Mexican Chicken Casserole is one of our favorite dinners, with layers of tortilla chips, creamy chicken, salsa, beans, and cheese!

Steps:
- Preheat your oven to 350 degrees and prepare an 8" square or round dish.
- Place cooked chicken in a saute pan, add salsa and cream cheese and heat through until cream cheese is melted.
- Add black beans and green chiles and heat through.
- Layer ingredients in your prepared dish as follows: Crushed tortilla chips, Chicken mixture, Sour cream, Tomatoes, Green Onions, Cheese.
- Bake for 30 minutes or until hot and bubbly. Garnish with sliced green onions or cilantro and fresh tomato.

- Preheat oven to 350ºF. Lightly spray a 9-inch baking dish with cooking spray.
- Combine chicken, taco seasoning, cream of chicken sour cream, black beans, Rotel tomatoes, corn kernels, and cheese.
- Spread chicken mixture into prepared pan. Top with tortilla strips.
- Bake for 30 minutes, or until casserole is bubbly and heated through.
EASY CREAMY CHICKEN CASSEROLE
This easy creamy chicken casserole is my mother's recipe and a family favorite. It's one of our comfort foods and regular easy recipes to make through a busy week. Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

- Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
- Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. Reduce heat to a simmer, and cook, stirring occasionally, until chicken is no longer pink in the center, 5 to 7 minutes. Drain the chicken; set aside. Whisk together the sour cream and cream of chicken soup in a large bowl. Stir in the chicken, then transfer the mixture to a 9x13-inch baking dish. Sprinkle the cracker mixture on top.
- Bake in the preheated oven until bubbly, 25 to 30 minutes.

CREAMY DREAMY EASY MEXICAN CHICKEN CASSEROLE
I was looking for an easy and fast Mexican casserole and I got a few ideas from a couple recipes here on Zaar and then added my own touches and ingredients. This is an extra creamy casserole, just delicious! And this is a very versatile recipe. Use whatever type of meat you'd like, delete the onions for an even faster prep time, add jalapeños, etc. Delete the tortillas and it is an awesome enchilada filling or even an appetizer dip.

- Pull apart chicken into bits and/or tiny strips into a large bowl.
- Over medium heat sauté onions to desired texture.
- Mix together chicken, taco seasoning, refried beans and Rotel tomatoes (with juices) and onions.
- Mix together Southwest style condensed soup & sour cream in medium bowl.
- In a medium casserole dish spread half the sour cream mixture on the bottom.
- Then tear 1 tortilla into pieces on top of sour cream mixture.
- Add 1/2 chicken mixture on top of that & then a layer of cheese.
- Repeat layers and sprinkle cheese on top.(For an extra crunchy top, add an extra layer of torn tortilla between 2 cheese layers).
- Bake at 350°F for 20 minutes or until heated through.
- Both the chicken mixture & sour cream mixture can be mixed ahead of time & stored in the fridge.

- Preheat oven to 400°F.
- Cook Stuffing with Butter & Water according to package directions.
- Combine well Cream of Chicken Soup and Half & Half in a mixing bowl.
- In a 13 x 9 casserole dish, arrange Chicken in a single layer.
- Spread Soup mixture evenly over the top of chicken.
- Sprinkle over pepper to taste.
- Spoon Stuffing evenly over the top of Soup mixture.
- Bake for 30-35 minutes until Chicken is cooked through.

- Broil chicken until tender.
- Remove, reserving broth.
- Remove skin and ones from chicken and cut into bite sized pieces.
- Grate Cheese and mash Tomatoes.
- Combine chicken, Onions, Cheese, Garlic Salt, Chili powder and Tomatoes.
- Drop tortillas into boiling chicken broth until softened.
- Line large baking dish with softened tortillas.
- Add chicken mixture.

I found this recipe in a cookbook, but changed it so much to my own liking that it no longer resembles the original. My husband and I moaned at the first taste of this. It is just as yummy reheated and you can add a few more chips to make it have that crispness again. Hope you enjoy!

- mix everything together except the chips and 1/4 cup of cheese. butter a deep casserole dish. Pour some of the mixture in the bottom of the pan. break chips into small pieces and sprinkle on top the mixture - repeat with about 3 layers. use the remaining cheese to sprinkle on top. bake uncovered at 350 for 30 minutes or less. Check oven occasionally.
- you can add green chiles and jalapenos depending on how spicy you'd like it.
