CREOLE POT ROAST

Number Of Ingredients 12

3 strips smoked bacon cut crosswise into small pieces
2.5 lb. chuck roast cut into large chunks
1 yellow onion, quartered and sliced, retain one unsliced quarter and put in 2 cloves
3 shallots, sliced thinly
½ lb. carrots, cut into chunks
½ lb. turnips, peeled and quartered
1 marrow bone (or short rib)
¼ cup dark rum (or cognac)
3 cups red wine
4 or 5 gratings of nutmeg
1 head garlic, sliced horizontally
A bouquet garni - 3 sprigs thyme & parsley, one bay leaf, 1 sprig rosemary, one celery stalk with leaves tied together with string or in cheesecloth.

Steps:

  • Place marrow bone in a pan and cover with water. Boil for about 5 or 10 minutes, just until you see a thick layer of froth on the top. Remove the bone, pour off the water and rinse the scum off the outside. Don't worry about flavor loss. This short boil only renders out the scum. If you are using a short rib just place it on a baking sheet or skillet in a 400 degree oven until somewhat browned.
  • In a large dutch oven fry the bacon until brown then set aside.
  • Cut the beef into large chunks, dry off, then brown on all sides in the bacon fat. If there isn't enough fat in the pan add a tablespoon or two of vegetable oil. Remove and set aside, then pour off most of the fat.
  • Put in all the sliced onions and cook over a medium heat for about 5 minutes, then stir in carrots and turnips and cook for a couple of minutes.
  • Pour in the rum and stir it while boiling until it picks up the browned bacon and beef bits from the bottom.
  • When most of it is boiled off stir in the cooked bacon bits, place the marrow bone in the center, put the beef chunks over & around it, and pour the wine over it. The marrow bone should be completely covered.
  • Place the herbs, garlic half, onion quarter with cloves, on top for easy removal when the dish is finished.
  • When the wine just comes to a boil, put foil over the pot, cover it and place in a 325 degree oven for about 2 hours.
  • Check after one hour to make sure there is still liquid to cover. If not add some water.
  • When the meat is fork tender remove and dispose of the herbs, garlic half and clove studded onion quarter. Remove beef chunks to a covered dish.
  • Strain the sauce and adjust the seasonings. If the sauce is too thin, make a paste of teaspoon of cornstarch and 2 tsps. of water and whisk it slowly into the cooled liquid before bringing it back to a boil. Add a pat of butter before serving.

1 tablespoon olive oil
1 (12 ounce) can beer
1 cup beef broth
1/2 cup onion flakes
4 garlic cloves, minced and crushed
1 teaspoon barbecue seasoning
1 tablespoon creole seasoning
1/2 teaspoon dry mustard
1/2 teaspoon hot paprika
1/2 teaspoon red pepper seasoning salt
1 teaspoon Worcestershire sauce
1/2 cup Heinz 57 steak sauce
1 (6 ounce) can tomato paste
1 tablespoon hot sauce
1/4 teaspoon cayenne
1 (4 ounce) can mushrooms
2 (2 1/2 ounce) cans sliced black olives
1 tablespoon cornstarch
2 tablespoons parmesan cheese

Steps:

  • In heavy roasting pan, brown roast in oil on all sides.
  • Add to pan beer, broth, onion, garlic, seasonings, mustard, paprika, seasoned salt, worcestershire, 57 sauce, tomato paste, hot sauce, and cayenne.
  • Bring to a simmer and cover for 2 hours.
  • Add mushrooms and olives, simmering covered for another hour.
  • Remove roast from pan.
  • Stir in cornstarch and parmesan, simmering until thickened.
  • Slice roast against grain and return to pan.
  • Simmer another 10 minutes.

8 oz. unsalted butter (2 sticks)
3/4 c. all purpose flour
1 c. chopped yellow onion
1/2 tsp. celery seeds
1 Tbsp. minced garlic
2 Bay leaves
1/4 c. tomato paste
1/2 c. dry sherry
5 c. fish or shrimp stock
1 (14.5 oz.) diced tomatoes with juice
1 Tbsp. sugar
1/2 tsp. Tabasco sauce
1/2 tsp. crushed red pepper
24 med. shrimp, peeled and deveined
36 shucked oysters, drained
3 cans lump crab meat, drained
6 oz. heavy whipping cream
1 Tbsp. Creole Seasoning (recipe to follow)
3 c. cooked white rice

Steps:

  • In a Dutch oven or large heavy pot, heat half of the butter over medium-high heat. Add the flour, reduce the heat to medium, and cook, stirring constantly with a large wooden spoon, to make a thick roux almost the color of milk chocolate, 15 to 20 minutes. Add the onions and celery seed, cook, stirring, for 1 minute. Add the garlic and bay leaves, and cook, stirring, for 30 seconds. Place the tomato paste in a small bowl and whisk in the sherry to blend. Add to the pot, and cook, stirring, for 30 seconds. Add the stock, and whisk to blend. Add the tomatoes and their juices, the sugar, salt, black pepper, and red pepper, and cook, stirring, occasionally, for 20 to 25 minutes. Add 2 cups of the court-bouillon and bring to a simmer. Season the shrimp, crab meat, and oysters with Creole Seasoning. Add the shrimp and cook for 3 minutes. Add the oysters and cook until the oysters curl, 1 to 2 minutes. Add heavy whipping cream and boil for 1 minute. Add last 4 oz. of butter. Divide equally between 2 large soup bowls, and repeat with the remaining ingredients in 2 batches. Spoon 1/2 cup of rice into the center of each bowl and serve immediately. Creole Seasoning: 2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried leaf oregano 1 tablespoon dried thyme Combine all ingredients thoroughly and store in an airtight jar or container. 4 boneless skinless chicken breast halves (1-1/2 pounds), cut into 1-inch cubes
1/2 teaspoon salt, divided
1/4 teaspoon pepper
1 tablespoon vegetable oil
1 cup finely chopped onion
1/2 cup finely sliced celery
1/2 cup diced green pepper
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup water
1-1/2 teaspoons paprika
Dash cayenne pepper
1 bay leaf
2 teaspoons cornstarch
1 tablespoon cold water
Hot cooked rice, optional

Steps:

  • Sprinkle chicken with 1/4 teaspoon salt and pepper. In a large skillet over medium heat, brown chicken in oil; remove and set aside. In the same skillet, saute onion, celery, green pepper and garlic until tender. Stir in tomatoes, water, paprika, remaining 1/4 teaspoon salt, cayenne pepper and bay leaf; bring to a boil. Reduce heat; cover and simmer for 10 minutes. , Add chicken. Whisk cornstarch and cold water until smooth; stir into chicken mixture and bring to a boil. Simmer, uncovered, until chicken is tender, 10-15 minutes. Remove bay leaf before serving. If desired, serve with rice.

CROWN ROAST OF PORK WITH DIRTY RICE STUFFING AND CREOLE MUSTARD SAUCE

2 teaspoons dried thyme
2 teaspoons salt
1 tablespoons vegetable oil
a 12-rib crown roast of fresh pork (about 6 3/4 pounds)
dirty rice stuffing
1/4 cup dry white wine
1/4 cup heavy cream
1/3 cup Creole mustard (available at many specialty foods shops)
flat-leafed parsley sprigs for garnish
cherry tomatoes for garnish

Steps:

  • In a small bowl combine well the thyme, the salt, pepper to taste, and the oil and rub the mixture all over the pork, patted dry. Arrange the pork on an oiled round of heavy-duty foil slightly larger than the bottom of the pork in the middle of a lightly oiled shallow roasting pan and fill the center of the crown with some of the stuffing, mounding it. Roast the stuffed pork, the stuffing covered with another oiled round of foil, in a preheated 450°F. oven for 20 minutes, reduce the heat to 325°F., and roast the stuffed pork for 2 1/4 hours more, or until a meat thermometer registers 160°F., or for 2 1/2 hours more, or until a meat thermometer registers 170°F., for well-done meat. In a 2-quart shallow baking dish bake the remaining stuffing in the 325°F. oven during the last 30 minutes of the pork'1s roasting time. Transfer the pork to a platter and let it stand for 15 minutes.
  • While the pork is standing add the wine to the roasting pan, deglaze the pan over moderately high heat, scraping up the brown bits, and strain the mixture through a fine sieve into a small saucepan. Add 1/2 cup water and boil the mixture until it is reduced to about 2/3 cup. Add the cream, boil the mixture, stirring, until it is reduced to about 3/4 cup, and whisk in the mustard and salt and pepper to taste. Discard the foil from the stuffing, arrange the parsley and the tomatoes decoratively around the pork, and serve the pork with the mustard sauce and the remaining stuffing.

2 cups sour cream
1 small onion, chopped

1 package (30 ounces) frozen shredded hash brown potatoes, thawed
2 cups shredded cheddar cheese
1-1/2 pounds ground beef
1 cup ketchup
1/4 cup packed brown sugar
3 teaspoons Creole seasoning
1 teaspoon garlic salt
1 teaspoon dried oregano
1/4 teaspoon cayenne pepper
3/4 cup crushed cornflakes
1/4 cup butter, melted

Steps:

  • Preheat oven to 350°. In a large bowl, combine soup, sour cream, onion and pepper. Stir in potatoes and cheese; transfer to a greased 3-qt. baking dish., In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in ketchup, brown sugar and seasonings; spread over potatoes. Combine cornflakes and butter; sprinkle over top. Bake, uncovered, 40-45 minutes or until bubbly.

We're quite active in our church and find ourselves inviting friends and neighbors over to share supper with us. This slightly spicy pork roast appeals to all palates.

1 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon each chili powder, paprika, pepper and ground coriander
Pinch each ground cloves and garlic powder
1/4 cup finely chopped green pepper
1/4 cup finely chopped onion
1 tablespoon butter
1 can (4 ounces) mushroom stems and pieces, drained
1 can (6 ounces) tomato paste, divided
1 boneless pork shoulder butt roast (2 to 3 pounds)
2 tablespoons all-purpose flour

Steps:

  • Combine all of the seasonings; set aside 1/2 teaspoon. In a saucepan over low heat, saute green pepper, onion and remaining seasoning mixture in butter until vegetables are tender. Stir in mushrooms and half the tomato paste. Spread mixture over the roast; place in shallow baking pan. , Bake, uncovered, at 325° for 2-1/2 to 3 hours or until a thermometer reads 160°-170°. Place roast on a serving platter; keep warm. , Transfer all but 2 tablespoons drippings to a measuring cup. Add enough water to measure 1-1/2 cups; set aside. Stir flour into drippings in pan. Gradually blend the 1-1/2 cups of liquid into flour mixture, stirring until smooth. Add reserved seasoning mixture and remaining tomato paste. Bring to a boil over medium heat; boil for 2 minutes, stirring constantly. Serve with the roast.
