CAJUN BLACKENED FISH {+ VIDEO}

"Blackening" is a classic Cajun cooking technique which involves searing spice coated seafood and meats in a hot skillet so the rub turns black (but not burnt). I think the black crust and white juicy flesh inside looks so stunning! I served this with a simple Corn Butter Rice Salad - refer to the Notes for the recipe. 1 tbsp paprika
1 tsp ground cumin
1 tsp onion powder
1 tsp garlic powder
1 tsp dried thyme
1 tsp dry mustard
3/4 tsp salt ((table salt))
1/8 tsp cayenne pepper ((or to taste))
Good grind of black pepper
4 firm white fish fillets ((about 150g/5oz each) (Note 1))
2 tbsp extra virgin olive oil

Steps:

  • Combine Spice Mix in a shallow dish and mix.
  • Coat both sides of the fish fillets with the Spice Mix, shaking off excess.
  • Heat oil in a large heavy based skillet over medium high heat.
  • Add fish and cook until the rub turns black, then flip and cook the other side until the fish is cooked to your taste. (Note 2)
  • Serve immediately. I served mine with a buttery Corn Rice Salad - refer to the Notes for the recipe.

Gluten-Free Crispy Cajun Fish Fillets in the Air Fryer image

Cajun fish fillets made in the air fryer pack just enough heat and are perfectly crispy using gluten-free panko bread crumbs. I serve these as sandwiches on a gluten-free bun with lettuce, tomatoes, tartar sauce, and Cheddar cheese slices. Alternatively, you can skip the bun and serve in lettuce wraps or with a salad.

½ cup mayonnaise
2 ½ teaspoons Cajun seasoning
1 cup gluten-free panko bread crumbs
1 (1 pound) fillet cod, cut into 4 pieces
cooking spray

Steps:

  • Combine mayonnaise and Cajun seasoning in a small bowl. Place bread crumbs on a plate.
  • Spread Cajun mayonnaise on both sides of fish fillets with a small spatula or butter knife. Coat each fillet, one at a time, with bread crumbs. Lightly spray both sides of breaded fillets with cooking spray and transfer 2 fillets to each air fryer tray; do not overcrowd.
  • Turn an air fryer to the Roast setting (375 degrees F (190 degrees C) according to manufacturer's instructions and set timer to 14 minutes. Rotate trays at 7 minutes. Fish should flake easily with a fork.
  • Carefully remove fillets from the trays and serve.

  • HEAT OVEN TO 425F/217C. Line a pan with parchment paper and place a grill/rack on top. Spray rack with oil for easy clean up.
  • TOAST BREADCRUMBS: Pan fry Panko crumbs with butter, lemon zest and Cajun seasoning over medium heat in a large pan for about 5 minutes or until golden brown, stirring occasionally. Be careful not to burn them. To toast crumbs in oven instead: place crumbs on pan and bake in heated oven for 5-7 minutes, shaking half way through, until golden brown.
  • COAT FISH WITH MAYO, THEN PANKO: Stir mayo mixture ingredients together and brush on fish in a thin layer on both sides. Sprinkle one side lightly with salt and pepper (skip if cajun seasoning is salty). Then dip pieces of fish in crumbs, patting to help adhere crumbs to fish. Place on the rack on top of pan. Sprinkle any remaining crumbs over fish.
  • BAKE: Bake fish in middle rack of oven for 7-10 minutes, depending on thickness of fish. One inch (2.5cm) thick fish will take about 10 minutes. Half inch, about 7-8 minutes. An instant thermometer will read 135F/57C. The fish should flake easily and be slightly translucent (not dry). Serve with lemon wedges and your preferred dipping sauce (note 3).
