Mushroom lovers, beware! This savory mushroom side dish is hard to resist. Mixing mushroom varieties here is key--try cremini, stemmed shiitake, button, and porcini mushrooms.

1 pound assorted fresh mushrooms, quartered
6 cloves garlic, peeled and thinly sliced
2 tablespoons extra-virgin olive oil
2 teaspoons Worcestershire sauce
2 teaspoons balsamic vinegar
1 teaspoon dried oregano, crushed
¼ teaspoon salt
¼ teaspoon ground pepper
2 tablespoons chopped fresh Italian parsley

Steps:

  • Preheat oven to 400 degrees F. Place mushrooms in a 13x9-inch baking pan. Stir garlic slices into the mushrooms.
  • Drizzle the mushroom mixture with oil, Worcestershire sauce, and balsamic vinegar. Sprinkle with oregano, salt, and pepper. Toss gently to coat.
  • Roast, uncovered, for 20 to 25 minutes or until the mushrooms are tender, stirring twice. Stir in parsley just before serving.

Easy Creamy Mushrooms image

The easiest, creamiest mushrooms you will ever have - it's so good, you'll want to skip the main dish and make this a meal instead!

Number Of Ingredients 9

2 tablespoons unsalted butter
3 cloves garlic, minced
16 ounces cremini mushrooms, thinly sliced
1/3 cup heavy cream
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
Kosher salt and freshly ground black pepper, to taste
2 tablespoons freshly grated Parmesan
2 tablespoons chopped fresh parsley leaves

Steps:

  • Melt butter in a large skillet oven over medium heat. Add garlic and mushrooms, and cook, stirring occasionally, until tender and browned, about 5-6 minutes. Stir in heavy cream, thyme and oregano; season with salt and pepper, to taste. Bring to a boil; reduce heat and simmer until slightly reduced and thickened, about 5-6 minutes. Stir in Parmesan. Serve immediately, garnished with parsley, if desired.

4 ounces shiitake mushrooms
2 lbs cremini mushrooms (or button)
2 tablespoons butter, divided
2 tablespoons lemon juice, divided
1 large shallot (or small onion, minced)
1 large garlic, minced
1 tablespoon flour
1/2 teaspoon salt
black pepper
1/2 cup whipping cream
2 tablespoons whipping cream
1/4 cup parsley, chopped

Steps:

  • Remove stems from shiitake mushrooms; discard or save for stock. Thinly slice shiitake caps; quarter button or cremini mushrooms. Toss together. (mushrooms can be prepared ahead, covered and chilled for up to a day).
  • Heat 1 T butter in a large frying pan over medium heat until hot and bubbly. Add half of the mushrooms and 1 T lemon juice. Saute 3 minutes, turning frequently or until lightly browned and almost cooked. Turn into a bowl. Again with more butter and juice, saute remaining mushrooms in the same manner; turn into bowl.
  • Reduce heat to medium.
  • Drain juices from bowl into pan; add shallot and garlic. Cook 2 minutes or until softened. Meanwhile stir in flour, salt and pepper into 1/2 cup cream; pour into shallot mixture. Bring to a boil, stirring constantly; bubble 1 minute.
  • Return mushrooms to pan. Cook, stirring frequently, for 5 minutes or until hot, bubbling and sauce has thickened. Turn into warmed serving dish. Sprinkle with parsley and drizzle with remaining 2 T cream.

1 (16 ounce) package frozen broccoli, carrots and cauliflower combination
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup shredded Cheddar cheese, divided
⅓ cup sour cream
1 (2.8 ounce) package French-fried onions, divided
¼ teaspoon black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook vegetables according to package directions; drain. In a large bowl combine vegetables, mushroom soup, 1/2 cup cheese, sour cream, 1/2 can fried onions and pepper. Transfer to a deep pie plate.
  • Bake in preheated oven for 30 minutes. Sprinkle with remaining cheese and fried onions; bake 5 minutes longer.

1 tablespoon freshly squeezed lemon juice
Salt to taste if desired
Freshly ground pepper to taste
3 tablespoons shallots, finely chopped
1/2 cup heavy cream
1/8 teaspoon cayenne pepperpepper

Steps:

  • Rinse mushrooms and pat dry.
  • Heat butter in a skillet and add mushrooms, lemon juice, salt, pepper and shallots. Stir and cook about 2 minutes and add cream. Sprinkle cayenne pepper on top. Cover closely and cook 5 minutes. Uncover and reduce the liquid briefly.

1 medium head cauliflower, broken into florets
1 bunch broccoli, cut into florets
6 medium carrots, sliced
1 pound sliced fresh mushrooms
1 bunch green onions, sliced
1/4 cup butter, cubed
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup milk
1/2 cup process cheese sauce

Steps:

  • Place the cauliflower, broccoli and carrots in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam 7-9 minutes or until crisp-tender. , Meanwhile, in a large skillet, saute mushrooms and onions in butter until tender. , Drain vegetables. In a large bowl, combine soup, milk and cheese sauce. Add vegetables and mushroom mixture; toss to coat. Transfer to a greased 2-qt. baking dish.
