I've found a fast and fantastic way to turn leftover rice into a spectacular side dish. I spice it up with Creole seasoning and pepper to give it a boost of flavor, then sprinkle it with paprika for color. Rest assured that no one will figure out the zippy combination is a "second-day dish".

Steps:

  • In a small saucepan, melt butter; add Creole seasoning and pepper. Cook over medium heat for 3 minutes. Stir in rice. Cover and heat through.

2 medium green peppers, chopped
1 large onion, thinly sliced
2 celery ribs, chopped
4 garlic cloves, minced
4 teaspoons canola oil, divided
1/2 pound fresh mushrooms, sliced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1/2 cup chicken broth
2 tablespoons minced fresh oregano or 2 teaspoons dried oregano
2 tablespoons lemon juice
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper flakes
2 pounds boneless skinless chicken breasts, cubed
Hot cooked rice
Minced fresh parsley, optional

Steps:

  • In a large saucepan, saute the green peppers, onion, celery and garlic in 2 teaspoons oil until tender. Add mushrooms; cook until liquid has evaporated. Stir in the tomatoes, broth, oregano, lemon juice, basil and spices. Bring to a boil. Reduce heat; cover and simmer 5-10 minutes or until slightly thickened and flavors are blended., Meanwhile, in a Dutch oven, saute chicken in remaining oil in batches until no longer pink. Return chicken to pan; stir in sauce. Heat through, stirring to loosen browned bits from pan. Serve over rice; garnish with parsley if desired. Freeze option: Freeze cooled chicken and sauce mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little broth or water if necessary.

This version of dirty rice can be made with your favorite meatless ground burger or veggie ground burger. Cooking time does not include the brown rice which should be made according to box instructions.

4 tablespoons all-purpose flour
1 medium onion, chopped
2 stalks celery, minced
2 medium green bell peppers, minced
3 cups mushrooms, minced
3 tablespoons vegetable oil
3 teaspoons vegetable oil
2 cups veggie burgers (or other meatless burgers)
1 1/2 cups water
1/2 cup fresh parsley, minced
4 cups cooked brown rice
2 teaspoons file powder
2 teaspoons salt
1 teaspoon paprika
1/2 teaspoon cayenne

Steps:

  • In a dry skillet, brown the flour, stirring constantly, until light brown in color (patience pays off in flavor later).
  • In a separate skillet, saute the onion, celery and bell pepper, in 3 tablespoons of oil for 10 minutes, stirring constantly. Add to the flour and mix well.
  • Brown the mushrooms in 3 teaspoons of oil. Add the veggie burger crumbles and brown well with the mushrooms for 10 minutes. Add to the onion and flour mixture and saute for another 10 minutes. Add the water and simmer for 10 minutes, stirring often. The mixture should be fairly thick. Add the remaining ingredients, mix well.
  • Serve with hot Tabasco hot sauce.

VEGAN SLOW COOKER RED BEANS AND RICE



Vegan Slow Cooker Red Beans and Rice image

This vegan version of New Orleans-style red beans and rice omits the sausage and ham hock, and instead adds smoked paprika, miso and soy sauce for a savory, rounded flavor. If you have a favorite Cajun or Creole spice mixture on hand, use 1 heaping tablespoon of it in place of the sage, cayenne, garlic, onion powders and sweet paprika, and taste before adding any salt, as seasoning blends contain a varying amount of sodium. These vegan beans are not as creamy as the ones made with pork, so smash a few against the side of the pot before serving to thicken the liquid. Serve with hot sauce, preferably a vinegary, cayenne-based Louisiana-style sauce like Crystal, Louisiana brand or Tabasco.

Steps:

  • Heat the oil in a large (12-inch) skillet over medium. Add the onion, season with salt, and cook, stirring, until the onion is limp and translucent, 6 to 8 minutes. Add the celery and bell pepper and cook, stirring occasionally, until softened, 5 to 8 minutes. Add the chopped garlic, miso paste, smoked paprika, sweet paprika, onion powder, garlic powder, cayenne and sage, if using. Grind in a generous amount of black pepper and add 3/4 teaspoon salt. Stir to combine until the miso has dissolved, then remove from the heat and scrape the mixture into a 6- to 8-quart slow cooker. Add the beans, bay leaves, thyme and 6 cups water. Cook on high until the beans are very tender and creamy, about 7 hours.
  • If your beans are not bubbling at all by the time they are done cooking, turn the heat up to high and let them bubble for about 10 minutes, to make them easier to digest.
  • Before serving, add the soy sauce, and season to taste with salt and cayenne. Using a fork or the back of a spoon, mash some of the beans against the side of the slow cooker to make the mixture slightly creamy. (It will continue to thicken as it sits.) Discard the bay leaves and thyme sprigs. Top the beans with hot cooked rice and scallions; serve with hot sauce.

An easy spicy dish. Adjust the spices to your needs - less Creole Seasoning if you like it mild, add chili powder or cayenne pepper for more kick! This is also good with salsa on top. You can substitute 1/2 pound dried black-eyed peas, cooked for the canned black-eyed peas if you wish.

This recipe was handed down from my grandmother. It is a family favorite. A great way to use those garden vegetables. To save time, I cut corn from the cob while other vegetables are cooking.

½ pound bacon
2 tablespoons bacon grease
½ cup finely chopped onion
½ cup finely chopped green bell pepper
2 cups chopped peeled tomatoes
2 cups chopped fresh green beans
¾ teaspoon salt
⅛ teaspoon pepper
1 ½ cups fresh corn kernels, cut from the cob
3 tablespoons all-purpose flour
3 tablespoons water
1 cup evaporated milk

Steps:

  • In a large skillet over medium heat, cook bacon until evenly brown. Set aside, reserving 2 tablespoons bacon fat. Saute onion and green pepper in bacon fat until tender. Stir in tomatoes, green beans, salt, and pepper. Cover, and simmer for 15 minutes. Stir in corn, cover, and continue cooking until vegetables are tender, about 20 minutes.
  • In a small bowl, mix together flour and water. Stir into vegetables, and cook until thickened, about 2 minutes. Remove from heat, and stir in evaporated milk. Crumble bacon over top. Serve immediately.

This recipe is an easy way to make a quick meal and can be coverted to non-vegetarian quick simply. It has all the good things in it and all the tastes one likes when thinking of "creole" food. You can make it hotter by adding more of the creole seasoning and the cayenne pepper. I serve it with a tossed salad and garlic bread sticks. My meat eaters even like it because the sausage substitute I use meets the taste and smell requirements for sausage. Cooking time does not include the time to steam the rice

1 tablespoon olive oil
1 medium onion, chopped
1/2 cup celery, sliced
1/2 cup green pepper, diced
1 garlic clove, minced (I use two or three as we love garlic)
1 (16 ounce) package gimme lean brand mock sausage (or you can use your favorite brand of mock sausage)
1 (10 ounce) package frozen peas (thaw slightly)
1 teaspoon onion powder
1 teaspoon garlic powder
1 1/2 teaspoons creole seasoning
1/4 teaspoon cayenne pepper
1 (15 ounce) can diced tomatoes
3/4 cup crushed tomatoes (I buy a 28 oz can and use 3/4 c from it)
1 (11 ounce) can green giant canned corn niblets, drained (this is the same as a 15.1/4 oz of regular Green Giant corn)
1 cup okra, cooked (just until tender)
3 cups brown rice, steamed

Steps:

  • Saute onions, celery, green pepper, garlic for about 3 minutes.
  • Crumble in the mock sausage and break up like you would hamburger. Stir well and cook for about 2 minutes.
  • Add Peas, corn and cooked okra. Stir well.
  • Add all seasonings.
  • Add the crushed tomatoes and the diced tomatoes (with liquid).
  • Cook for about 3 minutes on med. low heat.
  • Stir in the rice gently and let heat through.
  • Serve with a salad and garlic bread sticks.

  • In a 4 quart sauce pot bring the water to a boil. Add the rice, lentils, bayleaf and 1/2 tsp salt. Bring back to a boil, turn heat down to medium and lid, leaving lid slightly ajar. Simmer for 30-35 minutes or until the rice and lentils are tender. Drain, reserving at least 1 1/4 C (281g) of cooking liquid (it will be used later to make the sauce). Place the rice and lentils back in their cooking pot, lid and set aside off heat.
  • *A note about the veggies. Be sure they're diced small, otherwise they'll be crunchyish at the end of cooking. We're looking for them to be soft. In a large, heavy saucepan with 3" sides (7.5cm), add the oil and heat until shimmering. Add the bell pepper, onion and celery. Turn the heat to low. Stir. Cook, stirring occasionally for about 12-15 minutes. The veggies are done when they're tender/soft and brown bits (fond - pronounced fahn – the brown bits that stick to the bottom of the pan) are just starting to appear in the pan.
  • To the pan of veggies, add the tomato paste, garlic, Cajun or Creole seasoning and remaining 1/2 tsp salt. Stir for about 30 seconds, coating the veggies. Pour in 3/4 C (180g) of the reserved cooking liquid from the lentils and rice. Stir. To the pan, add the drained kidney beans. Stir. Heat should be on medium-low to low. Lid the pan and gently cook the beans through for about 8-10 minutes. Check on the beans a few times while cooking and If needed, add just a bit more cooking liquid from the reserved liquid. Your beans should be saucy, and moist, not dry.
  • Turn the heat to low and transfer the drained rice and lentils to the bean mixture. Add the liquid smoke and Worcestershire sauce (start with 1 tsp of Worcestershire.). Sprinkle a squeeze of lemon over the top and to taste, then gently fold all the ingredients together. If needed, to loosen the mixture or if it starts to get too dry, add a splash of cooking liquid - you'll probably not use it all - thats okay. Taste for salt adjustment and add more Worcestershire to taste. Lid. Leave on low heat for 3-5 minutes just to warm though, checking to make sure it isn't sticking - the pan should be almost dry, with a moist (but not sticky) rice mixture.
