Graffiti Earth is on the path to becoming zero-waste, which means it uses every bit of every ingredient. More restaurants than ever are focusing on sustainability - and you can follow suit at home. Eliminating food waste can save your family up to $1,500 per year, so try some of the restaurant's tricks in your own kitchen.

Number Of Ingredients 5

1 pound assorted vegetable scraps (such as carrot peels, onion peels, mushroom stems, ginger skin, etc.)
1/2 pound herb stems, citrus peels and/or other fruit peels
3/4 to 1 pound creamy ingredients (such as avocado, leftover cooked squash, coconut milk or bean puree)
Kosher salt
Spices, soy sauce, fresh herbs, citrus juice or chili sauce, to taste

Steps:

  • Make the stock: Combine the vegetable scraps and 16 cups water in a large pot over medium heat (use water that has already been used to cook vegetables, lentils or beans if you can!). Bring to a gentle simmer and cook until the vegetable scraps are very tender, 30 to 45 minutes, adding the herb stems and/or fruit peels during the last 10 minutes of cooking.
  • Strain the stock through a fine-mesh sieve, pressing on the solids with a rubber spatula. Return the stock to the pot.
  • Add your creamy ingredients to the pot and puree with an immersion blender until smooth. Season with salt and any additional seasonings to taste.

Black Licorice or Chocolate Licorice
Chocolate Chips
Black Cake Writing Gel
Green Toothpicks

Steps:

  • Wash and dry your grapes thoroughly. They must be completely dry so the eyes adhere. Assemble 3 grapes onto 1 green toothpick. Cut one piece of licorice into 1 inch sections. Then cut the 1 inch sections into 4 pieces. I used a very sharp knife to do this. These will be our antennas on the caterpillar. Use a toothpick to puncture two holes in the top of the grape. This is where we will insert our licorice/antennas. Next squeeze two small dollops of the writing gel just below the antenna. Lightly press a Chocolate Chip on each dollop. These will become the creepy bulging Caterpillar eyes. Here is the tricky part, because the Grape skin is slippery, the Chocolate Chip is going to want to slide off before the gel dries, so here is how you keep it in place. Use several shot glasses or small liqueur glasses to stand your Caterpillars up straight until the gel dries. Don't be too quick to move them. It may take up to an hour for the Gel to dry completely. So the waiting is the hardest part, but once the Gel has set, you have adorable yet Creepy Caterpillars for your Halloween Buffet! Recipe by: Hot Dish Homemaker

2 cups sifted cake flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter or margarine, softened to room temperature
1 cup sugar
3 eggs
1 teaspoon vanilla
3 ounces unsweetened chocolate, melted (optional)
1/2 cup milk
3 cups prepared white frosting (tinted with green, yellow, purple or orange food coloring)
Tinted coconut (green, yellow, purple, or orange), licorice shoe strings (variety of colors), variety of round candies for eyes or spots

Steps:

  • Preheat oven to 375 degrees. Line 24 cup muffin tins with paper liners. In a large bowl whisk together the cake flour, baking powder and salt. In a stand-alone mixer or using a handheld electric mixer cream the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing thoroughly after each addition. Add the vanilla and beat to combine. If making chocolate cake add the cooled, melted chocolate and mix well, then add in milk. Gradually add the flour mixture into the butter mixture and mix until just combined. Pour the batter into the prepared tins and bake for 20 minutes. Cool completely. Frost the cupcakes with the tinted frosting and sprinkle with tinted coconut for a fuzzy caterpillar. Arrange them in a curving pattern on top of a large cutting board or piece of cardboard covered with foil. Snip licorice into short lengths to form antennae and legs. Place round candies for eyes and mouth. If desired, round candies can be placed on cupcakes for a spotted caterpillar.

Pretzel sticks or rods
Mini marshmallows
Vanilla flavored almond bark
1 teaspoon creamy peanut butter, optional
(Ingredient amounts depend on number of "bones" you want to make)
(I omitted the peanut butter this time but it does add to the flavor and gives it a more bone-like color)

Steps:

  • Line a large cookie sheet with waxed paper. Set aside. For sticks: Stick the end of each pretzel stick into the rounded side of a mini marshmallow. (Make sure the end of the pretzel doesn't go all the way through the marshmallow.) Lightly squeeze the ends of the marshmallows so it resembles a bone. Repeat step for desired number of "bones". Melt the almond bark per package directions. Stir in peanut butter, if desired. (I used the microwave, stirring every 15-20 seconds until about three-fourths melted, then removed and continued stirring until completely melted). For rods: Coat both ends of a pretzel rod with the melted bark then lay it on the waxed paper; immediately place two mini marshmallows at both ends of the rod (side-by-side, standing on flat ends), pushing them into the melted bark to adhere to the rod. Set aside to dry before dipping the whole rod in the bark. Place one pretzel "bone" at a time in the melted almond bark, spooning it over and around to completely cover. Use a fork to lift the bone out (letting the excess drip off) onto the waxed paper. Refrigerate for 20-30 minutes to harden. (To speed the process, I set the tray of bones in front on a standing fan for 5-10 minutes).

1 tube (11 ounces) refrigerated breadsticks
8 smoked sausage links or hot dogs
1/2 to 3/4 cup potato sticks
Ketchup and/or mustard

Steps:

  • Preheat oven to 350°. Separate dough into strips. Unroll and cut eight strips in half widthwise; set remaining strips aside. Cut sausages in half widthwise. Wrap one piece of dough around each sausage, leaving the rounded end showing. Place seam side down on an ungreased baking sheet. Place reserved breadsticks on baking sheet., Bake 15-17 minutes or until golden brown. Remove bugs to a serving plate and cool 2 minutes., Insert potato sticks into baked dough to resemble legs and antennae. Decorate with ketchup and/or mustard. Serve warm. Save remaining breadsticks for another use.
