POTATO AND CABBAGE CASSEROLE
This is a delicious side to ham and turkey. Enjoy!

Steps:
- 1. Boil the potatoes until tender and drain. Mash, leaving some lumps.
- 2. While potatoes are cooking, melt the butter in a saute pan and add the chopped onion. Add the shredded cabbage and saute until tender and translucent. Add the cream cheese, salt and pepper and stir until cream cheese melts.
- 3. Layer 1/3 of the potatoes in the bottom of a 13x9 inch baking dish, next top with 1/2 of the cabbage mixture. Repeat with another 1/3 of the potatoes. Layer with the remaining cabbage mixture. Finish with the remaining 1/3 of the potatoes. Sprinkle top with paprika.
- 4. Bake in a 350 degree oven for 45 minutes to 1 hour.
CHEESY CABBAGE CASSEROLE
Cream cheese gives this casserole a creamy, rich sauce. Easy to make, this can be put together, refrigerated, and baked the next day. I serve this with beef brisket and mashed or baked potatoes.

Steps:
- Finely chop cabbage, press into a 13"x9" cake pan.
- Finely chop garlic and onion.
- In a saucepan heat butter (2tsp.) and saute onion, salt, and garlic.
- Add soup, cream cheese, water or milk, and pepper.
- Heat untill all ingredients are mixed well.
- Pour over cabbage, cover and bake on 325 for 1 hours or until cabbage is soft.
- Melt 8 tablespoons butter and toss in crackers.
- Sprinkle over casserole and return to oven, uncovered, til browned.

- In a large bowl, combine the first six ingredients. Crumble beef over mixture; toss gently. Transfer to a greased 3-qt. baking dish. Spread soups over top. , Cover and bake at 350° for 1-1/2 hours or until the meat is no longer pink and the vegetables are tender.

I love this casserole. My Mom used to make this for me (minus the bacon, and used mushroom soup) when I was a vegetarian. Now that I eat meat (thanks Jesse :-) LOL) I enjoy it as written. It's delicious.

Steps:
- Put the cabbage in a medium pot and cover with water.
- Salt and pepper to taste.
- Cook for approximately 10 to 15 minutes once boiling. Drain.
- Spray a 3 quart casserole dish with non stick cooking spray.
- Layer 1/2 the cabbage, the onion, and sprinkle with half the bacon.
- Add salt and pepper to taste.
- Arrange half of the the potatoes on top of mixture.
- Repeat layers, ending with potatoes on top.
- Salt and pepper to taste.
- Mix cream of chicken soup and half and half together; pour over the casserole.
- Bake, covered, at 375 degrees Fahrenheit for 45 minutes to an hour.

Steps:
- Pre-heat oven to 220 celsius.
- In a saucepan, fry cabbage and garlic in vegetable oil over high heat for 2-3 minutes.
- Add potato and water to saucepan, turn down heat to medium and cook with lid on until potato is cooked.
- Turn heat to low and add lemon juice and sour cream.
- Lightly mash contents of saucepan with potato masher.
- Mix cornflour and milk and add to saucepan while stirring constantly to thicken the cabbage mix.
- Season with salt & pepper, transfer to ovenproof dish and bake in oven until desired browning.
- Alternatively, place under hot grill to achieve browning.

- Preheat oven to 400. Lightly grease/spray a 1 1/2 qt casserole dish.
- Cook sliced parsnips and carrots in boiling, salted water until tender (about 12-15 minutes); drain and place in prepared casserole dish.
- Meanwhile, in a small saucepan over medium heat, melt butter. Saute the onions in butter for 3-5 minutes or until soft.
- Reduce heat to med-low and add flour to saucepan; stirring constantly.
- Add cream, tarragon, salt, pepper, paprika and ground mustard.
- Add parmesan cheese and continue to heat over med-low heat, stirring frequently, until cheese is melted and mixture thickens.
- Evenly pour sauce over parsnip/carrot mixture in casserole dish.
- In a small bowl, mix together bread crumbs with melted butter; evenly sprinkle over casserole.
- Bake, uncovered, at 400 for about 20 minutes.
