and gives the filling a nice kick. Make this dessert on a chilly autumn day, and serve it warm with vanilla ice cream or whipped cream.

1/2 cup firmly packed light brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon salt

1/2 cup pecan halves
2 1/2 pounds Golden Delicious apples (6 or 7 medium apples), peeled, cored, and thinly sliced
1 tablespoon fresh lemon juice
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
3 tablespoons applejack
3 tablespoons unsalted butter, cut into 1/4-inch cubes
1 1/2 cups fresh or frozen raspberries (not in syrup)

Steps:

  • 1. To make the pecan topping, place the flour, brown sugar, cinnamon, and salt in a food processor and pulse until combined. Add the butter pieces and pulse a few times, just until the mixture resembles coarse meal. Add the pecans and pulse just until they are coarsely chopped.
  • 2. Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-by-13-inch glass baking dish.
  • 3. To make the fruit filling, in a large bowl, toss the apple slices with the lemon juice. Add the granulated sugar, flour, and cinnamon and stir to combine. Add the apple brandy and butter cubes and toss until combined. Gently toss in the raspberries. Evenly spread the apple mixture in the prepared pan. Sprinkle the pecan topping evenly over the filling.
  • 4. Bake the crisp for 40 minutes, or until the fruit is bubbling and the top is browned. Serve warm.

1 tablespoon sugar
2/3 cup old-fashioned oats

1/3 cup chopped pecans
SAUCE:
1/4 cup sugar
2 teaspoons cornstarch
1/2 cup water
1 large egg yolk, beaten
1 tablespoon butter
1 tablespoon lemon juice
1/4 teaspoon grated lemon zest

Steps:

  • Place pears in a greased 8-in. cast-iron skillet or 8-in. square baking dish; sprinkle with sugar. In a small bowl, combine the oats, flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs; stir in pecans. Sprinkle over pears. Bake at 350° for 30-35 minutes or until bubbly., Meanwhile, in a small saucepan, combine the sugar, cornstarch and water. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. , Remove from the heat. Stir a small amount of hot mixture into egg yolk; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat; stir in the butter, lemon juice and zest. Serve with warm pear crisp.

I adapted an old recipe to produce these lightly sweet cookies. They have a wonderful cinnamon and nutmeg flavor that makes them a favorite at our house for the holidays.

1 ½ cups all-purpose flour
¼ cup packed brown sugar
2 tablespoons sugar
½ teaspoon salt
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
.666 cup cold butter (no substitutes)
2 tablespoons maple syrup
½ cup chopped pecans
1 egg yolk
1 teaspoon water
1 ½ teaspoons sugar
½ teaspoon ground cinnamon

Steps:

  • In a bowl, combine the first six ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in syrup. Add pecans. Shape into a 12-in. roll; wrap in plastic wrap. Refrigerate for 4 hours or until firm. Unwrap and cut into 1/4-in. slices. Place 1 in. apart on ungreased baking sheets.
  • For glaze, beat egg yolk and water. For topping, combine sugar and cinnamon. Brush glaze over cookies and sprinkle with cinnamon-sugar. Bake at 325 degrees F for 20-25 minutes or until golden brown. Remove to wire racks to cool.

2 1/2 lbs apples, peeled, quartered, cored, and sliced to yield about 6 cups (about 6 medium, Granny Smith works well)
2 -3 tablespoons sugar
1/4 teaspoon ground cinnamon
1 tablespoon all-purpose flour
1 cup all-purpose flour
5 tablespoons brown sugar
2 tablespoons sugar
1/2 cup finely chopped nuts (I like pecans)
4 ounces unsalted butter, cut into small pieces and chilled

Steps:

  • Preheat oven to 350.
  • To make the filling--In a 9-inch pie pan that's 2 inches deep (or a similar baking pan), toss the apples with the sugar to taste, cinnamon, and flour.
  • To make the topping--In a medium bowl, mix together all the topping ingredients with your fingers or a pastry cutter until small pebbly pieces of butter are distributed throughout the mixture.
  • Sprinkle the entire mixture over the apples.
  • Bake until the topping is golden and the fruit is bubbling and tender, about 1 hour and 15 minute.
  • for a large crisp and 1 hour for individual crisps.
  • Cool slightly before serving.
  • You can make individual crisps by dividing the filling and topping among six ramekins or individual gratin dishes.
  • Serve with heavy cream or a scoop of vanilla ice cream.

Blend at low speed until moistened; beat 3 minutes at medium speed. By hand or with the dough hook, gradually mix in remaining flour to make a stiff batter.   • Prepare Topping: Combine 3/4 cup sugar, pecans, brown sugar and cinnamon; mix well. Pour in to a rimmed baking tray lined with parchment paper or a siplat.
  • Stir down batter. Drop batter by tablespoons into sugar mixture; toss lightly to coat. Flatten each piece to a 4 or 5-inch circle, 1/8-inch thick, pressing sugar mixture into both sides. Place on greased foil-lined cookie sheets.
