CLASSIC FRENCH PEACH MELBA



Classic French Peach Melba image

The classic Peach Melba recipe is a delightful dessert from the legendary Escoffier for Dame Nellie Melba, which you can easily make at home.

6 ripe peaches (peeled and pitted)
1 1/4 cups sugar (granulated)
2 cups water
3/4 teaspoon vanilla extract
For the Sauce:
1 12-oz. package raspberries (frozen unsweetened, thawed in a bowl)
1/3 cup sugar (granulated)
1/4 cup water
1 1/2 teaspoons lemon juice
1/4 teaspoon lemon zest
1 container of vanilla ice cream
Sundae cups or ice cream dishes (chilled in the freezer)

Steps:

  • Using a deep, wide skillet, heat 1 1/4 cups sugar and 2 cups water to boiling.
  • After sugar dissolves, add peaches in a single layer. Reduce heat to just under simmering and poach, covered, for 5 minutes.
  • Using tongs or a slotted spoon, gently turn all the peaches over, cover, and continue poaching for 3 minutes.
  • Remove skillet from heat and allow peaches to sit in hot syrup for an additional 4 minutes.
  • Stir in vanilla extract. Chill peaches in syrup for at least 1 hour.
  • Push raspberries and juice from thawing, through a fine-mesh sieve, and then discard seeds and solids; set aside. Bring 1/3 cup sugar and 1/4 cup water to a boil for 2 minutes and remove from heat, stir in lemon juice and zest . Stir simple syrup (sugar mixture) into a seedless raspberry puree and chill for 30 minutes.
  • Layer peaches and raspberries over ice cream in frosted dishes and serve.

4 large egg yolks, slightly beaten
1 tsp. fresh lemon juice
1/16 tsps. salt
1/2 cup frozen extra creamy whipped topping, thawed
Crepe:
1 (28 oz.) can sliced peaches
6 (9-inch) ready-to-use crepes
or 3 medium peaches, sliced
Vanilla ice cream with caramel swirl
1 (12 oz.) jar Smucker's® Orchard's Finest® Northwest Triple Berry Preserves, warmed
1/3 cup sliced almonds, toasted*

Steps:

  • MELT butter in medium saucepan over medium heat. Whisk in preserves, egg yolks, lemon juice and salt. Cook 6 to 8 minutes, stirring constantly just until it begins to thicken. Remove from heat. Cool to room temperature. Blend in whipped topping with an electric mixer at medium speed. Chill, covered, until ready to assemble crepes.
  • SPREAD 1/3 cup curd over each crepe. Cut each crepe in half. Fold crepe in half. Place each crepe on a dessert plate. Top with 2 or 3 peach slices. Serve with a scoop of ice cream drizzled with warm triple berry preserves. Garnish with almonds.
  • TO TOAST NUTS: Place nuts in dry skillet. Cook over medium heat, shaking pan until nuts are lightly browned. Remove from pan immediately to avoid over-browning.

2 eggs
½ cup milk
½ cup water
¼ teaspoon salt
2 tablespoons butter, melted

Steps:

  • In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  • Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

3 cups water
3 1/2 cups sugar
1 vanilla pod, split lengthwise
2 tablespoons lemon juice
8 peaches
3 cups raspberries
1/4 cup confectioners' sugar
1 tablespoon lemon juice
1 large tub vanilla ice

Steps:

  • Put the water, sugar, lemon juice, and vanilla pod into a wide saucepan and heat gently to dissolve the sugar. Bring the pan to the boil and let it bubble away for about 5 minutes, then turn the heat down to a fast simmer.
  • Cut the peaches in half, and if the stones come out easily then remove them, if not then you can get them out later. Poach the peach halves in the sugar syrup for about 2 to 3 minutes on each side depending on the ripeness of the fruit. Test the cut side with the sharp point of a knife to see if they are soft, and then remove them to a plate with a slotted spoon.
  • When all the peaches are poached, peel off their skins and let them cool (then you can remove any remaining stones). If you are making them a day in advance then let the poaching syrup cool and then pour into a dish with the peaches. Otherwise just bag up the syrup and freeze it for the next time you poach peaches.
  • To make the raspberry sauce, liquidize the raspberries, confectioners' sugar, and lemon juice in a blender or a food processor. Sieve to remove the pits and pour the puree into a jug.
  • To assemble the Peach Melba, allow 2 peach halves per person and sit them on each plate alongside a scoop or 2 of ice cream. Spoon the raspberry sauce over each.

1 lemon, zested
12 ripe, firm apricots, pitted, or 3 peaches, halved and pitted
1/2 pint vanilla ice cream
1 pound raspberries
1 cup sugar
2 tablespoon lemon juice
2 cups heavy cream, whipped
1 cup sliced almonds, toasted

Steps:

  • In a medium saucepan, prepare syrup. Bring the sugar, water, lemon juice and zest to a boil. Lower to a simmer and cook for 10 minutes.
  • Poach apricots or peaches until tender. (Tip: if you use peaches, remove the skin.) Let them cool in the syrup.
  • To prepare raspberry sauce, in a blender, combine the raspberries, sugar and lemon juice. Process to a puree.
  • Remove fruits from syrup.
  • To serve: In a small bowl, place a scoop of vanilla ice cream, place the fruit on top, and cover with raspberry sauce. Garnish with whipped cream and toasted almonds.

1 cup milk
4 large eggs
1 cup all-purpose flour
2 tablespoons sugar
2 tablespoons butter, melted
1 teaspoon vanilla extract
FILLING:
3/4 cup sugar
2 tablespoons cornstarch
1 cup water
8 medium peaches, peeled and thinly sliced (about 4-1/2 cups), divided
2 tablespoons butter
1/2 teaspoon almond extract
Whipped cream and ground nutmeg, optional

Steps:

  • In a blender, combine the milk, eggs, flour, sugar, butter and vanilla. Cover and process until smooth. Cover and refrigerate for 1 hour., Meanwhile, in a large saucepan, combine sugar and cornstarch. Gradually whisk in water until smooth. Stir in 2 cups peaches and butter. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir in almond extract and remaining peaches. Cover and refrigerate., Heat a lightly greased 8-in. nonstick skillet over medium heat; pour about 2 tablespoons batter into the center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. When cool, stack crepes with waxed paper or paper towels in between., Spoon filling over crepes; roll up. Top with whipped cream and nutmeg if desired.

6 medium firm-ripe peaches (2 1/4 lb)
1 1/3 cups sugar
2 cups water
1 (1-inch) piece vanilla bean
For raspberry sauce
1 (12-oz) package frozen raspberries (not in syrup), thawed
1/2 cup sugar
1/3 cup water
2 teaspoons fresh lemon juice
Accompaniment: 2 pt superpremium vanilla ice cream

Steps:

  • Poach peaches:
  • Cut a shallow X in bottom of each peach with a sharp paring knife and immerse fruit in a 4-quart heavy pot (preferably wide) of boiling water 30 seconds, then transfer with a slotted spoon to a bowl of ice and cold water to stop cooking. Transfer peaches to a cutting board and peel, starting with cut end, then cut in half, discarding pits.
  • Combine sugar and water in cleaned pot. Halve vanilla bean lengthwise with a paring knife and scrape seeds into pot, then add pod and bring mixture to a boil, stirring until sugar is dissolved. Add peaches, pitted sides down, to sugar syrup, then reduce heat and poach, covered, at a bare simmer 6 minutes. Turn peaches over and continue to poach, covered, until tender, 5 to 6 minutes more.
  • Cool peaches in poaching liquid in pot, uncovered, 1 to 1 1/2 hours.
  • Make raspberry sauce while peaches cool:
  • Force raspberries through a fine-mesh sieve into a bowl, pressing hard on solids.
  • Combine sugar and water in a small heavy saucepan. Cover pan (so condensation will wash any sugar crystals down side of pan) and bring to a boil, then remove lid and boil 2 minutes.
  • Immediately stir sugar syrup into raspberry purée and cool to room temperature, about 1 hour. Stir in lemon juice. 3Serve peaches over ice cream and drizzled with sauce.

1 (8 ounce) package cream cheese, softened
1 cup powdered sugar
1 teaspoon almond extract
1/2 cup seedless raspberry jam
1 (15 1/4 ounce) can peach slices in heavy syrup, drained
1 (7 ounce) can whipped cream
2 eggs
1 cup milk
2 tablespoons vegetable oil
1 cup buttermilk pancake mix (just add water type)
nonstick cooking spray

Steps:

  • Quick Crepe Batter:
  • Place the eggs, milk and oil into blender container, cover and process by pulsing several times.
  • Add pancake mix and process until smooth. Scrape down sides of the container with a spatula; blend until smooth.
  • Spray a 10" non-stick skillet with the non-stick spray.
  • Heat the pan over medium-high heat. Remove the pan from the heat and pour 3-4 tablespoons crepe batter into the center of the pan, about 1/4 cup.
  • Quickly rotate the pan tilting to coat the surface.
  • Cook until the crepe's center and edges appear dry and lightly browned. Carefully turn the crepe over and cook the other side.
  • Turn out the crepe onto a plate; cover to keep warm if desired.
  • Repeat with remaining batter.
  • Filling:.
  • Combine cream cheese, powdered sugar and almond extract in a small bowl with hand mixer until smooth.
  • Assembly:.
  • Place a crepe on the serving plate, spread with two tablespoons of the cream cheese mixture; repeat with the next 6 crepes.
  • Top off the crepe cake with the last remaining crepe. Cover and refrigerate.
  • Bring to room temperature just before serving.
  • Arrange peaches in a spoke-like fashion in the center; garnish with whipped cream along the outside edge. You could use fesh made whipped cream.
  • Drizzle with raspberry jam.
  • Cut into 6 or 8 wedges and serve with additional whipped cream and raspberry sauce.

2 eggs
2 tablespoons melted butter
1 1/4 cups milk
2 tablespoons brandy or orange liqueur
1 tablespoon sugar
1 cup sifted cake flour
1/2 teaspoon salt
Filling and Sauce:
8 dessert crepes
1/2 cup whipping cream
1/4 cup sugar
1/2 cup ricotta cheese
1 cup fresh raspberries
1/4 cup sugar
2 tablespoons triple sec, kirsch, or orange juice
2-3 fresh peaches, peeled and sliced

Steps:

  • Crepes: 1. Place ingredients for crepes in blender or food processor in the order listed. Blend at high speed for 20 to 30 seconds. Scrape down sides of the container. Blend a few more seconds. 2. Spray a crepe pan with no stick spray before heating. Before cooking first crepe, put 1/2 teaspoon butter into pan. (You have reached the correct temperature when the batter sizzles slightly when poured into the pan and the first side cooks in approximately 1 minute. 3. Crepes should be pale in color, not dark brown. Place 2 or 3 Tablespoons of batter into a 6- to 7-inch crepe pan. Quickly tilt the pan so the batter covers the bottom of the pan entirely. Turn the crepe when it begins to set and crisp around the edges. Loosen around the edge with a spatula and flip it over. Cook a few more seconds and slide the crepe out of the pan onto a plate. 4. Stack them on top of each other until they are all made. Set aside crepes. Filling: 1. Whip the cream until soft peaks form. Stir in 1/4 cup of sugar and beat until stiff. Fold whipped cream into ricotta cheese. 2. Make sauce now. When crepes are ready to fill, add peaches to cheese mixture and spoon into crepes. Place filled crepes on serving dishes. Sauce: 1. Pour fresh raspberries in blender strain to remove seeds. Add 1/3 cup sugar and Triple Sec. Heat sauce just before serving. Spoon warm raspberry sauce over crepes.
