2 cups uncooked gemelli or spiral pasta
1 pound fresh asparagus, trimmed and cut into 2-inch pieces
3 medium carrots, shredded
2 teaspoons canola oil
2 cups cherry tomatoes, halved
1 garlic clove, minced
1/2 cup grated Parmesan cheese
1/2 cup heavy whipping cream
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions. In a large skillet over medium-high heat, saute asparagus and carrots in oil until crisp-tender. Add tomatoes and garlic; cook 1 minute longer., Stir in the cheese, cream and pepper. Drain pasta; toss with asparagus mixture.

3 1/2 cups uncooked farfalle (bow-tie) pasta, (9 ounces)
2 cups snow (Chinese) pea pods, strings removed (12 ounces)
2 large red bell peppers, cut into 1-inch pieces (2 cups)
2 medium carrots (1 cup)
1/2 cup chopped fresh basil leaves
1/2 cup shredded Parmesan cheese (2 ounces)
1 cup light creamy Caesar dressing
2 tablespoons milk

Steps:

  • Cook and drain pasta as directed on package, adding pea pods for last minute of cooking. Rinse with cold water; drain.
  • Meanwhile, mix bell peppers, carrots, basil and cheese in very large (4-quart) bowl. Mix dressing and milk in small bowl with wire whisk. Add dressing mixture, pasta and pea pods to bell pepper mixture; toss to coat.

4 cups cooked rotini pasta
1 can (14.5 oz.) diced tomatoes, undrained
2 cups small broccoli florets
1/2 cup shredded carrots
1/2 cup KRAFT Lite Zesty Italian Dressing
1/2 cup KRAFT Light Mayo
1 cup chopped cashews
1/2 cup raisins
1/4 cup KRAFT Grated Parmesan Cheese
1/4 tsp. ground red pepper (cayenne)

Steps:

  • Toss first 4 ingredients in large bowl.
  • Mix dressing and mayo. Add to pasta mixture; mix lightly.
  • Sprinkle with remaining ingredients. Refrigerate at least 1 hour before serving.

Olive oil, for the grill grates
Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
1/4 cup grated Parmesan, plus more for serving
1/4 cup sour cream
1 tablespoon fresh lemon juice
1/4 teaspoon finely grated garlic
8 ounces skirt steak (about 1/2 inch thick)
8 ounces penne or cavatelli
1 cup shredded carrots
1/2 cup thinly sliced celery
1/4 cup finely chopped red onion

Steps:

  • Heat a grill or grill pan over medium-high heat until hot; brush the grates with the oil. Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, Parmesan, sour cream, lemon juice, garlic, 1/2 teaspoon salt and a few grinds of pepper in a large mixing bowl.
  • Season the steak generously with salt and pepper. Grill the steak, turning once, 3 to 4 minutes per side for medium rare. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch slices.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the mixing bowl.
  • Add the steak, carrots, celery and onion to the mixing bowl and toss to combine. Season with salt and pepper. Serve sprinkled with more Parmesan and black pepper.

2 pounds fusilli
1 cup mayonnaise
1/2 cup whole milk, plus more if needed
1/4 cup sour cream
1 tablespoon chopped fresh parsley
1 tablespoon chopped chives
2 teaspoons chopped fresh mint
2 lemons, zested and juiced
Freshly ground black pepper
3 tablespoons freshly grated Parmesan
1 cup broccoli florets, broken into small pieces
1 cup cherry tomatoes, halved
1 cup frozen peas, thawed
1 cup sliced asparagus (2-inch pieces)
1/2 cup matchstick carrots
1 leek, white and light green parts, thinly sliced

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions. Drain and rinse under cold water until no longer hot; set aside.
  • To make the dressing, combine the mayonnaise, milk, sour cream, parsley, chives, mint, lemon zest and juice, 1 teaspoon salt, 1/2 teaspoon pepper and 2 tablespoons Parmesan in a small bowl. Set aside. Before tossing, splash in more milk if needed for thinning.
  • In a large bowl, combine the pasta, broccoli, tomatoes, peas, asparagus, carrots and leeks. Pour over the dressing and toss to coat. Top with the remaining tablespoon of Parmesan and some black pepper. Refrigerate for at least 4 hours and up to overnight.

I tend not to use mushrooms as one of my kids don't like them and I always like adding a leafy green like spinach, kale, swiss chard, arugula or escarole. Whatever is available in your garden or at the farmer's market will probably work great.

1/4 cup butter
2 medium shallots, finely chopped
1 garlic clove, finely chopped
2 small carrots, cut into 1/4 inch thich slices
2 small zucchini, cut into 1/4 inch thick slices
1/2 lb shelled peas
6 ounces button mushrooms, sliced
1 cup dry white wine
2 cups heavy cream
1/2 cup grated parmesan cheese
2 tablespoons chopped fresh parsley
salt and pepper
nutmeg
1 lb cooked pasta

Steps:

  • In a large skillet, melt the butter over medium heat.
  • Add the shallots and garlic and saute for 1 minute.
  • Add remaining vegetables (you may want to wait until the end when you mix the veg with the sauce to add the peas if you are using frozen) and saute until crisp tender (don't over cook).
  • Remove the veg from the skillet and set aside.
  • Add the wine to the hot skillet and let boil until reduced by half.
  • Add the cream and simmer until thick (about 10 minutes).
  • Stir in the reserved veg (and the peas if you use frozen ones) and simmer until heated through.
  • Stir in the cheese, parsley a dash of nutmeg and season with salt and pepper to taste.
  • Pour immediately over hot, cooked pasta.

3 teaspoons dried parsley

Steps:

  • Cook pasta in a stock pot according to package directions.
  • In a saucepan melt the butter over medium heat.
  • Add in minced garlic and flour. Cook and whisk until it's combined and starts to thicken.
  • Add in cream, chicken broth, salt and pepper.
  • Continue to cook and stir until the mixture thickens up. Reduce the heat to low and stir constantly as it thickens.
  • Remove pan from heat and add in the Parmesan cheese and parsley. The cheese will begin to melt, so stir until all combined well.
  • Drain the cooked pasta. Add the cheese mixture to the hot pasta.
  • Stir until mixed together well.
  • Sprinkle with additional cheese and parsley for serving.

½ pound fresh asparagus, cut into 1-inch pieces
½ cup mayonnaise

2 tablespoons dry ranch dressing mix (such as Penzeys)
1 tablespoon dry chip and dip seasoning mix (such as Penzeys)
1 teaspoon dry Italian-style salad dressing mix (such as Penzeys)
2 cups cubed fully cooked ham
1 small head romaine, torn into bite-size pieces
1 large cucumber, cut into 1/4-inch chunks
1 avocado, cut into bite-size pieces

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes.
  • While pasta cooks, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add asparagus, cover, and steam until tender-crisp, 2 to 6 minutes. Drain pasta and asparagus and chill until ready to use, at least 10 minutes.
