FRENCH ONION CHICKEN PASTA

Steps:
- Bring a large pot of salted water to boil, add the penne pasta and cook according to package directions. Drain and set aside.
- Add the butter to a large skillet over medium high heat.
- Once the butter has melted, add the onions, bell peppers and mushrooms, saute 5-6 minutes.
- Add the sour cream, beef broth and french onion dip mix to the sautéed veggies, stir everything together and simmer for 2-3 minutes.
- Add the shredded chicken and cooked penne pasta to the creamy veggie sauce, stir to combine and serve immediately.
- Top with shredded gruyere cheese.

Steps:
- dice the chicken breasts.
- in a large frypan, on medium heat, cook the chicken, stirring until cooked through but not brown. drain.
- add chicken back to pan with the cream cheese, stir till cheese is melted. add the cream and the french onion soup.
- stir till soup is dissolved. cook on low heat for 10 minutes. stir occasionally.
- while the chicken is cooking, in a separate smaller frypan, cook the bacon until crispy. put aside to cool.
- add the spinach to the chicken and cook, stirring, until wilted.
- if the sauce is a bit too thick, add a little more cream.
- serve over mashed potato. crumble some bacon over each serve.
