Steps:
- In a large heavy-bottomed pot, melt the butter over high medium heat, then reduce heat to medium. Saute the onion and celery until soft while stirring with a wooden spoon, about 5 minutes.
- Whisk in the flour, and cook for 2 minutes.
- Slowly pour in the seafood stock, whisking continuously so the crab soup remains smooth. Add the heavy cream while whisking, then repeat with the whole milk.
- Stir in the white crab meat, sherry, and spices.
- Turn the heat down to medium low to allow it to simmer for 5 to 8 minutes, then taste and adjust seasonings if needed.
- Serve hot, and garnish each bowl with paprika, chives, freshly grated Parmesan cheese, or oyster crackers.
- To warm up leftovers, pour soup into a pot set over medium heat, stirring frequently so the bottom doesn't burn.

KARYN'S CREAM OF CRAB SOUP
This cream of crab soup is so rich and delicious! I make this a lot, especially in the winter with some nice, hot rolls! Use more Old Bay to suit your taste. I also recommend using lump crabmeat. Enjoy!!

CREAM OF CRAP SOUP EXTRAORDINARY
This is a tribute to Mean Chef. This soup is originally titled California Cream Soup from a Betty Crocker book in the 60's. It is surprisingly light and fresh tasting, attractive, and quite good, actually.

My sister Nancy is one of the best cooks I know. When my daughter was getting married, I put together a cookbook of her favorite family recipes-Nancy's soup was a must-have. Our family often had this with a salad before Christmas Eve services. -Lynne German, Buford, Georgia

HOMEMADE CRAB SOUP-NO HEAVY CREAM OR "CREAM OF" SOUPS!
Living in eastern VA means that there is crab soup almost everywhere. I love 'em, but wanted to find one that was a bit lighter. Hope you all enjoy it as much as I do!

Steps:
- Melt the butter in a pot over medium heat. Add the onions and cook until tender and translucent. Add the garlic and cook 1 minute more.
- Add the flour to the pot, stirring to mix well and cooking for 3 to 4 more minutes.
- Whisk in the clam juice and chicken broth. Bring them to a boil.
- Once boiling, add in the corn, old bay, and bay leaf. Reduce the heat and simmer for about 15-20 minutes, uncovered.
- Gently stir in the milk, cubed cream cheese, crab meat, and any necessary salt/pepper.
- Cook, stirring occasionally, until the cream cheese is melted and the soup is heated through. Remove the bay leaf, grab some saltines or oyster crackers, and enjoy!
- **Some helpful hints: The clam juice is found in a bottle in my grocery store, not in a can. Also, the frozen corn doesn't need to be thawed before adding to the soup, and canned corn can be substituted. Finally, 1/3 less fat cream cheese is sometimes called "Neufchatel" cheese.
