Balsamic Strawberries with Whipped Mascarpone Cheese image

1/3 cup balsamic vinegar
2 teaspoons plus 4 tablespoons sugar
1/2 teaspoon fresh lemon juice
1/2 cup chilled mascarpone cheese*
1/2 cup chilled whipping cream
1/2 teaspoon vanilla extract
3 1-pint baskets (about 24 ounces) strawberries, hulled, halved

Steps:

  • Combine vinegar, 2 teaspoons sugar, and lemon juice in heavy small saucepan. Stir over medium heat until sugar dissolves. Boil until syrup is reduced to scant 1/4 cup, about 3 minutes. Transfer to small bowl; cool completely. (Can be made 2 days ahead. Cover and refrigerate.)
  • Combine mascarpone, cream, vanilla, and 2 tablespoons sugar in medium bowl. Whisk until thick soft peaks form. Cover and refrigerate up to 4 hours.
  • Combine berries and remaining 2 tablespoons sugar in large bowl; drizzle with balsamic syrup and toss to blend. Let stand 30 minutes, stirring occasionally.
  • Divide berries and syrup among 6 goblets. Top with mascarpone mixture.
  • *Italian cream cheese, available at Italian markets and many supermarkets.

Steps:

  • Boil 1/3 cup balsamic vinegar with 2 tablespoons honey, 1 bay leaf and a pinch of salt until thick, 4 minutes. Discard the bay leaf; let the syrup cool. Beat 1 cup mascarpone, 1/2 cup heavy cream, 1 tablespoon sugar and 1/4 teaspoon vanilla with a mixer until soft peaks form. Toss 3 pints quartered strawberries with half of the balsamic syrup. Serve with the mascarpone mixture and the remaining syrup.

1 cup part-skim ricotta cheese
2 tablespoons honey
1/2 teaspoon vanilla extract
3 tablespoons balsamic vinegar
2 tablespoons sugar
1 (16-ounce) container strawberries, hulled and quartered
2 tablespoons fresh basil leaves, cut into ribbons

Steps:

  • Put the ricotta cheese, honey and vanilla extract into the small bowl of a food processor and process until smooth, about 1 minute. Transfer to a small bowl and refrigerate for at least 2 hours.
  • In a small saucepan combine the vinegar and sugar and bring to a boil. Simmer over medium heat for 2 minutes, stirring occasionally. Allow to cool completely.
  • In a medium bowl, toss the berries with the basil and the balsamic syrup.
  • Divide the cream among 4 cocktail glasses, top with the berry mixture and serve.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone non-stick mat that is larger than the tray to prevent juice from spilling onto the tray.
  • Combine strawberries, 1/4 cup sugar, and balsamic vinegar in a bowl; toss gently to coat. Transfer to the baking sheet, scraping down the bowl with a spatula to ensure all the liquid is included.

  • To make the ricotta cream: Place the ricotta cheese, pure maple syrup (make sure there is no added sugar in your syrup) and vanilla in a food processor or blender. Puree until completely smooth and whipped, about 1 minute. Scoop the ricotta cream into a bowl and refrigerate until cold, at least 15 minutes or until ready to eat.
  • Meanwhile make the balsamic strawberries: Place the strawberries, balsamic vinegar and maple syrup in a small pot. Bring to a boil and cook for 3 minutes or until the strawberries are just beginning to soften. Using a slotted spoon remove only the strawberries and place them in a bowl. Bring the remaining sauce to a boil, boil for another 3-5 minutes or until the sauce has thickened into a thin syrup. You do not want it to thicken too much so watch it closely. Pour the sauce over the strawberries. Allow the berries to cool a little before serving.
  • To make the maple glazed seeded nuts, add the nuts and seeds to a skillet set over medium heat. Toast the nuts until fragrant, about 5 minutes. Once the nuts are toasted remove from the heat and stir in the maple syrup, vanilla and a pinch of sea salt. Spoon the mixture out onto a baking sheet lined with parchment. Allow to cool and then store in an airtight container.
  • To assemble, spoon the strawberries into the bottom of four small bowls or jars. Next add the ricotta cream and then add the nuts on top. Lastly, drizzle with more balsamic syrup. Grab a spoon!
