CREAMY GARLIC PARMESAN PASTA



Creamy Garlic Parmesan Pasta image

Creamy garlic parmesan pasta is a simple and easy family dinner that comes together in a snap.

Number Of Ingredients 10

1/4 pound asparagus (washed and trimmed)
1 tablespoon olive oil
5 cloves garlic (minced)
3 tablespoons all-purpose flour
2 cups milk (I used 1% (but any milk will work))
1/2 cup freshly-grated Parmesan cheese
Salt and pepper to taste ( about 1/2 teaspoon salt (1/4 teaspoon black pepper))
12 ounce box of whole grain farfalle pasta (or any shape pasta you prefer)
8 ounces cooked chicken (shredded or diced)
1.5 ounces Julienne cut sun-dried tomatoes (half of a 3 ounce bag - I used California Sun Dry brand (FYI))

Steps:

  • Fill the saute pan about an inch deep with tap water, and bring to a boil.
  • Add asparagus to the pot and boil for about 2 minutes.
  • Remove the asparagus (tongs may be helpful), and put it in the ice bath to stop the cooking; set aside.
  • Start a separate pot of water to boil to cook your pasta per package instructions.
  • Wipe dry the pan you just cooked the asparagus in, return to stovetop and put the olive oil in it.
  • Turn the heat to low to preheat the pan for about 1-2 minutes, then add the minced garlic.
  • Cooks the garlic (should hear a light sizzle) on low for about 1.5 minutes.
  • Stir in the flour, and stir to combine for about a minute.
  • Slowly add the milk, whisking to break up any lumps.
  • Add the salt and pepper, and increase the heat a little to medium, continuing to whisk until the milk starts boiling.
  • Reduce heat back down to low (maintain a light boil/ simmer), and whisk often for about 5 minutes, until thick.
  • Stir in the parmesan cheese, and remove from heat.
  • Cook your pasta according to package instructions, and reserve at least 1/2 cup of starchy pasta water prior to draining your finished pasta.
  • Remove the asparagus from the ice water, and chop into bite size chunks.
  • Toss the drained pasta, chicken, asparagus and sun-dried tomatoes with the sauce in the pan you cooked the sauce in.
  • If you need to loosen up the sauce a little bit, add some of the reserved pasta water, a couple tablespoons at a time until sauce reaches desired consistency.
  • Optional: garnish with fresh basil.

4 skinless, boneless chicken breast halves
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon butter
1 tablespoon vegetable oil
3 cloves garlic, chopped
1 tablespoon all-purpose flour
1 cup heavy whipping cream
½ cup chicken broth
½ cup freshly grated Parmesan cheese
2 ounces cream cheese, softened

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Season chicken breasts with oregano, basil, salt, and black pepper.
  • Cook the chicken breasts on preheated grill until no longer pink in the center and the juices run clear, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Melt butter with vegetable oil in a saucepan over medium heat. Cook and stir garlic in the butter mixture until fragrant, about 2 minutes. Stir flour through the butter mixture; cook and stir until flour is incorporated, about 1 minute more. Pour heavy cream and chicken broth into the saucepan; stir. Continue cooking until the mixture thickens, 3 to 5 minutes. Add Parmesan cheese and cream cheese to the saucepan; cook, stirring occasionally, until the cheese is melted into the sauce, about 5 minutes.
  • Plate the chicken breasts. Spoon sauce over the chicken. Serve extra sauce on the side.

8 oz fettuccine
salt, to taste
pepper, to taste
¼ cup grated parmesan cheese
2 tablespoons fresh parsley, chopped

Steps:

  • Heat unsalted butter in a large skillet over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes.
  • Add in the chicken broth, milk, and fettuccine. Season with salt and pepper.
  • Bring the pot to a boil, then reduce heat and simmer, stirring occasionally, until pasta is cooked through, about 18-20 minutes.
  • Stir in Parmesan. If the mixture is too thick, add more milk as needed until desired consistency is reached.
  • Serve immediately, and top with parsley.
  • Enjoy!

2 tsp olive oil
4 cloves garlic, minced
2 Tbsp butter
1/4 tsp salt
1/2 tsp pepper
3 c chicken stock
1/2 lb spaghetti or angel hair pasta
1 c grated parmesan cheese
3/4 c heavy cream
2 Tbsp chopped fresh parsley

Steps:

  • 1. In a pot, bring the olive oil to medium-low heat. Add the garlic and stir, allowing it to cook for 1-2 minutes. Mix in the butter until melted. Add the salt, pepper and chicken stock. Raise the heat to high and let it come to a boil.
  • 2. Once it is at a rolling boil, add the pasta and cook for as long as the box's directions say. You want it aldente'. I always do the shorter time. Reduce the stove to medium heat and mix in the parmesan until completely melted. Turn off the heat and stir in the cream and parsley. Sprinkle with some parmesan and serve immediately. ( I heat the cream a little in the micro before adding, but do not boil)
  • 3. You can add so many foods to this. I just like it plain and simple as always.

2 teaspoons olive oil
4 garlic cloves, minced
2 tablespoons butter
3 cups chicken broth, or more as needed
½ teaspoon ground black pepper
¼ teaspoon salt
½ pound spaghetti
1 cup grated Parmesan cheese
¾ cup heavy cream
1 ½ tablespoons dried parsley

Steps:

  • Heat olive in a medium pan over medium heat. Add garlic and stir until fragrant, 1 to 2 minutes. Add butter and stir constantly until melted. Pour in chicken broth; add pepper and salt. Bring to a boil. Add spaghetti and cook, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Add more chicken broth if pasta starts to stick to the pan.
  • Stir Parmesan cheese, cream, and parsley into the pasta and mix thoroughly. Serve immediately.

1 lb pasta
1 tablespoon extra virgin olive oil
3 tablespoons butter
1 tablespoon chopped garlic (or minced)
1/2 teaspoon red pepper flakes (optional)
2 tablespoons flour
1 cup milk
1 cup chicken broth
1 -1 1/2 cup shredded parmesan cheese (grated will not work well, shredded works best!)
salt and pepper
4 -5 scallions (green onions, diced with scissors)

Steps:

  • Cook pasta according to directions.
  • When pasta is half way done, start with cream sauce in separate pot.
  • Add butter, olive oil and garlic and saute on med-low heat until butter is melted, then add red pepper flakes and saute.
  • Mix in flour until combined.
  • Add milk and chicken broth, bring to a boil, lower heat and stir until thickened.
  • Add parmesan and stir until melted.
  • Serve over pasta, and top with green onions.
  • Option: Add cooked, diced chicken.

  • In a sauce pan, over medium heat, melt the butter. Add the garlic and cook and stir for 30 seconds. Add the flour and stir with a whisk for 30 seconds. It will be a thick paste. That's ok.
  • While whisking, slowly add in the chicken broth, milk, salt, and pepper. Stir and cook for several minutes until mixture has thickened. Careful not to let this boil and burn. Lower the heat if needed. You don't have to stir constantly, but you should stir very often.
  • Once sauce is thickened, take off the heat and add in the dried parsley and shredded parmesan cheese. Let melt and then stir together to combine.
