WAFFLES WITH BLUEBERRY COMPOTE AND LEMON RICOTTA CREAM

Waffles with Blueberry Compote and Lemon Ricotta Cream image

Provided by Bobby Flay

Time 1h10m

Yield 6 servings

Number Of Ingredients 18

1 cup part-skim ricotta
1 tablespoon confectioners' sugar
1 teaspoon grated lemon zest, plus more for garnish
1 teaspoon fresh lemon juice
1 pint fresh blueberries, or 1 pound frozen blueberries, thawed
2 tablespoons honey or pure maple syrup
1 teaspoon fresh lemon juice
1 cup spelt flour
1 cup whole-wheat flour
1 tablespoon granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/8 teaspoon fine sea salt
2 cups low-fat buttermilk
5 tablespoons unsalted butter, melted
2 large eggs
1 teaspoon finely grated lemon zest
Nonstick cooking spray

Steps:

  • Make the ricotta cream: In a small bowl, combine the ricotta, confectioners' sugar, lemon zest and lemon juice and whisk until light and fluffy. Cover and refrigerate for at least 30 minutes and up to 2 hours to allow the flavors to meld.
  • Make the compote: In a small saucepan, combine the blueberries, 1/4 cup water and the honey and bring to a simmer over medium heat. Cook until the mixture thickens, about 7 minutes. Transfer to a bowl, add the lemon juice and let cool at least slightly.
  • Make the waffles: Preheat the oven to 275 degrees F; set a rack on a baking sheet and put in the oven.
  • In a medium bowl, whisk together the flours, granulated sugar, baking powder, baking soda and salt. In a large bowl, whisk together the buttermilk, butter, eggs and lemon zest. Add the flour mixture and mix just until the batter is combined. Let rest for 15 minutes.
  • Heat a waffle iron according to the manufacturer's instructions; coat with nonstick spray. Pour the batter onto the iron (the amount depends on the size of the iron), leaving a 1/2-inch border on all sides. Close the iron and cook until the waffle is golden brown and crisp, 3 to 5 minutes. Transfer to the rack in the oven to keep warm; repeat with the remaining batter.
  • To serve, top the waffles with the blueberry compote and ricotta cream. Garnish with lemon zest.

  • Combine all of the berries in a large bowl and stir gently to combine. Spoon about 2/3 of the mixed berries into a medium saucepan; transfer the remaining berries to a small bowl and refrigerate until ready to serve.
  • Add the lemon juice and sugar to the berries in the sauce pan. Bring to a gentle boil over medium heat and cook until the fruit is syrupy, about 5 minutes.
  • Transfer the hot berry mixture to a blender and purée until smooth. Set a fine mesh strainer over a bowl. Pour the sauce into the strainer and use the back of a soup ladle and circular motions to force the sauce through the strainer and into the bowl. Discard the seeds that remain in the strainer. Refrigerate the berry sauce until cold or ready to serve.
  • Before serving, add the reserved berries to the sauce and stir to combine. If the sauce seems too thick, add a few tablespoons of water, a little at a time, until the desired consistency is reached.

  • Whipped Cream and Chocolate Syrup. A little spin on the usual syrup and butter is whipped cream and chocolate syrup waffles! You can even add some chopped nuts or cacao nibs for a little crunch and flavor.
  • Peaches and Honey. Looking for something sweet but healthy? We’ve got you! Top your waffles off with some peach slices and drizzle over pure honey. I love the combination of the tangy peaches and the smooth, sweet flavor of honey.
  • Ice Cream and Chopped Nuts. I don’t know about you but I’ll take any excuse I can to have a meal with ice cream! Top your waffle with a scoop of your favorite flavor and sprinkle over a good amount of chopped nuts.
  • Blueberries and Yogurt. If you’re not feeling the ice cream, yogurt is a great alternative. This antioxidant topping is sure to get you ready for the day ahead.
  • S’mores. Everybody loves s’mores, so why not try it with your waffles? Simply spread some marshmallow fluff on top, add crushed grahams, and some chocolate.
  • Peanut Butter and Jelly. Peanut butter and jelly sandwich? Delicious. Peanut butter and jelly WAFFLE? Irresistible! You can go with your favorite kind of peanut butter, whether it’s creamy, crunchy, sweet, or salty.
  • Lemon Curd. This one is quite unique and one you may never consider, but hear me out! You can get this ready-made in a jar at the grocery or you can make your own.
  • Buttermilk Syrup. Another topping you can make at home is buttermilk syrup. Ever since I tried this, I’ve been wondering why it isn’t more popular! Seriously, it’s delicious.
  • Strawberry Syrup. Although traditional buttermilk syrup is certainly a classic, it’s not the only game in town! One of my favorite waffle combos is strawberry syrup, freshly sliced strawberries, pecans, and whipped cream.
  • Cinnamon Sugar. Here’s a simple little something to add just the right amount of flavor and sweetness to your waffle. Cinnamon sugar! Make sure to add it when your waffle is freshly cooked and still warm.
