How would you know from the name that this is a sandwich or better--in a hotdog roll? My mom made these when I was little, and I continued with my kids. They are a hot treat and just taste so good from time to time.

Ingredients

1 (7 ounce) can tuna (crumbled up)
3 hard-boiled eggs (chopped medium fine)
4 slices American cheese (cubed)
2 tablespoons green peppers (chopped)
2 tablespoons onions (minced)
1/2 cup mayonnaise
6 hot dog buns

Steps:

Mix all of the above together and mix well.
Spread into hotdog rolls.
Wrap individually in aluminum foil.
Place on a baking sheet and bake in a 250 degree oven for 30 minutes.

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

Ingredients

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
1 (5 ounce) can chunk light tuna in water, drained and flaked
salt and ground black pepper to taste
4 slices bread, toasted, or to taste

Steps:

Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
Ladle tuna mixture over toasted bread to serve.

This is the 'famous' toasted tuna sandwich that was served in my Catholic school cafeteria. Who knows why they called them tuna bumsteads, but they did.. Use Miracle Whip for the real-deal, but I know a lot of folks don't like it so use mayo if you're, ahem, 'one of them'.. lol..

2 (6 ounce) cans tuna, drained
4 tablespoons Miracle Whip
4 hard-boiled eggs, peeled and chopped
8 slices American cheese
salt and pepper, to taste
8 hamburger buns

Steps:

Preheat oven to 350°F.
Combine the tuna, dressing, eggs, salt and pepper.
Spread the mixture evenly between hamburger rolls.
Top each with a slice of cheese.
Wrap each sandwich in foil and bake for 15 minutes or until heated through, cheese is melted, and bun is toasted.

1 (16 ounce) can tuna fish (or chicken or deviled ham)
1/2 lb cubed cheese, american or cheddar
3 hard-boiled eggs, chopped
2 tablespoons chopped green peppers
2 tablespoons chopped onions
2 tablespoons chopped olives
2 tablespoons sweet pickle relish
1/2 cup mayonnaise
8 hot dog buns

Steps:

Mix all together but the buns.
Split buns half way thru and fill evenly with mixture.
Wrap each in foil.
Bake at 325 for 20 minutes.
