CREAMY GARLIC PARMESAN GREEN BEANS



Creamy Garlic Parmesan Green Beans image

Creamy Garlic Parmesan Green Beans, simmered in a white garlic sauce until the flavor has permeated its way through. A green beans recipe with Parmesan!

2 qt container filled with trimmed beans (cut in half)
1 large onion (diced)
1 cup whipping cream (full fat cream)
2-3 cloves fresh garlic
1/2 1 tsp salt
1 tsp black ground pepper
1/2 1 cup grated Parmesan cheese (add less at first, then add more as the flavor requires)

Steps:

  • Start by prepping the vegetables. Peel and dice the onion.
  • Wash the beans thoroughly in water. Trim the ends of the beans by lining them up and cutting off both ends. Then cut the beans in half.
  • Fill a large pot with water. Add the beans and bring to boil over high heat. Cook for about 10 minutes or until the beans are almost cooked through over medium heat. Remove the beans to an iced water to stop the cooking process, then drain about 5 minutes later. Do not leave the beans in the water for longer, otherwise, they will absorb too much water and taste watery.
  • Add couple tablespoons of oil to a frying pan. Heat through and add diced onions. Cook the onion over medium heat until golden in color, stirring often.
  • Add green beans and heavy cream. Cook the green beans in the heavy cream for about 10 minutes over medium heat or until the cream is reduced and thickened, stirring from time to time. Add garlic and grated Parmesan. Stir & cook for additional 2-3 minutes. Add salt & black pepper. Stir. Taste and adjust the seasoning. Keep in mind that Parmesan cheese is very salty, so if you, to add more Parmesan before serving, you will need to under season at this point.
  • Transfer to a serving bowl and serve right away, sprinkling a little more grated Parmesan on top. Stir once more to incorporate the cheese.

1 pound fresh green beans, trimmed and snapped
1 tablespoon butter
¼ cup heavy cream
2 tablespoons grated Parmesan cheese
ground nutmeg
salt, to taste
ground black pepper, to taste
2 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly-salted water to a boil; drop in the green beans and return to a boil. Cook uncovered until the beans are bright green and barely tender, about 6 minutes. Drain and set aside.
  • Melt the butter in a large skillet over medium-low heat; whisk the cream, 2 tablespoons of Parmesan cheese, and nutmeg into the melted butter. Bring the mixture to a simmer. Gently stir the beans into the mixture to coat; season with salt and pepper. Return to a simmer, transfer to a serving dish, and sprinkle with 2 tablespoons of Parmesan cheese to serve.

¾ pound fresh green beans, trimmed
sea salt and freshly ground black pepper to taste
1 pinch garlic powder, or to taste
3 tablespoons shredded Parmesan cheese, or more to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Coat a baking dish with cooking spray.
  • Place trimmed green beans into the prepared baking dish. Season with sea salt, pepper, and garlic powder; toss to coat. Sprinkle Parmesan cheese on top.
  • Roast in the preheated oven until cheese melts and forms a crisp shell over beans, about 10 minutes. Serve immediately.

Steps:

  • Preheat the oven to 400 degrees F.
  • Trim off the tough end of the beans and arrange the beans on a nonstick cookie sheet. Drizzle with olive oil season with salt and pepper, to taste. Sprinkle the cheese evenly over the top and bake until the cheese melts and forms a crisp shell over the beans, about 10 minutes. Let the beans sit a few minutes for the cheese to cool slightly. Inspired by the Italian dish of sautéed puntarelle (a Italian variety of chicory) and white beans, this recipe makes a satisfying vegetarian main course or a hearty side dish for roast chicken or sausages. It opts for canned white beans, for the sake of weeknight convenience, and Swiss chard, which is much milder than puntarelle and easier to find in the U.S. Kale or escarole would also work well, if that's what you've got. On that note, grated Pecorino Romano cheese gives the broth a more pungent element, but Parmesan will work in its place. Serve in shallow bowls with toasted country bread to mop up the garlicky broth.

1 small fennel bulb, trimmed, cored and small-diced
1 small yellow onion, small-diced
2 teaspoons minced fresh rosemary or thyme
5 garlic cloves, minced
1/4 teaspoon red-pepper flakes, plus more to taste
1 large or 2 small bunches escarole, kale or Swiss chard, stems removed (10 to 12 ounces)
2 (15-ounce) cans cannellini beans, rinsed
2 cups low-sodium vegetable or chicken broth
Kosher salt and black pepper
1 tablespoon lemon juice
1/2 cup shredded mozzarella (optional)
3 tablespoons grated Pecorino Romano or Parmesan, plus more for serving
Toasted country bread, for serving

Steps:

  • In a 12-inch skillet or Dutch oven, heat the olive oil over medium. Add the fennel, onion and rosemary, and cook for 4 to 6 minutes, stirring occasionally, until tender. Add the garlic and red-pepper flakes and cook until fragrant, about 1 minute.
  • Begin adding handfuls of the greens, cooking and stirring until leaves wilt.
  • Add the white beans, broth and 1/4 teaspoon black pepper, and stir to combine. Bring to a boil, then turn the heat to low and simmer, mashing some of the beans with a wooden spoon, until the liquid has reduced and thickened, 6 to 8 minutes.
  • Off the heat, stir in the lemon juice, then the mozzarella, if using, and Pecorino Romano. Taste and season with salt and pepper. Divide among shallow bowls and top with more Pecorino Romano. Serve with toasted bread and a dish of red-pepper flakes on the side.
