Sautéed Garlic Asparagus with Bacon image

This garlic asparagus is an easy, fresh and tender side dish with bacon chopped up and sautéed together. Adding bacon enhances this delicious dish to the next level!

1/2 pound of bacon (chopped)
1 Tablespoon butter
3 garlic cloves (minced)
2 pounds asparagus (cut into thirds)
1 teaspoon Italian seasoning
salt and pepper

Steps:

  • In a large skillet over medium high heat, cook the bacon until crisp. Remove and wipe out the grease.
  • Add the butter, garlic, asparagus, Italian seasoning, and salt and pepper. Sauté until tender about 5-7 minutes.
  • Add the bacon back into the asparagus and serve.

A family favorite Fondue recipe! I found it online and have been using it for over a year. Really easy! I usually use fresh asparagus.

3 tablespoons butter
3 tablespoons all-purpose flour
1 1/2 cups milk
1 (15 ounce) can asparagus spears, drained, chopped
2 slices bacon, crisp cooked and crumbled
ground pepper
blanched vegetables or crusty bread

Steps:

  • Melt butter in fondue pot and add flour. Mix well and cook, stirring, for 1 minute. Gradually stir in milk; heat, stirring, until mixture thickens.
  • Stir in the asparagus and bacon and season with pepper to taste. Serve with vegetables or bread.

1 pound fresh asparagus, trimmed and coarsely chopped
1 package (16 ounces) rigatoni
2 tablespoons butter
1 tablespoon olive oil
1 garlic clove, minced
2/3 cup half-and-half cream
1/2 cup shredded part-skim mozzarella cheese
8 bacon strips, cooked and crumbled
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/8 teaspoon coarsely ground pepper
1/4 cup grated Parmigiano-Reggiano cheese

Steps:

  • Fill a 6-qt. stockpot 3/4 full with water; bring to a boil. Add asparagus; cook, uncovered, 3 minutes or until tender. Remove with a slotted spoon and immediately drop into ice water. Drain and pat dry., Return water to a boil; cook rigatoni according to package directions. Meanwhile, in a small saucepan, heat butter and oil over medium-high heat. Add garlic; cook and stir 1 minute. Stir in cream. Bring to a boil. Reduce heat; simmer, uncovered, 3-4 minutes or until slightly thickened. Stir in mozzarella cheese until melted., Drain rigatoni; return to pan. Stir in asparagus, bacon, parsley, salt, pepper and cream sauce. Sprinkle with Parmigiano-Reggiano cheese.

2 large egg yolks
1 1/2 cups crème fraîche
5 ounces Parmesan cheese, finely grated, plus a bit more for finishing
1 medium garlic clove, finely grated on a rasp-style grater
Kosher salt
1 pound asparagus, woody bottoms snapped off, stalks cut on the diagonal into long 1/2- inch-thick pieces, tips left whole
1/2 recipe Fresh Egg Pasta , cut into tagliatelle

Steps:

  • Bring a large pot of water to a boil. Meanwhile, bring an inch or two of water to a boil in a small pot. Whisk together the egg yolks, crème fraîche, Parmesan, and garlic in a large heatproof bowl that will fit snugly in the pot without making contact with the boiling water.
  • Set the bowl in the small pot and whisk the egg mixture constantly, occasionally scraping the sides and removing the bowl from the pot every couple of minutes as you whisk to keep the cooking nice and slow (don't let it bubble). The mixture will look thick and clumpy for a few seconds, then become liquidy, and then, once the cheese has melted, silky smooth. Cook just until the liquidy sauce has thickened slightly (it should thinly coat the back of a spoon), 6 to 8 minutes. Set the bowl aside in a warm place.
  • Salt the large pot of boiling water generously until it tastes slightly less salty than the sea. If you're confident that the pasta and asparagus will finish cooking at the same time, add them both to the water. If you're a worrywart, cook the asparagus first, scoop it into a colander to drain, then cook the pasta. Cook the asparagus until it is juicy with a slight bite, 3 to 4 minutes; and cook the pasta until it is fully cooked, 3 to 4 minutes.
  • Drain the pasta and asparagus well in a colander, then pop them back into the now-empty pot. Pour in most of the fonduta and toss gently but well. Season to taste with salt and more fonduta, if you'd like. Transfer to bowls, top with a little more Parmesan, and eat straightaway.

4 to 5 bacon strips, diced
1/4 cup chopped onion
2 tablespoons all-purpose flour
1 pound process cheese (Velveeta), cubed
2 cups sour cream
1 jalapeno pepper, seeded and chopped, optional
1 loaf (1 pound) French bread, cubed
Optional: soft pretzel bites and halved miniature sweet peppers

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. In the drippings, saute onion until tender. Stir in flour until blended; cook and stir until thickened. , Reduce heat to low. Add cheese cubes; cook and stir until melted. Stir in sour cream, jalapeno if desired and bacon; cook and stir just until heated through. Transfer to a fondue pot and keep warm. Serve with bread cubes.

  • Slice bacon into small pieces, and add to a skilled on medium heat. Cook for 10-15 minutes, or until it's crispy. Once it's done, take it out of the pan and set aside. Discard most of the bacon fat (leave just enough to lightly coat the bottom of the pan). If you're poaching the eggs, you probably want to start boiling that water about now, then poach the egg to your tastes.
  • Meanwhile, remove the tough ends of the asparagus, and cut the rest of it into bite-size pieces. Add it to the skillet along with the lemon juice, and sauté for 5-7 minutes on medium-high heat until it's tender-crisp, stirring occasionally.
  • Add the bacon back into the skillet, and also add the garlic, sour cream, parmesan cheese, Italian seasoning, and pepper. Cook for 2 minutes. If the pasta isn't quite done yet, take the skillet off the heat until just before you're ready to drain it. Add 3 tablespoons of the pasta water and the chopped parsley, and stir it into the sauce. Add the pasta to the pan and toss it with the sauce. Serve immediately.
