CREAMY KALE GRATIN
You only need two ingredients to take your kale and turn it into the most amazing, creamy and easy side dish. All you need is a bowl and a bit of cooking time and you are all set!

Steps:
- Preheat your oven to 425F.
- In a large bowl, add the kale and massage slightly. Mix in the greek yogurt until every piece of kale is covered.
- Add the spices, salt and pepper and continue to mix. Add half of the cheese and mix again.
- In an oven safe dish, add the kale, top with the rest of your cheese and breadcrumbs.
- Bake at 425F for 20 minutes, then switch the oven to broil and broil for another 5 minutes.

An AMAZING kale recipe from Real Simple. Also easy to make vegan by substituting vegan cream cheese, sour cream, and butter! I didn't have bread on hand so I used crumbled crackers on top and omitted the butter.

- Heat oven to 375°F Heat the oil in a large skillet over medium heat. Add the kale and shallot, season with ½ teaspoon salt and ¼ teaspoon pepper, and cook, tossing occasionally, until tender, 8 to 10 minutes.
- Mix in the cream cheese and sour cream. Transfer to a shallow baking dish, top with the bread crumbs and butter, and bake until golden, 5 to 7 minutes.
