This side dish's sweet dressing has a bit of kick that combines perfectly with the pasta, seafood and veggies. Elizabeth Halfman of Davenport, Iowa shares the recipe.

Number Of Ingredients 9

8 ounces uncooked spiral pasta
1/2 cup mayonnaise
1/2 cup Thousand Island salad dressing
3 to 4 drops hot pepper sauce
1 package (8 ounces) imitation crabmeat, chopped
1 package (5 ounces) frozen cooked salad shrimp, thawed
1 cup fresh broccoli florets
1 cup fresh cauliflowerets
1/2 cup diced celery

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large bowl, combine the mayonnaise, salad dressing and hot pepper sauce. Stir in the crab, shrimp, broccoli, cauliflower and celery. , Drain pasta and rinse in cold water. Gently stir into shrimp mixture. Cover and refrigerate until serving.

Number Of Ingredients 10

1 ½ (8 ounce) packages tri-color pasta
3 stalks celery
1 pound imitation crabmeat
1 cup frozen green peas
1 cup mayonnaise
1 ½ tablespoons white sugar
2 tablespoons white vinegar
3 tablespoons milk
1 teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; rinse under cold water until cool and drain.
  • While pasta is cooking, chop celery and crabmeat. Run hot water over peas to defrost.
  • In a large bowl, whisk together the mayonnaise, sugar, vinegar, milk, salt and pepper. Add the pasta, celery and crabmeat and stir until evenly coated. Adjust the salt, sugar or mayonnaise to suit your taste. Chill several hours before serving.

Number Of Ingredients 11

1 cup sour cream
1 cup mayonnaise (no substitutions)
2 tablespoons lemon juice
2 tablespoons sugar
1 teaspoon dill weed (optional)
1 (16 ounce) package pasta (small shape -- shells, rotini)
5 -6 hard-boiled eggs, coarsely chopped
5 scallions, thinly sliced
1/2 cup chopped celery
1/2 cup sliced black olives
1 (16 ounce) package crabmeat, cut into 1/2-inch chunks

Steps:

  • In a small bowl, mix dressing ingredients; set aside.
  • Cook pasta according to package directions, drain, rinse with cool water, drain again; set aside.
  • In a large bowl, toss remaining ingredients; add cooled & drained pasta, toss again.
  • Spoon dressing over the tossed crab & pasta, stir well to coat everything.
  • Can be chilled at this point, or served at room temperature.
  • Leftovers should be kept refrigerated & eaten within a day or so.
  • VARIATIONS: Shrimp, green olives, fresh mushrooms, minced red onion, minced bell pepper (colorful!), fresh or frozen (thawed) peas, a dab of curry powder for color & flavor, salt & pepper to taste.

I created this to take to my DS & DDI's home for my contribution to Easter dinner. It turned out to be the tastiest pasta salad I had ever eaten. It was a big hit by all in attendance and many had 2nd servings in addition, even with all the other foods served. I decided it was too good not to share here, besides I want to remember how to make it again.

1 lb rotini pasta, cooked ala dente'
6 hard-boiled eggs, coarsely chopped
1/2 cup well drained sliced black olives
1/2 cup chopped fresh broccoli
1 1/2 cups grape tomatoes
1/2 cup finely chopped sweet onion
1 cup shredded carrot
1 1/2 cups finely chopped celery
1 cup canned artichoke heart, drained and quartered
1/4 cup well drained rinsed pimento pepper
1 cup shredded monterey jack cheese
1 cup shredded sharp cheddar cheese
1 1/2 cups mayonnaise
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons sugar
1 teaspoon Accent seasoning (optional)

Steps:

  • Mix and chill for several hours.
  • Makes about 2 ½ quarts.
