Number Of Ingredients 8

9 cups water
1 tablespoon salt, plus extra for seasoning
2 1/2 cups yellow cornmeal or polenta
1 1/2 cups freshly grated Parmesan
1 1/2 cups whole milk, at room temperature
10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature, cut into 1/2-inch pieces
1/3 cup chopped fresh flat-leaf parsley
Freshly ground black pepper

Steps:

  • Bring the water to a boil in a large, heavy pot. Add the salt. Gradually whisk in the cornmeal. Reduce the heat to low and cook, stirring often, until the mixture thickens and the cornmeal is tender, 15 to 20 minutes. Remove the pot from the heat. Add the cheese, milk, butter, and parsley. Stir until the butter and cheese have melted. Season with salt and pepper, to taste. Transfer the polenta to a bowl and serve.

4 cups water
1 1/2 teaspoons salt (or 1 teaspoon if using salted butter)
1 cup yellow polenta or coarsely ground cornmeal
2 tablespoons unsalted butter
1/4 cup cream cheese

Steps:

  • Whisk polenta into boiling salted water: Heat salted water (1 1/2 teaspoons of salt for 1 quart of water) to a boil over high heat in a thick-bottomed 2 or 3 quart pan. Slowly add the polenta into the boiling water, whisking while you add it to prevent any lumps from forming.
  • Simmer and cook: Lower the heat to a very low simmer and add the butter. Continue to whisk the polenta until it starts to thicken. Then cover the pan and let the polenta cook for 25 minutes. Stir occasionally with a wooden spoon so that the polenta doesn't stick to the bottom of the pan. The polenta should be soft and tender when done. If not, let it cook a little longer.
  • Add the cream cheese: Add the cream cheese and stir it into the polenta. Taste and add more salt if necessary. (You can also add more cream cheese if you want it to be even creamier.)

1/2 teaspoon salt
1 cup yellow cornmeal
3/4 cup milk
1/3 cup heavy cream
4 ounces good mild blue cheese, crumbled
1/4 teaspoon pepper
1/4 teaspoon fresh ground nutmeg
2 tablespoons fresh mixed herbs, finely chopped to your taste (rosemary.parsley,chives)

Steps:

  • Bring 3 cups water to boil add salt and cornmeal in a slow steady stream, whisking constantly.
  • Reduce heat to low constantly stirring for about 15 minutes.
  • (Building up those arms) Till thick and smooth (Not your arms the polenta)!
  • Remove the pan from the heat and stir in the milk, cream until well blended.
  • Add the cheese, pepper, nutmeg, and herbs.
  • Stir till all is melted and creamy good!
  • Adjust seasoning.
  • Serve away!

4 cups milk
2 cups polenta
1/2 cup sour cream
1/4 cup butter
4 ounces blue cheese
salt & pepper

Steps:

  • Heat milk and water in heavy bottomed sauce pan and bring to simmer over medium heat. be careful not to boil.
  • Whisk in polenta in slow stream. Bring to a boil, then turn heat to low.
  • Continue to stir, adding more water if it gets too thick.
  • Stir every few minutes and continue cooking for 25 to 30 minutes, adding water when needed.
  • Remove from heat and add sour cream, butter and blue cheese. Season with salt & pepper to taste.

2 1/2 pounds beef tenderloin, trimmed and tied
7 tablespoons unsalted butter, at room temperature, divided
Kosher salt and freshly ground black pepper
3/4 cup chopped shallots (3 large)
14 ounces mushrooms, such as cremini and/or shiitakes, stems discarded and caps sliced 1/4 inch thick
1/2 cup ruby Port wine, such as Sandeman
3/4 cup crème fraîche
3 ounces Roquefort or other strong blue cheese, crumbled
1 tablespoon minced fresh parsley

Steps:

  • Preheat the oven to 500˚. Line a sheet pan with aluminum foil.
  • Place the beef on the prepared sheet pan and pat dry with paper towels. Spread 1 tablespoon of the butter all over the beef with your hands. Sprinkle the beef all over with 1 1/2 teaspoons salt and 1 teaspoon pepper. Roast for exactly 25 minutes for rare (120˚) and 30 minutes for medium rare (125˚). Remove the beef from the oven, cover tightly with aluminum foil and allow to rest for 20 minutes.
  • Meanwhile, make the sauce. Heat 2 tablespoons of the butter in a large (12-inch) sauté pan. Add the shallots and sauté over medium heat for 3 to 4 minutes, until tender but not browned. Add the remaining 4 tablespoons of butter and heat until sizzling. Add the mushrooms and sauté, stirring frequently, for 5 to 7 minutes, until lightly browned. Add the Port, 1 teaspoon salt and 1/2 teaspoon pepper and cook for 2 to 3 minutes. Add the crème fraîche and cook for one minute, until slightly thickened. Reduce the heat to low and add the Roquefort, stirring just until it melts. (If the sauce is too thick, add another splash of Port.)
  • Before serving, reheat the sauce and sprinkle with the parsley. Remove the strings from the roast and slice thickly. Spoon on the sauce, sprinkle with salt and serve hot.

3 cups water
1 cup yellow cornmeal, mixed with 1 cup water (I like to use coarse ground cornmeal or polenta)
1/2 cup grated parmesan cheese
salt

Steps:

  • In a large saucepan, melt butter and saute diced onion until limp and glossy,.
  • Add the 3 cups water to the saucepan and bring to a boil.
  • Gradually stir in cornmeal and water mixture into the boiling water and WHISK constantly until thick and smooth.
  • Let mixture cook, stirring often, about 20 minutes.
  • Stir in grated Parmesan cheese and season to taste with salt.
