You can't go wrong with creamed veggies in a cheese sauce. What a delight!

Steps:
- Place 1 in. of water in a saucepan; add vegetables. Bring to a boil. Reduce heat; cover and simmer for 5 minutes or until vegetables are crisp-tender. Drain. In a saucepan, saute onion in butter until tender. Stir in the flour, salt and pepper until blended. Gradually whisk in milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in cheese until cheese is melted. Stir in vegetables., Transfer to a greased 2-1/2 cup baking dish. Bake, uncovered, at 350° for 20-25 minutes or until bubbly and vegetables are tender. Let stand for 3-5 minutes before serving.

- Preheat oven to 400˚F.
- Lightly grease a 9x13 baking dish with cooking spray and set aside.
- Boil a large pot of water over high heat.
- Add all vegetables to the boiling water and bring water back to a boil; cover, lower heat to a steady simmer, and cook for 8 to 10 minutes, or until veggies are fork-tender.
- In the meantime, melt butter in a 10-inch skillet; add garlic and cook for 20 seconds.
- Whisk in cornstarch until blended; cook for 1 minute.
- Add heavy cream; bring to a boil, whisking frequently. Cook for 3 to 4 minutes, or until thickened.
- Remove from heat; stir in italian seasoning, salt, pepper, chili powder, ground nutmeg, and cheese; whisk until cheese is melted.
- Spread ½-cup of the cheese sauce on the bottom of the baking dish.
- Drain the vegetables, then transfer to the baking dish; season with salt and pepper and stir.
- Add remaining cheese sauce; stir to coat all the vegetables.
- Sprinkle top with pork rinds panko crumbs.
- Bake for 20 to 23 minutes, or until hot and bubbly.
- Remove from oven and let stand 10 minutes. Taste for salt and pepper, and adjust accordingly.
- Serve.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 3-quart casserole dish.
- Place milk, carrots, sweet potatoes, leeks, parsnips, celery, butternut squash, and turnip in a large saucepan; bring to a boil. Reduce heat to medium low; simmer vegetables until tender, stirring occasionally, about 15 minutes.

A Quick, easy casserole made with frozen vegetables, soup and cream cheese. There are lots of ways to alter this recipe by using alternate soups, vegetables, etc. (update 12/08) after reading the reviews that some chefs thought this dish was too soupy, I made it again using 2 packages of frozen veggies, it wasn't soupy at all, so I've edited the recipe from 1 pkg. to 2 packages of veggies. I think this will correct the problem.

- In large skillet or stock pot, melt butter over medium high heat.
- Add flour and mix until a smooth roux is formed.
- Cook and stir roux continuously for 2 minutes.
- Add in salt, pepper, cayenne pepper, garlic and nutritional yeast. Stir to combine.
- Add half-and-half and milk.

- Heat the oil in a large frying pan, and add all the vegetables. Cook over a medium heat for 5-10 minutes, until almost entirely cooked. You can use different vegetables if you like, just bear in mind that vegetables that are particularly hard (e.g. carrots or potatoes) will need parboiling before adding to the frying pan.
- In a small saucepan, melt the butter over a medium-low heat. Add the flour, and mix well to form a paste. Cook for a minute or so, stirring constantly, then add the milk a little at a time, stirring until smooth each time before adding more. Then add the vegetable stock (again, it may help to add it a little at a time). You can see more detailed instructions for how to cook a simple white sauce here.
- Add the white sauce to the cooked vegetables, and mix well. Season with black pepper, and some salt if needed (you may find the salty stock is enough). Transfer to a suitably sized baking dish (mine measured 9 x 7 inches).
- Sprinkle some grated cheese and fine breadcrumbs over the creamy vegetables, and spray lightly with oil to help the topping crisp up. Bake at 190°C (Gas Mark 5 / 375°F) for around 25 minutes, or until the vegetables are piping hot, and the topping is crisped up to your liking.
