Healthy Potato Soup is total comfort food! Paleo, Whole30 + vegan, this easy creamy potato soup can be made on the stove, in the slow cooker or instant pot.

2 tablespoons olive oil
1 cup onions (diced)
1 cup carrots (diced)
½ cup celery (diced)
4 cups potatoes (peeled and chopped into 1 inch pieces (about 1 lb or 5-6 medium sized potatoes))
4 cups vegetable broth
1 teaspoon garlic powder
1 teaspoon fresh rosemary (chopped finely)
½ teaspoon salt
½ teaspoon pepper
2 cups milk of choice

Steps:

  • Set the Instant Pot to sauté mode for 15 minutes. Heat olive oil. While oil is heating, chop veggies.
  • Sauté onions, carrots, and celery until onions are translucent. Turn off sauté mode. Make sure to scrape off any pieces of food on the bottom of the Instant Pot or you will get a burn notice during cooking.
  • Pour in remaining ingredients, except milk.
  • Set the Instant Pot to sealing, pressure cook for 10 minutes on high pressure. It will take about 10 minutes for the pot to come to pressure before it starts to count down.
  • Manually release pressure when timer goes off.
  • Stir in milk. Use an immersion blender or regular blender to make the soup smooth. Serve with your favorite toppings like bacon, chives or cheese.
  • In a sauté pan, heat olive oil. While oil is heating, chop veggies.
  • Sauté onions, carrots, and celery until onions are translucent, about 10 minutes. (This step is optional, but adds flavor)
  • Add all ingredients into the crockpot, except milk.
  • Set the crockpot to cook for 6 hours on high, or 8 hours on low.
  • Once cooked, stir in milk. Use an immersion blender or regular blender to make the soup smooth. Serve with your favorite toppings like bacon, chives or cheese.

After constant tinkering with this recipe, I have come up with soup which is the definitive cream of potato soup. Rich with vegetables and wonderfully spiced, you will find yourself doubling this recipe often!

1 onion, chopped
½ cup chopped celery
¼ cup chopped carrots
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
5 tablespoons margarine
4 tablespoons all-purpose flour
1 ½ cups chicken broth
1 ½ cups whole milk
3 potatoes, cut into 1/4-inch slices
2 teaspoons Worcestershire sauce
1 ½ teaspoons mustard powder
1 pinch ground allspice
¾ teaspoon celery seed
½ teaspoon dried thyme
½ teaspoon seasoning salt
2 tablespoons dry white wine
¼ teaspoon ground cayenne pepper
¼ teaspoon chicken bouillon powder

Steps:

  • In a large stock pot, saute onion, celery, carrots, garlic and parsley in butter until soft but not browned. Sprinkle in flour and cook, stirring for 2 minutes. Add broth slowly, stirring as you add.
  • Add milk, potatoes, Worcestershire sauce, dry mustard, allspice, celery seed, thyme, seasoning salt, dry white wine, cayenne pepper and chicken granules. Allow to simmer and thicken, stirring frequently, until the potatoes are cooked through, approximately 25 minutes. During cooking, break up potatoes with the back of a spoon. Serve warm.

I found another recipe on this site that used cream cheese in the potato soup, so I used it as inspiration for this soup...that is shockingly creamy, lucious, and not as high in fat & calories as you would think. I can't wait to serve it at a teacher appreciation luncheon tomorrow!

1 medium yellow onion, diced
12 cups russet potatoes, peeled and cubed
10 cups chicken stock, homemade with all fat skimmed
2 teaspoons seasoning salt, preferably lawrys
1 teaspoon ground black pepper
1 head roasted garlic
2 (8 ounce) packages cream cheese, fat free
2 1/2 cups half-and-half cream
10 scallions, sliced
1 lb turkey bacon, cooked and crumbled
8 ounces 2% cheddar cheese
cooking spray

Steps:

  • In a large soup pan, coated with cooking spray sweat onions on medium heat for about 3-4 minutes until soft and translucent.
  • Add potatoes and chicken stock. Bring to a boil and cook at a low boil until potatoes are tender. Reduce heat to medium. Add roasted garlic and the seasoning (I am always slightly off on the seasoning, so use just the seasoned salt and black pepper to your taste).
  • Using a hand-held blender, puree soup. Continue cooking at medium for 5-7 minutes. Add Cream Cheese and Half & Half. Reduce heat to medium low and cover. Cook for about 15-20 minutes. Stir frequently.
  • Check for seasoning -- add more if needed.
  • Serve with the crumbled turkey bacon, cheese, and scallions. Enjoy!

This is a favorite of mine. Light simple, quick to make and very very healthy. I love to serve this as a starter for a dinner party or served in small coffee cups as it makes a great comfort food sitting around the fireplace or watching the games on TV. Some grilled sandwiches and maybe some fries for a simple light dinner.

4 large potatoes, peeled and very rough chopped
2 medium carrots, peeled and very rough chopped
1 large onion, rough very chopped
5 cups chicken broth
3/4 cup heavy cream (you can use a lighter cream or even milk if you like)
1 teaspoon minced garlic
1 teaspoon butter
1 tablespoon fresh parsley, chopped
1 bay leaf
1 teaspoon dried thyme, chopped
salt
pepper
1 tablespoon cornstarch (optional)
crumbled bacon
chopped scallion
thick slices of baguettes topped with melted gruyere or swiss cheese

Steps:

  • Start -- In a large pot on medium heat, add the butter and melt, then add the garlic and cook just a minute. Next, add the onions, carrots and potatoes and cook another minute until mixed well. Add the broth, bay leaf and thyme and cook on medium until all the vegetables are soft. About 15 minutes.
  • Puree -- First remove the bay leaf -- Then just use an immersion blender. Or you can add the soup to a regular blender and blend until everything is a smooth texture. I love the immersion blender right in the pot, but both will work just fine. If using a regular blender return the soup to the pot. Then add the fresh parsley, heavy cream, salt and pepper to taste. Now this soup is thin, it is not meant to be thick. But if you want, mix a little water with the cornstarch to make a "slurry" and add to the soup and bring to a medium boil and it will thicken if you prefer it that way.
  • Finish -- I like to top with a baguette with melted gruyere and put it right on top of the soup and then some crumbled bacon. You can really top it anyway you like. The soup is healthy and quick and just very light and easy.

3 tablespoons cornstarch
1 (12 ounce) can fat-free evaporated milk, divided (can use fat-free half and half)
1 cup shredded reduced-fat cheddar cheese
fresh ground black pepper (to taste)

Steps:

  • In a saucepan combine the cubed potatoes with onion, celery, cayenne, garlic powder and bouillon powder and chicken broth (start with 2 teaspoon bouillon powder) bring to a simmer over medium heat.
  • Reduce heat cover and simmer for about 20 minutes or until veggies are tender (at this point you may add in more bouillon powder if desired).
  • In a small bowl whisk together 1/4 cup evaporated milk with 3 tablespoons cornstarch until smooth; stir into the simmering broth mixing constantly.
  • Add in the remaining evaporated milk; bring back to a boil, reduce heat to low and simmer for about 3-5 minutes or until bubbly and thickened.
  • Remove from heat season with black pepper and salt if desired, then stir in the shredded cheese.
  • Delicious!

20 ounces frozen cauliflower

Steps:

  • Pour 4 cups vegetable broth into large pot; add potatoes; bring to a boil and simmer until fork-tender; drain and slightly mash potatoes; reserve broth.
  • Pour remaining 1 cup vegetable broth into medium pot; add cauliflower and onions; bring to a boil and simmer until very soft.
  • Scoop cauliflower mixture into blender and process until smooth. Add reserved broth from cooked potatoes if necessary.

6 medium potatoes, cut in cubes
2 tablespoons butter
1 large onion, cut in a large dice
6 stalks celery, sliced
2 garlic cloves, minced
3 tablespoons flour
1 (5 ounce) can fat-free evaporated milk
2 cups vegetable broth
1/2 teaspoon smoked paprika
salt and pepper

Steps:

  • Start boiling potatoes.
  • In a soup pot, saute the onions and celery over medium heat for about 5-8 minutes, until it is soft.
  • Add the garlic and cook for another 2 or 3 minutes.
  • Add the flour and stir constantly for a minute.
  • Stir in the milk and vegetable broth; bring to a slow simmer for about 5 minutes.
  • Add paprika and season with salt and pepper.
  • By this time, your potatoes should be done - you don't want them to be falling apart, but just fork-tender. Drain the potatoes and divide in half.
  • Mash half of the potatoes and stir them into the soup. Simmer for another five minutes.
  • Add the remaining potato chunks, and adjust seasonings to taste - I added a bit more pepper and another dash of smoked paprika.

This is SO GOOD and tastes completely sinful, but it's not! Very low fat, but so thick and creamy thanks to the evaporated milk (thick like cream, but fat free) and instant potatoes. I usually make this in my crockpot, but it can be done on the stove top as well (simmer for about an hour).

4 chicken bouillon cubes
