Cream Cheesy Cubed Zucchini with Lemon and Oregano image

I didn't start out trying to make a creamy zucchini recipe, but when I glanced in the fridge and saw the last crumbled remains of fresh cream cheese, I knew those green cubes sizzling away in the skillet were about to get enriched. While I'd normally have a hard time feigning such excitement over squash, I'm actually quite thrilled with how this came out.

2 tablespoons olive oil
4 cups cubed zucchini
½ teaspoon lemon zest
1 pinch red pepper flakes
salt and freshly ground black pepper to taste
cayenne pepper to taste
2 tablespoons cream cheese
2 teaspoons chopped fresh oregano

Steps:

  • Heat olive oil in skillet over high heat; stir in zucchini, lemon zest, and red pepper flakes. Cook for about 2 minutes.
  • Stir in salt, black pepper, and cayenne pepper; cook and stir until zucchini is tender, about 5 minutes.
  • Stir cream cheese into zucchini mixture; cook until cream cheese begins to melt, about 1 minute. Remove from heat and stir in oregano.

4 zucchini, halved lengthwise
3 tablespoons extra virgin olive oil
1/2 red onion, chopped
5 plum tomatoes, chopped
1 cup breadcrumbs
1/2 cup walnuts, toasted and coarsely chopped
1/2 teaspoon dried oregano
salt, to taste
pepper, to taste
6 ounces mozzarella cheese, shredded
1/2 cup parmesan cheese, grated

Steps:

  • Preheat oven to 375 degrees.
  • Using a small spoon, scoop out the zucchini flesh, leaving a 1/4- to 1/2-inch thick shell.
  • Wrap the zucchini flesh in a paper towel and squeeze out any excess liquid; discard the liquid and set aside the flesh.
  • Place the zucchini shells cut side down on a baking sheet and bake for 15 minutes.
  • Meanwhile, in a large skillet, heat 2 T olive oil over high heat.
  • Add the zucchini flesh and onion and cook, stirring, until softened, about 5 minutes.
  • Add the tomatoes and cook until softened, about 5 minutes.
  • Push the vegetables to the side of the pan, add the remaining 1 T oil and the bread crumbs, and toast the bread crumbs for 2 minutes.
  • Remove from the heat, stir in the nuts and oregano, then combine with the vegetables; season with salt and pepper.
  • Flip over the zucchini shells and line the bottoms with the mozzarella.
  • Pack in the filling.
  • Sprinkle with parmesan on top.
  • Bake until the zucchini is tender when pierced with a fork, 20-25 minutes.

1 large zucchini
olive oil
sea salt
cream cheese
1 loaf French bread or 1 loaf ciabatta
parsley (optional) or cilantro (optional)

Steps:

  • Preheat grill or frying pan to hot.
  • Slice zucchini lengthwise into thin strips. Brush one side of each strip with a little oil.
  • Lay the zucchini slices, oil side down, on the hot surface. Cook for 2 minutes on each side until done. Sprinkle with sea salt.
  • Slice the bread in half lengthwise and spread cream cheese. Layer the zucchini on top. Add torn herbs if using. Top with other slice or leave open. Delicious.
