CREAMY KALE GRATIN



Creamy Kale Gratin image

You only need two ingredients to take your kale and turn it into the most amazing, creamy and easy side dish. All you need is a bowl and a bit of cooking time and you are all set!

Number Of Ingredients 5

4 cups kale
⅓ cup plain greek yogurt
¼ cup shredded cheese of choice (plus more for topping)
¼ tsp each of rosemary, thyme, sage, garlic powder, red pepper
Salt and pepper to taste

Steps:

  • Preheat your oven to 425F.
  • In a large bowl, add the kale and massage slightly. Mix in the greek yogurt until every piece of kale is covered.
  • Add the spices, salt and pepper and continue to mix. Add half of the cheese and mix again.
  • In an oven safe dish, add the kale, top with the rest of your cheese and breadcrumbs.
  • Bake at 425F for 20 minutes, then switch the oven to broil and broil for another 5 minutes.

An AMAZING kale recipe from Real Simple. Also easy to make vegan by substituting vegan cream cheese, sour cream, and butter! I didn't have bread on hand so I used crumbled crackers on top and omitted the butter.

2 tablespoons olive oil
1 medium bunch kale, thick stems removed and leaves torn into bite-size pieces (about 10 cups)
1 shallot, sliced
kosher salt and black pepper
2 ounces cream cheese
2 tablespoons sour cream
1 cup coarse fresh breadcrumb
1 tablespoon unsalted butter, cut up

Steps:

  • Heat oven to 375°F Heat the oil in a large skillet over medium heat. Add the kale and shallot, season with ½ teaspoon salt and ¼ teaspoon pepper, and cook, tossing occasionally, until tender, 8 to 10 minutes.
  • Mix in the cream cheese and sour cream. Transfer to a shallow baking dish, top with the bread crumbs and butter, and bake until golden, 5 to 7 minutes.
