3 heads of garlic
3 medium potatoes
1 celery stalk
3 cups vegetable stock (broth)
3 tbsp Greek yogurt
1/4 tsp salt
1/4 tsp ground black pepper
parsley to garnish
1 tsp olive oil
1 tsp butter

Steps:

  • Peel and slice the garlic.
  • In a pan, heat up the oil and butter, add the garlic, and stir for about one minute, so that the garlic can soften a bit.
  • Peel and chop the potatoes and celery, add them to the pan together with the vegetable stock and cook for 15 minutes, or until the vegetables are tender.
  • Transfer everything to a blender, and blend until smooth.
  • Add one spoonful of soup to the yogurt, mix well, then add a few more spoonfuls until the yogurt is warm.
  • The yogurt can now be added to the soup. Mix well, season with salt and pepper, and garnish with parsley.
  • Serve hot!

4 bacon strips, chopped
1 large onion, chopped
3 garlic cloves, minced
1 large celery root, peeled and cubed (about 5 cups)
6 medium parsnips, peeled and cubed (about 4 cups)
6 cups chicken stock
1 bay leaf
1 cup heavy whipping cream
2 teaspoons minced fresh thyme
1 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon ground nutmeg
Additional minced fresh thyme

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Cook and stir onion in bacon drippings 6-8 minutes or until tender. Add garlic; cook 1 minute longer., Add celery root, parsnips, stock and bay leaf. Bring to a boil. Reduce heat; cook, uncovered, 30-40 minutes or until vegetables are tender. Remove bay leaf., Puree soup using an immersion blender. Or, cool slightly and puree in batches in a blender; return to pan. Stir in cream, 2 teaspoons thyme, salt, pepper and nutmeg; heat through. Top servings with bacon and additional thyme.

The secret to this soup, a luscious puree of caramelized garlic and onions thickened with French bread, is patience. I originally developed it at Savoir Faire. At the time I had a boyfriend who frequently traveled to Mexico. He would rave about sopa de ajo-a broth flavored with garlic and egg-and it sounded so earthy and scrumptious that I decided to try to make it. My approach to recipe development typically involves looking up several versions of a dish, then taking what I like from each of those recipes. That's exactly how this soup was created. I trained with French chefs, so a puree leapt to mind. Then I read that in Latin countries soups are often thickened with bread. One version relied on fish stock, but I thought chicken stock would be more universally appealing. So I stirred all my ideas together, my mentor Daniel gave it his enthusiastic blessing, and my first true culinary creation was born. When we initially started making this soup, my dishwashers had to peel 10 pounds of garlic at a time. Thankfully, these days at Bayona, we buy peeled garlic by the gallon. In order to develop the proper deep, rich flavor, it's essential to take your time cooking the garlic. You need to stir the mixture a lot over low heat and wait until the onions and garlic get very dark and caramelized. I love garnishing this soup with tiny croutons that provide a crunchy contrast to the silky body.

2 tablespoons butter
2 tablespoons olive oil
6 cups peeled and sliced onions (about 2 pounds)
2 cups peeled but not chopped garlic cloves
1 tablespoon chopped fresh thyme, or 1 teaspoon dried
7 cups Chicken Stock, preferably homemade (p. 206)
1 Bouquet Garni (p. 145) made with parsley stems, thyme sprigs, and bay leaf
3 cups stale French bread, torn into 1/2-inch pieces
1 cup half-and-half or heavy cream
Salt and pepper

Steps:

  • Heat the butter and oil in a heavy-bottomed 2-quart saucepan or Dutch oven over medium-low heat. Add the onions and garlic and cook, stirring frequently, until they turn a deep golden brown, 30-40 minutes. Add the thyme, 6 cups Chicken Stock, and Bouquet Garni and bring to a boil. Stir in the bread cubes and let simmer for 10 minutes, until the bread is soft. Remove the soup from heat and cool for 10 minutes.
  • Remove the Bouquet Garni and puree the soup in a blender (in batches, if necessary), until completely smooth. Return the soup to the pot and heat to the desired temperature. Whisk in more Chicken Stock if the mixture is too thick. Add half-and-half or cream until the soup reaches the texture of a classic cream soup. Season to taste with salt and pepper.

5 garlic cloves
1/2 cup extra virgin olive oil
1 large potato, peeled and cubed
1 medium carrot, scraped and cubed
2 medium onions, cubed
1 medium celeriac, peeled and cubed
1 small parsnip, peeled and cubed
3 quarts water
salt and black pepper
1 sprig fresh thyme
1/2 cup heavy cream

Steps:

  • Preheat your oven to 375*F. Place 20 cloves of peeled garlic in a small baking pan, and pour over 1/4 cup olive oil. Bake 30 minutes, or until tender.
  • In a large pot, heat the remaining 1/4 cup olive oil and saute the root vegetables with 5 cloves garlic, 5 to 8 minutes. Add water, salt, pepper and thyme, bring to a boil and cook over medium heat 40 minutes. Add the baked garlic with its oil to the soup, and grind with a stick blender or food processor. Straiin and add the 1/2 cup heavy cream. Taste and adust seasonings. Serve and enjoy!
  • For a decorative presentation, serve with Puff Pastry Croutons, posted seperately.

3 tablespoons olive oil
2 ½ cups chicken broth
1 cup white wine
2 ½ cups milk
1 cup heavy whipping cream
½ cup peeled and cubed potatoes

Steps:

  • Chop garlic in a food processor to a coarse paste, stopping occasionally to scrape the sides of the bowl.
  • Heat oil in a large saucepan over low heat. Add the garlic paste and cook just until the paste begins to color, stirring constantly. Stir in the chicken broth and wine. Bring mixture to a boil.

2 1 pound celery roots, peeled, cut into 1 inch pieces
2 medium onions, chopped
1 cup chopped celery
2 garlic cloves, minced
1 teaspoon celery salt
1/8 teaspoon cayenne pepper
1/2 cup dry vermouth or dry white wine
5 cups chicken or vegetable stock
1 cup whipping cream
Chopped fresh chives or celery leaves

Steps:

  • Melt butter in heavy large saucepan over medium heat. Add celery roots, onions and celery. Sprinkle with salt and pepper. Cover and cook until tender, stirring occasionally, about 20 minutes. Add garlic, celery salt and cayenne pepper and stir 1 minute. Add vermouth and boil until most of liquid evaporates, about 8 minutes. Add stock. Bring to boil. Reduce heat and simmer until vegetables are very tender, about 15 minutes. Puree soup in blender in batches until smooth. Return to saucepan. Add cream. Simmer until thickened to desired consistency, about 5 minutes. Ladle soup into bowls. Sprinkle with chives and serve.

1 bay leaf
6 cups water, divided (cold)
2 slices bacon, coarsely chopped
1/2 cup onion, thinly sliced
1 leek, thinly sliced (white part only)
1/2 teaspoon salt (or to taste)
white pepper, to taste
1 quart chicken broth (4 cups)
1 cup half-and-half or 1 cup heavy cream
1 tablespoon fresh thyme or 1 teaspoon dried thyme
6 slices whole wheat bread (French or Italian cut diagonally 1/2-inch thick)
1 garlic clove, sliced in half lengthwise
1/4 cup swiss cheese, grated
1 teaspoon chives, thinly sliced

Steps:

  • Preheat the oven to 350°F.
  • In a pot, cover garlic and bay leaves with 2 cups cold water.
  • Bring to a boil, then drain.
  • Repeat process 3 times.
  • In a large dutch oven, over medium heat, fry bacon until crisp.
  • Remove bacon from pan and set aside; discard all but 1 tablespoon grease (if there isn't a full tablespoon make up the difference with butter).
  • Add the onions and leeks and season with salt and pepper; cook, covered, over medium-low heat, stirring occasionally, until onions are tender (10-15 minutes).
  • Add garlic, broth, cream, bacon, and thyme to onion/leek mixture and simmer, uncovered, for 8-10 minutes.
  • On a baking sheet, bake the bread slices until crisp but not golden (6 minutes).
  • Remove bay leaves from soup; discard.
  • In a food processor or blender, purée the soup until smooth (working in batches if necessary).
  • Pour soup into serving bowls.
  • Rub each slice of toast on both sides with the cut sides of a garlic clove.
  • Top each bowl with toast and sprinkle with cheese.
  • Heat under broiler until golden brown.
  • Sprinkle with chives.

CREAMY CURRIED ROOT VEGETABLE SOUP



Creamy Curried Root Vegetable Soup image

This is a hearty, thick soup with a little bit of heat from the curry. I've used this combination of vegetables a few times with great success, but using earthy tubers, taproots, and alliums is the key, so try different things. For this recipe, you'll need a large skillet or wok, a medium saucepan, and a food processor or blender. I enjoy spicy foods, so you may want to reduce pepper and curry amounts. I used half milk and half cream once and got a very nice creamy soup, but some may prefer the thinner consistency of using only milk. This recipe can be adjusted for vegan palettes by using an olive oil substitute for the butter, coconut or soy milk, and an anchovy-free Worcestershire sauce. Balsamic vinegar can do in a pinch.

Here's a simple, robust, cold-weather soup that you can make with almost any mixture of root vegetables you have to hand: carrots, parsnips, celery root, turnips, rutabaga, sweet or regular potato.
