CREAMY CUCUMBER DIP

Creamy Cucumber Dip is perfect to dip pretzels, chips, crackers and more. It's also fantastic with wraps, quesadillas and burritos!

Number Of Ingredients 6

½ english cucumber [around ¼ cup grated cucumber]
¼ cup sour cream
¼ teaspoon dill (dried)
salt (to taste)
pepper (to taste)
water (as required [around 2 tablespoons])

Steps:

  • Wash and peel the cucumber and grate it or pulse it in the food processor.
  • Placed the crushed/grated cucumber in a bowl and add some salt to it. Set aside for 15 minutes, this will help in releasing all the moisture from the cucumber.
  • After 15 minutes, squeeze the cucumber with your hands, releasing all the moisture. Set aside.
  • In a bowl combine the cucumber, sour cream, dill, salt & pepper.
  • Whisk till well combined. Add water, 1 tablespoon at a time till desired consistency is reached. Check the seasoning and adjust to taste.
  • Chill the dip before serving.
  • Enjoy the creamy cucumber dip with chips, crackers, veggies!

1 large cucumber, peel and cut lengthwise, remove seeds
3/4 cup plain yogurt
3/4 cup sour cream
3 tablespoons olive oil
4 1/2 teaspoons fresh dill, minced
4 1/2 teaspoons red wine vinegar
3 garlic cloves, minced
1/4 teaspoon salt

Steps:

  • Grate cucumber and squeeze between paper towels several times to remove excess moisture.
  • Place cucumber in a small bowl, stir in yogurt, sour cream, oil, dill, vinegar, garlic, and salt.
  • Mix well.
  • Refirigerate until thoroughly chilled.
  • Garnish with additional minced dill before serving if desired.

1 cup sour cream or 1-1/2 cups plain yogurt drained overnight through a fine sieve and 2 layers of cheesecloth
1 medium cucumber, peeled, halved, seeded cut into 1-inch pieces
1/2 shallot, crushed
1 tablespoon fresh lemon juice
1 garlic clove, crushed
Salt and pepper to taste
Carrot and celery sticks

Steps:

  • In a food processor pulse all ingredients until smooth. Refrigerate before serving for at least 1 hour. Serve with carrots and celery sticks.

this is a cool refreshing dip, it is great on a cucumber (makes a nice fancy appetizer) it is wonderful with salt and vingear chips...you like cucumbers and garlic you will love this

4 oz cream cheese
1/2 c sour cream
1 clove garlic, minced
1/2 tsp garlic salt
1/4 tsp pepper
1 small onion(diced) i use 1t dried onion
1/2 c diced cucumber

Steps:

  • 1. Blend cream cheese and sour cream till well blended. Add seasonings. Mix well.
  • 2. Fold in onions and cucumbers. Refriderate at least 2 hours before serving. I found that it taste better and will thicken if refridgerated over night.
  • 3. Serve with fresh veges, chips, or crackers. I have served it on a cucumber slice. its elegant and makes for a nice appeititzer.

1/2 cup vinegar
2 teaspoons salt
2 (8 ounce) packages cream cheese
3/4 cup mayonnaise
1/2 clove garlic, minced (or 1/2 tsp garlic salt)

Steps:

  • Peel and grate cucumber.
  • Mix cucumber with vinegar and salt and refrigerate overnight.
  • When ready to serve, thoroughly blend cream cheese, mayonnaise, and garlic.
  • Press all liquid from the marinated cucumber; discard the liquid and stir the cucumber into the cream cheese mixture.
