When we were young mothers, I asked my best friend if she had a recipe for an easy ambrosia salad that I could take to a cookout later that evening. She shared this recipe with me and it's become a must-have at every barbecue I attend. It's sublime with peaches and peach gelatin, too. -Melissa Meinke, Fawn Grove, Pennsylvania

1 cup apricot or peach yogurt
1 package (3 ounces) apricot gelatin
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
1 package (10 ounces) miniature marshmallows
3 cups cubed peeled fresh apricots

Steps:

  • In a large bowl, add yogurt to gelatin; stir 2 minutes to completely dissolve. Gently stir in whipped topping, then marshmallows and apricots. Refrigerate until firm, at least 4 hours.

1 package (6 ounces) apricot or orange gelatin
2 cups boiling water
1 can (20 ounces) crushed pineapple
1 package (8 ounces) cream cheese, softened
1 can (15 ounces) apricot halves, drained and chopped
1/2 cup chopped walnuts
1 carton (8 ounces) frozen whipped topping, thawed
Additional chopped walnuts, optional

Steps:

  • In a bowl, dissolve gelatin in water. Drain pineapple, reserving juice. Add pineapple to gelatin and set aside. In a bowl, beat cream cheese and pineapple juice until smooth. Stir in gelatin mixture; chill until partially set, stirring occasionally. Stir in apricots and walnuts. Fold in whipped topping. pour into a 13x9-in. dish. Sprinkle with walnuts if desired. Chill until firm.

1 (6 ounce) package apricot flavored Jell-O® mix
⅔ cup white sugar
⅔ cup water
2 (4 ounce) jars apricot baby food
1 (20 ounce) can crushed pineapple with juice
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
⅓ cup chopped pecans
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • In a small saucepan, combine gelatin, sugar and water. Bring to a boil and mix until dissolved. Remove from heat, add baby food and pineapple with juice. Stir, set aside to cool for 10 minutes.
  • In a small bowl, combine the cream cheese and sweetened condensed milk, mix together until smooth. Pour into fruit mixture and whisk together.
  • Stir in pecans and pour into a 9x13 inch pan. Refrigerate until chilled. Top with thawed whipped topping if desired. Sprinkle with pecans to decorate and cut into squares.

2 packages (3 ounces each) apricot gelatin
2 cups boiling water
1 package (8 ounces) cream cheese, softened
1 cup whole milk
1 can (20 ounces) crushed pineapple, undrained
1-3/4 cups frozen whipped topping, thawed
Canned apricots and fresh mint leaves, optional

Steps:

  • Dissolve gelatin in boiling water; set aside. Beat cream cheese until smooth; gradually beat in milk until smooth. Stir in gelatin. Add pineapple, mixing well. Refrigerate., When mixture begins to thicken, fold in whipped topping. Pour into a 2-1/2-qt. serving bowl. Refrigerate at least 2 hours. If desired, serve with canned apricots and fresh mint leaves.

1 cup blueberries
1 medium jicama, peeled, chopped
1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
3/4 cup vanilla nonfat yogurt
1 Tbsp. orange juice
1/4 cup slivered almonds, toasted

Steps:

  • Combine fruit and jicama in large bowl; set aside.
  • Mix sour cream, yogurt and orange juice until well blended. Add to fruit mixture; toss to coat.

1 cup sugar
1 tablespoon cornstarch
2 cans (5-1/2 ounces each) apricot nectar
1 teaspoon vanilla extract
6 large red apples, coarsely chopped
8 medium firm bananas, sliced
1 medium fresh pineapple, peeled and cut into chunks (about 5 cups)
1 quart fresh strawberries, quartered
2 cups green grapes

Steps:

  • In a microwave-safe bowl, stir the sugar, cornstarch and apricot nectar until smooth. Microwave, uncovered, on high until slightly thickened, 4-6 minutes, stirring every 2 minutes. Stir in the vanilla. Refrigerate. , In a large bowl, combine the fruit. Drizzle with dressing; gently toss to coat. Cover and refrigerate until serving.

Oh my, this is a delicious jelled salad. It's almost celestial, you can hear the angels sing. Growing up, this was one of the fruit salads served at our big Sunday meal after church.

2 (3 ounce) boxes apricot gelatin
2 cups boiling water
1 1/2 cups cold water
1 (14 ounce) can crushed pineapple, drained & 1/2 cup juice RESERVED
2 -3 bananas
2 cups mini marshmallows
1/2 cup sugar
2 tablespoons butter
2 tablespoons flour
1 egg, well beaten
3 ounces cream cheese

Steps:

  • GELATIN BASE.
  • Mix jello and water and chill until syrupy (30 minutes est.).
  • Slice bananas 1/8" thick, half or quarter each slice to your preference in salads.
  • Combine bananas, drained pineapple and marshmallows into syrupy jello, mixing well.
  • Pour into 9x9 or 9x12 dish and chill until firm (several hours).
  • TOPPING.
  • In a sauce pan, mix together 1/2 Cup Pineapple Juice, 1/2 Cup Sugar, 2 T Butter, 2 T Flour, and 1 well beaten egg.
  • Cook on medium to medium-high heat until thick. Remove from burner.
  • Add 3 oz cream cheese from refrigerator stirring until dissolved in sauce pan.
  • Spread Topping evenly over congealed salad.
  • Chill some more for topping to set (1-2 hours).
  • Serve in squares.
